1/2 fully-cooked ham with bone (4 to 5 pounds)
1/2 cup packed brown sugar
1 teaspoon ground mustard
Whole cloves
CUMBERLAND SAUCE:
1 tablespoon cornstarch
1/4 cup orange juice
1/4 cup lemon juice
1/4 cup red wine or apple juice
2 tablespoons honey
1 cup dried currants

Steps:

  • Remove skin from ham; score the surface with shallow diagonal cuts. Making diamond shapes. Mix brown sugar and mustard; rub into fat of ham. Insert a whole clove in center of each diamond. Place ham in a large roaster with a baking rack. , Bake, uncovered, at 325° for 20-22 minutes per pound or until ham is heated through and thermometer reads 140°. , For sauce, combine all ingredients in a small saucepan. Cook over medium heat until thickened, stirring often. Serve with ham.

1 lemon
1 orange
1/2 cup water
1/2 cup Port wine
2 tablespoons red currant jelly
2 tablespoons red wine vinegar
1/2 teaspoon imported mustard, preferably Dijon
Salt to taste, if desired
Pinch cayenne pepper

Steps:

  • Peel the thin outside rind of the lemon and orange. Cut into shreds and put in a small saucepan. Add the water and bring to a boil. Simmer seven minutes. Scoop out and discard the shreds.
  • Squeeze the juice from the lemon and orange and set aside.
  • Add the Port, jelly, vinegar, mustard, salt, cayenne and lemon and orange juice.
  • Bring to the boil and let simmer five minutes. Let cool. Serve.

pinch ground ginger
3/4 cup Golden rasins
1 tablespoon grated orange peel
1/2 teaspoon grated lemon peel

Steps:

  • Combine berries and port in heavy saucepamm over meduim heat. Cook until berries burst stirring occasionally, about 10 minutes. Add 1/2 cup sugar and salt stire 1 minute. combine orange juice, corn starch,dry mustard, lemon juice ans spices in small bowl. wisk to combine. Stir into beery mixture. Add rasins orange peel, lemon peel. simmer until thickened stiring occasionally, about 5 minutes. Season with more sugar if desired.

BLACK CUMBERLAND SAUCE

My 'Black Cumberland' version of the traditional red currant Cumberland sauce, uses black currants and some very browned onions. Serve this sauce, hot or cold, alongside any meat roast.

1 teaspoon vegetable oil
½ cup minced onion
⅓ cup red wine
1 cup black currant jelly
2 oranges, zested and juiced
1 lemon, zested and juiced
1 tablespoon brown sugar
2 teaspoons freshly ground black pepper, or to taste
¼ teaspoon mustard powder
¼ teaspoon ground ginger
1 pinch cayenne pepper
salt to taste

Steps:

  • Heat vegetable oil in large saucepan over medium heat. Cook and stir onions in the hot oil, until nearly dark brown, 10 to 15 minutes.
  • Pour wine into the saucepan, bring to a simmer and cook until reduced by half, about 1 minute; remove pan from heat.
  • Stir currant jelly, orange juice, orange zest, lemon zest, lemon juice, brown sugar, black pepper, mustard powder, ginger, cayenne pepper, and salt into onion mixture until combined.
  • Bring sauce to a boil; remove from heat.

5 -6 boneless chicken breasts
1/2 cup butter or 1/2 cup margarine
1/2 cup grated parmesan cheese
2 cups seasoned dry bread crumbs
3 tablespoons sesame seeds
1 cup red currant jelly
3 ounces cans orange juice concentrate or 3 ounces cans fresh orange juice, and a little rind
4 tablespoons dry sherry
1 teaspoon dry mustard
1/8 teaspoon ground ginger
1/4 teaspoon Tabasco sauce

Steps:

  • Dip chicken in melted butter.
  • Mix next 3 ingredients together.
  • Roll chicken in mixture and place in shallow baking dish and refrigerate.
  • When ready to cook, bring to room temperature and dot with butter.
  • Bake at 350 degrees for 1 hour or less.
  • For cumberland sauce: Combine ingredients and simmer until smooth.
  • Serve over chicken and rice.

