Number Of Ingredients 32

2 1/2 pounds ground lamb
Spice Mix, recipe follows
1 egg
1/2 cup ketchup
2 tablespoons olive oil
1/2 cup minced onion
1 tablespoon minced garlic
1 tablespoon minced shallots
2 cinnamon sticks
1 tablespoon ground cumin, toasted*
1 tablespoon ground coriander, toasted
4 cups tomato puree
1 cup vegetable or chicken stock
Salt and freshly ground black pepper
1 tablespoon thinly sliced mint leaves
1 tablespoon minced Italian parsley leaves
Slivered almonds, toasted, for garnish
Chopped fresh mint leaves, for garnish
Warmed pita wedges, for serving
1 tablespoon ground coriander, toasted
1 tablespoon ground cumin, toasted
1 teaspoon curry powder
1 tablespoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried thyme
3/4 teaspoon ground mustard
3/4 teaspoon paprika
1/2 teaspoon ground allspice
1/2 teaspoon ground cinnamon
1/2 teaspoon chili powder
Salt and freshly ground black pepper

Steps:

  • Meatballs:
  • Preheat oven to 350 degrees F.
  • In a large bowl, mix lamb, Spice Mix, egg, and ketchup, being careful not to overwork the meat. Form into 1 1/4-ounce balls, about the size of a ping-pong ball. Place meatballs on a large baking sheet and bake for approximately 20 minutes.
  • Sauce:
  • In a large saucepan over medium heat, add the oil and heat, then add the onions and lightly saute until soft. Add garlic, shallots, cinnamon sticks, cumin, and coriander and saute over low heat, about 3 to 4 minutes. Add tomato puree and bring to a boil. Add stock and season sauce with salt, ground black pepper, mint, and parsley. Simmer for about 10 minutes and remove the cinnamon sticks.
  • To serve: Add the meatballs to the sauce and heat until warmed through. Pour a small amount of sauce on the plate and add 5 meatballs per serving. Garnish with toasted slivered almonds, mint, and warm pita wedges.
  • In a medium bowl, mix all the spices together. Season with salt and pepper, to taste.

