2 tablespoons curry powder
2 1/4 cups water
1/2 teaspoon salt
6 cups small pieces fresh vegetables (such as 2 cups each broccoli florets, cauliflower florets, and thinly sliced carrots)
1 10-ounce box couscous
1 15-ounce can garbanzo beans (chickpeas), drained
1/2 cup olive oil
5 tablespoons white wine vinegar
1 1/2 tablespoons grated peeled fresh ginger
1 1/4 cups crumbled feta cheese (about 7 ounces)
1 cup thinly sliced green onions

Steps:

  • Stir curry powder in heavy large saucepan over medium-high heat until fragrant and toasted, about 1 minute. Mix in 2 1/4 cups water and salt. Add vegetables. Bring to boil; cover and cook 1 minute. Remove from heat. Mix in couscous. Cover and let stand until couscous softens, about 5 minutes.
  • Transfer couscous to large bowl. Mix in garbanzos, oil, vinegar, and ginger. Cool to room temperature. Add feta and green onions; toss. Season with salt and pepper.

I developed this recipe as a last-minute alternative to traditional cold bean salad. It's not overly spicy, and it went over well with both kids and adults. For those who love curry, this is an easy way to add a perked-up vegetable to a summertime menu. Lemon juice can be used in place of rice vinegar. Can be served immediately or refrigerated to blend flavors. For faster preparation, substitute dried versions of any of the flavorings (adjusting the amounts).

12 ounces green beans, trimmed, halved crosswise
2 cups shredded roasted chicken breast meat (from about 3 chicken breast halves)
1 cup thinly sliced red onion
5 tablespoons chopped fresh cilantro
2 teaspoons curry powder
1/3 cup plain nonfat yogurt
3 tablespoons low-fat mayonnaise
1 tablespoon fresh lime juice
2 tablespoons sliced almonds, toasted

Steps:

  • Cook beans in pot of boiling salted water until crisp-tender, about 5 minutes. Rinse under cold water. Drain well. Transfer beans to large bowl. Add chicken, onion and 4 tablespoons cilantro.
  • Stir curry powder in small skillet over medium heat until aromatic, about 30 seconds. Transfer to small bowl. Whisk in yogurt, mayonnaise and lime juice. Add dressing to chicken mixture; toss to coat. Season to taste with salt and pepper. Sprinkle with almonds and remaining 1 tablespoon cilantro. (Can be made 2 hours ahead. Cover and chill.)

1 pound dried great northern beans
4 green onions with tops, sliced
1/2 cup grated carrots
1/2 cup sliced radishes
DRESSING:
1/2 cup vegetable oil

Steps:

  • Preheat oven to 375 degrees F.
  • In a medium bowl toss bread with curry powder, 2 tablespoons olive oil, and season with salt and pepper, to taste. Transfer to baking sheet. Bake until toasted, about 5 to 10 minutes.
  • In a large bowl add celery, toasted bread cubes, pecans, grapes, beans, vinegar, and 1/4 cup olive oil. Season with salt and pepper and toss to coat.

Really liked this and hope you do too. I made with 1 teaspoon of curry powder which was very mild. Sort of wonder if it shouldn't be more-I did double the original amount already. Depends upon how well you like curry, I guess. From the May 2010 issue of Food & Wine. Topped ours with recipe#418884 b/c I had made it earlier and it was perfect on this too. This can be made ahead too. The roasted curried vegetables can be refrigerated separately overnight. The croutons can be kept in an airtight container at room temperature overnight.

1 cup onion, cut into thin wedges
3 tablespoons extra virgin olive oil, DIVIDED

Steps:

  • Preheat the oven to 425°.
  • In a medium bowl, toss the cauliflower and onion with 2 tablespoons of the olive oil and season with salt and pepper; spread the cauliflower/ onion mixture onto large (foil lined) baking sheet.
  • Put in oven for 16 minutes or until crisp tender, and stir at least twice.
  • In the same (now empty) bowl, toss the beans with the remaining tablespoon of olive oil and season with salt and pepper.

  • Return all of the vegetables to the bowl and let cool.
  • Meanwhile, in a medium skillet, heat the vegetable oil.

  • In the same skillet, toast the curry powder over moderate heat, stirring constantly, until fragrant, about 2 minutes.

juice ½ lemon
½ can kidney bean , rinsed and drained
finger-length cucumber chunk, diced
85g cherry tomato , havled
2 skinless haddock fillets, about 140g/5oz each
1 tbsp plain flour
1 tbsp mild curry powder
2 tsp vegetable oil
4 tacos shells, soured cream and lime wedges to serve

Steps:

  • Mix the avocado with the lemon juice in a bowl. Add the beans, cucumber and tomatoes, then mix well with some seasoning. Slice the fish into thick, finger-length strips and toss in a bowl with the flour and curry powder.
  • Heat the oil in a large non-stick pan, then fry the fish slices for 1 min on each side until cooked through. Serve in the tacos, with the bean salad, soured cream and lime wedges.

3 cups cooked beans - I used equal amounts Pebble beans and Mayacoba beans (You can serve this salad hot or at room temperature, whatever your preference.)
1 cup cooked black lentils*
1/2 medium red onion, thinly sliced into crescents
3/4 cup celery, chopped
1 clove garlic
1/2 teaspoon of fine-grain sea salt
1 1/2 teaspoons of your favorite curry powder
1-2 teaspoons freshly grated ginger (from 1-inch cube of fresh ginger, peeled)
juice of 1/2 a lemon
1/3 cup olive oil
2 tablespoons cilantro, chopped

Steps:

  • In a large bowl toss the beans, black lentils, red onion, and celery. Make the curry vinaigrette by mashing the garlic clove with the salt into a thick paste. In a bowl or jar whisk together this garlic paste, the curry powder, fresh ginger, lemon juice, and olive oil. Whisk well, taste, and add adjust flavors/salt if needed. Pour about half of the dressing over the beans and give it all a toss. Add more dressing a bit at a time until it is to your liking. Taste, make sure the salad has enough salt or the the beans will taste flat and the rest of the flavors won't pop. I like to serve this salad family style in a big bowl or on a platter with a big spoon all sprinkled with cilantro. Serves about 4 - 6 as a side.