This is a sweet and spicy sauce from the British Isles - I've heard that it's from Ireland and from England, although with the name, I would guess England.

1 julienned orange rind
1/2 cup currant jelly
1/3 cup port wine or 1/3 cup sherry wine
1/3 cup orange juice
1/4 teaspoon dry mustard
1 pinch ground ginger
1 tablespoon cornstarch
1 dash lemon juice
1 pinch cayenne pepper
salt and pepper

Steps:

  • Blanch the rind in boiling water.
  • Combine jelly, wine, juice, mustard, and ginger (reserve 3 tbs of the orange juice) and bring to a boil.
  • Combine cornstarch with reserved juice and add to boiling mixture.
  • Add lemon, cayenne, salt, and pepper and cook, stirring, until thickened.
  • Strain the sauce and add the blanched orange rind.

4 tbsp. dry sherry
1 tsp. dry mustard

2 California bay leaves
1 1/2 tablespoons kosher salt
1 tablespoon fennel seeds
1 (4- to 4 1/2-lb) center-cut boneless pork loin roast* (3 to 4 inches in diameter; preferably organic or sustainably raised)
1/4 cup coarse-grain mustard
2 teaspoons olive oil plus additional for greasing
For sauce
1/2 cup plus 1 tablespoon water
1/3 cup ruby Port
2/3 cup fresh orange juice
1 1/2 tablespoons fresh lemon juice
3 tablespoons red-currant jelly
1/4 teaspoon ground ginger
1/4 teaspoon salt
1 tablespoon cornstarch
1 tablespoon unsalted butter
Accompaniment: pork cracklings
Special Equipment
an electric coffee/spice grinder; kitchen string; a 17- by 12-inch flameproof roasting pan (not glass) with a rack; an instant-read thermometer

Steps:

  • Roast pork:
  • Discard center stem from bay leaves, then crumble leaves into grinder and pulse with kosher salt and fennel seeds until bay leaves are finely chopped.
  • Discard any strings from loin if tied. Arrange loin, fat side up, lengthwise on a work surface. Holding knife horizontally, make a lengthwise cut about 1 1/2 inches deep along side of loin (do not cut all the way through). Open loin like a book, then pat dry inside and out. Rub 1 tablespoon mustard all over cut sides, then sprinkle with 1 teaspoon seasoned salt. Close loin and tie crosswise at 1-inch intervals with string. Rub olive oil evenly over roast, then rub with remaining mustard and sprinkle with remaining seasoned salt, pressing lightly to help adhere. Oil roasting rack, then transfer pork, fat side up, to rack set in roasting pan and marinate, loosely covered and chilled, at least 12 hours.
  • Let pork stand at room temperature 30 minutes before roasting.
  • While pork comes to room temperature, put oven rack in middle position and preheat oven to 450°F.
  • Roast pork 25 minutes, then reduce oven temperature to 325°F and continue to roast until thermometer inserted diagonally 2 inches into center of meat registers 145°F, 35 to 45 minutes. Transfer pork to a platter (reserve roasting pan) and let stand, uncovered, 25 minutes.
  • Make sauce while pork stands:
  • If there is fat in roasting pan, skim all but 1 tablespoon. Straddle roasting pan across 2 burners, then add 1/2 cup water and deglaze pan by boiling over high heat, stirring and scraping up brown bits, 1 minute. Add Port and boil 1 minute. Add orange and lemon juices, jelly, ginger, and salt, and cook, whisking, until jelly is dissolved. Whisk together remaining tablespoon water and cornstarch in a cup, then add to pan and boil, whisking, 1 minute. Remove from heat and whisk in butter, then pour sauce through a fine-mesh sieve into a bowl.
  • Discard string from pork. Slice pork and serve with sauce and cracklings.