Number Of Ingredients 15

6 large fresh poblano peppers, roasted, sweated and skin/seeds/core removed
6 oz brick cheese, cheddar or montery jack, cut in 1 once slices. slices should be rectangular.
8 large eggs divided, yolks in one dish, whites in another
1 pkg bob evans south western mashed potatoes, or mashed potatoes, do not use instant.
1 c white all purpose flour
2 1/2 c canola, or vegetable oil
~~~ tomato cumin sauce~~~
1 small can tomato sauce i use hunts or delmonte
1 large vidalia or texas sweet onion, sliced
3 Tbsp white all purpose flour
1 1/4 tsp ground cumin
1 1/2 c vegetable broth or rich chicken broth
1/2 tsp garlic powder
1/2 tsp salt & pepper to your taste
3/4 Tbsp canola, or vegetable oil

Steps:

  • 1. Put your six peppers under the broiler, keep turning about every 4 minutes until you have a nice charr all over and around. Remove to a freezer bag and place in the microwave for 1/2 hour. Do not turn on the microwave. Let the peppers sweat. After the half hour has passed take out peppers and peel the skin off first. The skin will come off very easly. Then make a slit from the stem all the way down to the tip of the pepper open and carefully remove the seeds, membrane, and stem core. Lay each pepper open and season with a little garlic powder, salt and pepper. The inside only.
  • 2. Now open your Bob Evans mashed potatoes drain as much water as possible by just tipping the package so as to get all the water out. Next mix with a fork very well. You do not need to heat them. Now take a hand full about the size of a golfball or a little less and make a pattie, next take one slice of cheese and lay in the middle of the patty. Fold over the sides of the potato patty to cover the cheese and if you need a little more potatoes put some more on top. You will be making rectangular little patties with a slice of cheese encased inside. Set the pattie in the middle of the pepper and fold each side of pepper over the pattie.Do all six peppers like this. Next keeping the sides of pepper closed over the pattie carefully roll each pepper in some flour so as to not open the pepper. Lay each dusted pepper back on a dry platter or cookie pan.
  • 3. Now take your hand mixer and beat the egg whites until you have made a good meringue. Next beat your egg yolks with a fork; season them a little with salt and pepper and pour them over the meringue. With a plastic spatula fold in the yolks very gently and softly into the meringue; so as to color the meringue yellow. Do not beat just fold in slowly. You do not want to break down the meringue.
  • 4. Next in a cast iron skillet or heavy skillet heat your oil until shimmering. Take one pepper and dip carefully into the yellow meringue to coat all over and slip gently into the hot oil. Make sure your pepper is fully covered with the meringue. With a slotted metal pancake turner or spatula and a big slotted spoon carefully bathe the pepper with hot oil all over the top. Your pepper will puff up. When you see the sides getting golden very carefully working with the spoon and the spatula turn your pepper over to fry on the other side. Do all the peppers the same way. Do one at a time, as this proceedure is very tricky. Remove to a paper towel lined pan and set inside in a very low grade oven set on warm. Since you are doing one pepper at a time. This is so your peppers wont get cold.
  • 5. To make your Sauce: Heat about 4 tablespoons of oil in a skillet and saute your onion slices just until they are al-dente; add the flour and continue to saute with the onions for about 3 minutes. Add the cumin, garlic, salt & pepper and stir well for 1/2 a minute next add the small can of tomato sauce and with a wisk begin to stir real real good. Add your broth or water and continue to stir until your sauce is nice and thick like a gravy. Adjust for salt. Then pour a little sauce over each pepper when serving. If you like some heat you can add a little hot sauce or cayanne to the sauce. (heat is optional) You can serve with a rice dish or along side a meat dish to accompany or with just a salad. These peppers get very large when frying and this dish is quite filling. Enjoy

Harissa and cumin are a smoky-flavored match made in heaven. They form the base for this tomato sauce that's brightened by lemon zest and the briny flavor of clams. Save any leftover sauce and toss it with pasta the next day.

3 tablespoons olive oil
2 leeks, just the white parts, sliced
2 cloves garlic, smashed
Kosher salt
2 tablespoons harissa
1 teaspoon cumin seeds
Zest of 1 small lemon
One 28-ounce can crushed tomatoes
50 littleneck clams, scrubbed
Crusty bread, for serving
Roughly chopped cilantro, for garnish

Steps:

  • Heat the oil in a large Dutch oven over medium-high heat until shimmering. Add the leeks and garlic. Season with salt and cook, stirring occasionally and breaking apart the garlic with a wooden spoon, until the leeks soften, 3 to 4 minutes-don't let the garlic or the leeks char. Add the cumin seeds and cook, stirring, for a little less than a minute, just to toast. Stir in the harissa and lemon zest, then add the crushed tomatoes and 1 cup of water. Turn the heat up to high, bring to a boil and let boil just until the sauce thickens and reduces slightly, a minute or two. Add the clams, cover and let steam until most of the clams are opened up, 5 to 8 minutes (the stragglers will open in the residual heat). Discard any clams that are still sealed shut.
  • Toast bread, if desired, to serve alongside. Top the clams with cilantro.

ZUCCHINI-WRAPPED RED SNAPPER WITH TOMATO, CUMIN, AND ORANGE SAUCE

2 teaspoons cumin seeds
four 6- to 7-ounce red snapper fillets, skinned
4 tablespoons olive oil
1 large onion, sliced
1/8 teaspoon cinnamon
4 garlic cloves, sliced thin
1 1/2 pounds plum tomatoes, cut into chunks
two 3-inch strips fresh orange zest, removed with a vegetable peeler
1/4 cup dry white wine
1/4 cup fresh orange juice
1/4 cup chopped flat-leafed parsley leaves
two 7-inch-long zucchini (each about 1/2 pound)
Garnish: flat-leafed parsley sprigs

Steps:

  • Preheat oven to 450°F.
  • In a small dry heavy skillet, toast seeds over moderate heat, shaking skillet, until fragrant, being careful not to burn them, and cool.
  • Brush an ovenproof skillet large enough to hold red snapper fillets in one layer with 3 tablespoons oil and cook onion over moderate heat, stirring, 5 minutes, or until softened and slightly golden.
  • Stir in seeds, cinnamon, and garlic and cook, stirring, 1 minute. Add tomatoes and zest and cook, stirring, 5 minutes or until tomatoes are slightly softened. Stir in wine and cook, stirring, until most of liquid is evaporated. Remove pan from heat and stir in orange juice, parsley, and salt and pepper to taste.
  • Pat fillets dry and season with salt and pepper.
  • Trim ends of zucchini and with a mandoline or other hand-held slicing device, slice zucchini lengthwise into about twenty-eight 1/8-inch-thick strips. On a work surface, arrange fillets in one layer and place about 7 zucchini strips crosswise on top of each fillet, overlapping them slightly and leaving ends of fillet exposed. Carefully tuck ends of zucchini strips under each fillet and with a long spatula, transfer zucchini-wrapped fillets, zucchini strip ends down, to tomato sauce (fillets should be in one layer). Brush tops of fillets with remaining tablespoon oil and bake fillets in skillet in middle of oven 15 to 20 minutes, or until just cooked through.
  • Discard zest and divide fillets and sauce among 4 plates. Garnish fillets with parsley.

CUMIN ORANGE TOMATO SAUCE

4 tomatoes, cored and halved
1 teaspoon olive oil
1 1/2 teaspoons cumin seeds
1 teaspoon orange zest
Pinch saffron
1/2 teaspoon salt, plus more to taste

Steps:

  • Preheat oven to 425 degrees. Place tomatoes on a lightly oiled baking sheet, skin side up. Brush with olive oil. Sprinkle cumin seeds over tomatoes. Roast until tomatoes are very soft, about 25 minutes.
  • Place roasted tomatoes with orange zest, saffron and salt in a blender. Process until smooth. Taste and adjust seasoning.

3/4 pound whole-wheat spaghetti
1/2 teaspoon fresh-ground black pepper
1/3 cup chopped fresh mint or parsley

Steps:

  • 1. In a large frying pan, heat the oil over moderately low heat. Add the onion and cook, stirring occasionally, until translucent, about 5 minutes. Add the garlic and then the lamb. Cook until the meat is no longer pink, about 3 minutes. Stir in the cumin, tomatoes, and salt. Cover and simmer for 15 minutes. 2. In a large pot of boiling, salted water, cook the spaghetti until just done, about 15 minutes. Drain the pasta and toss it with the sauce, pepper, and mint.

These little chicken fritters are fast and delicious with the fresh tomato/cumin sauce over them, To get out of the kitchen fast I bought a pre-roasted chicken at the supermarket. Brought it home and deboned it. Made my fritters and fried sweet plantains to accompany them and served with lime and cilantro rice. Dinner was Over the Top. Enjoy

1 large pre-roasted chicken, take the meat off the bones and chop the meat in small pieces. discard bones and the skin.
4 large whole eggs
1 1/4 cup(s) flours
1/2 teaspoon(s) salt, black pepper, garlic powder, paprika combined in a shaker bottle to season chicken with
2 cup(s) canola oil for frying
- ~~~sauce~~~
4 large red ripe tomatoes cut in quarters
2 clove(s) garlic
1 medium sweet onion, peeled and cut in quarters
1 large serrano or jalapeno pepper, seeded cut in pieces
1/4 cup(s) cilantro diced
1/2 teaspoon(s) ground cumin
1 cup(s) mexican crema or good sour cream
1/4 cup(s) olive oil
1/2 teaspoon(s) salt and pepper to taste