BURNS NIGHT BAKED HIGHLAND HAGGIS WITH WHISKY CUMBERLAND SAUCE



Burns Night Baked Highland Haggis With Whisky Cumberland Sauce image

First you must catch your haggis! These little creatures are very shy and EXTREMELY wiley - so you must proceed with caution and patience! I find the best place to find them is behind or under Highland heather bushes, although I have been known to catch a couple lurking near thistles! Having caught your haggis - you must treat it with GREAT respect and cook it well for the Burns Night Tribute Supper! That is why my haggis is baked instead of boiled - and it is served with Lindseylcw's special Cumberland sauce with lashings of good Scotch whisky! Other traditional accompaniments are: clapshot, bashed neeps and tatties, rumbledethumps, buttered leeks, skirlie mash, champit tatties and buttered cabbage. Don't forget the "correct" format for a Burns Night Supper: Chairperson's opening address. A few welcoming words start the evening and the meal commences with the Selkirk Grace. The company are asked to stand to receive the haggis. A piper then leads the chef, carrying the haggis to the top table, while the guests accompany them with a slow handclap. The chairman or invited guest then recites Burns' famous poem To A Haggis, with great enthusiasm. When he reaches the line 'an cut you up wi' ready slight', he cuts open the haggis with a sharp knife. It's customary for the company to applaud the speaker then stand and toast the haggis with a glass of whisky. The Immortal Memory: One of the central features of the evening; an invited guest is asked to give a short speech on Burns. There are many different types of Immortal Memory speeches, from light-hearted to literary, but the aim is the same - to outline the greatness and relevance of the poet today. Toast To The Lasses: The main speech is followed by a more light-hearted address to the women in the audience. Originally this was a thank you to the ladies for preparing the food and a time to toast the 'lasses' in Burns' life. The tone should be witty, but never offensive, and should always end on a concilliatory note. Response: The turn of the lasses to detail men's foibles. Again, should be humorous but not insulting. Poem and Songs: Once the speeches are complete the evening continues with songs and poems. These should be a good variety to fully show the different moods of Burns muse. Favourites for recitations are Tam O' Shanter, Address to the Unco Guid, To A Mouse and Holy Willie's Prayer. The evening will culminate with the company standing, linking hands and singing Auld Lang Syne to conclude the programme.

1 cup Scotch whisky
1/2 cup fresh orange juice
2 tablespoons grated orange zest
1 cup red currant jelly
1/4 teaspoon salt
1 pinch cayenne

Steps:

  • CUMBERLAND WHISKY SAUCE:.
  • In a medium saucepan, combine the whisky, orange juice, and orange zest, and bring to a boil.
  • Lower the heat and simmer, stirring occasionally, until reduced by 50 percent in volume to about 3/4 cup.
  • Add the redcurrant jelly, salt, and cayenne, and stir well.
  • Cook until thickened, about 2 to 3 minutes.
  • Remove from the heat and pour into an attractive serving bowl. Cool slightly before serving with your baked haggis.
  • HAGGIS:.
  • Preheat the oven to 200C/400F/gas 6. Remove the outer packaging from the haggis then prick all over with a fork, wrap in foil like a baked potato and bake in the oven for 1 and a half hours.
  • To serve, split open the haggis with a sharp knife and spoon the contents over neeps and tatties or serve separately with other traditional accompaniments - see the introduction.

4 T dry sherry
1 tsp dry mustard
1/8 tsp ground ginger
1/4 tsp hot pepper sauce

Steps:

  • Mix cheese and breadcrumbs. Dip chicken into butter then in crumb mixture. Refrigerate over night. Bring to room temperature and place into shallow pan. Dot with margarine. Bake 1 hour at 350 degrees. Combine sauce ingredients and simmer until smooth. Serve with chicken.