Steps:

  • In a blender add your quarted tomatoes, onion, serrano pepper, cloves of garlic and cilantro. Blend to make a smooth sauce. next Add salt and pepper and cumin powder and blend again for 1/2 minute.
  • Heat olive oil in a deep skillet add the sauce and cook for about 15 minutes over a low flame. Sauce should be simmering. Stir often so sauce wont stick. Taste to see if seasonings are right salt and pepper. Next take your cup of sour cream or crema add some of the hot simmering tomato sauce about 1/4 cup and blend well with a fork. Add all of the crema or sour cream back into the simmering tomato sauce and with a wisk incorporate everything real real good. add just a tad more cumin powder mix well and reduce heat to just a bare low flame.
  • In a bowl add all you cut up chiken pieces they shoud be small bite sized pieces. seaon the chicken with the shaker of seasonings and mix well. Break four eggs and add to the chicken. Mix well with a fork making sure all of the chicken is well coated with the eggs, Next add the flour and mix real good into the chicken. At this time sprinkle a little more salt over everything. The chicken will become sticky and pasty.
  • Heat canola oil in a deep heavy skillet like a cast iron skillet. When oil is shimmering drop drop large spoon fulls of chicken into the hot oil. Flaten them as soon as they hit the oil fry until golden on each side. About two/three minutes frying time for each patty or spoonful. Take out and lay on a paper towel lined pan. Put two patties on a dish and spoon the sauce over them. Or can be served on a platter with the sauce in a bowl in the middle. I sometimes serve these as appetizers. You can also serve two patties to a plate with sauce served over them along with cilantro/lime rice. See my post for cilantro lime rice. I also made fried sweet plantains and served them with the chicken fritters and rice. Enjoy

CUMIN TOMATO SAUCE

1 1/2 tablespoons soy oil
2 cloves garlic, peeled and halved
1 tablespoon golden raisins
1 Spanish onion, cut into large dice
1/2 cup canned peeled tomatoes, roughly chopped
1 1/2 tablespoons tomato paste
2 tablespoons ground cumin
Salt and freshly ground black pepper to taste

Steps:

  • Heat the oil in a large deep skillet over medium heat and sauté the garlic until lightly browned. Add the raisins and cook until plump, about 1 minute. Add the onion and cook until clear. Add 3 cups water and the remaining ingredients. Heat the mixture to boiling, then reduce heat and simmer for 50 minutes, stirring occasionally.
  • Strain the mixture, reserving the liquid. Purée the pulp in batches in a blender. Combine the purée and the cooking liquid in the same skillet and cook until the sauce is reduced to the desired consistency.