1 tablespoon vegetable oil
1 lb pork tenderloin, trimmed of fat and cut into 1-inch thick medallions
salt
freshly ground black pepper
2 tablespoons minced onions or 2 tablespoons shallots
1 cup dry red wine
1 teaspoon cornstarch
1 tablespoon fresh lemon juice
2 tablespoons red currant jelly or 2 tablespoons black currant jelly
1 teaspoon brown sugar
1 teaspoon Dijon mustard

Steps:

  • Heat 2 tsp oil in a nonstick skillet over medium-high heat.
  • Season pork lightly with salt and pepper and cook for 4 to 5 minutes per side, or until brown on the outside and no longer pink but still juicy inside.
  • Transfer to plates or a platter and keep warm.
  • Add remaining 1 tsp oil to the skillet.
  • Add onions or shallots and cook, stirring, until softened, about 30 seconds.
  • Add wine and bring to a boil, stirring.
  • Boil for 5 to 6 minutes, or until reduced to about 1/3 cup.
  • Dissolve cornstarch in lemon juice and whisk into the sauce.
  • Cook, stirring, until thickened and glossy.
  • Remove from heat and stir in jelly, sugar and mustard.
  • Taste and adjust seasonings with more salt and pepper, if needed.
  • Spoon the sauce over the pork.
  • Serves 2 with side dishes, and doubles easily.
  • Note from Julie: I used black-currant jelly and the sauce was wonderful. I wouldn't describe it as sweet-and-sour - you'd have to taste it for yourself to know what I mean. But I used this recipe the first time I ever cooked pork tenderloin and it's become a recipe I use again and again as a favorite!

7 -10 lbs fully cooked spiral cut ham
8 -10 sprigs fresh rosemary
1 large oven roasting bag
1 tablespoon margarine or 1 tablespoon butter
1/4 cup minced onion
12 ounces red currant jelly
1 tablespoon grated orange rind
1/4 cup orange juice
1 tablespoon grated fresh lemon rind
1/4 cup lemon juice
1 tablespoon Dijon mustard
1 cup port wine

Steps:

  • Preheat oven to 275 degrees.
  • Unwrap ham and remove plastic disc that covers the bone.
  • Tuck rosemary sprigs randomly through slice ham (about every 3 to 4 slices).
  • Place ham in cooking bag and tie ends together with enclosed plastic tie.
  • Place on a 13 x 9 inch baking dish.
  • Cut 3 1/2 inch slits on top per directions of cooking bag.
  • Don't let bag touch any part of the oven or it will melt.
  • Cook for 2 1/2 hours or until meat thermometer reads 140 degrees.
  • When ham is done, remove from oven and let sit in bag for 15 minutes before serving.
  • Carefully place ham on cutting board and remove slices to a warm platter.
  • Serve with Cumberland Sauce.
  • To make sauce, melt butter in a small saucepan.
  • Add onions and saute until tender.
  • Add jelly, grated orange rind, orange juice, grated lemon rind, lemon juice and Dijon mustard.
  • Cook over medium heat until jelly melts; stir constantly.
  • Slowly pour in port wine and simmer uncovered for 5 to 10 minutes.
  • Serve warm.
  • Can be kept up to five days in refrigerator.
  • Makes 2 cups.

1 bunch garlic
2 c cumberland sauce

Steps:

  • 1. Prepare roast by slicing cuts into the roast and inserting whole cloves of garlic into the cuts (the more the better). Lay the roast onto sheets of tinfoil (overlap two sheets for width). Douse the roast in the barbecue sauce. Wrap the roast up with the foil, making a nice package. Roast the meat in a 350F oven for about an hour.
  • 2. Notes: FYI, this same recipe can be used with buffalo, and the result is just as great. Serve with mashed boiled chestnuts and wilted greens for a real treat.

1 lemon
8 ounces red currant jelly
1 teaspoon Dijon mustard
5 tablespoons ruby port
1 teaspoon ground ginger
1 pinch salt

Steps:

  • Put a saucepan of water on to boil. Pare the zest of the orange and lemon, taking as little of the white pith as possible, then cut into long fine shreds. Drop into the boiling water and leave to simmer for 5 minutes to soften them and remove any bitterness. Drain.
  • Put the jelly, mustard and port into a saucepan and stir, then whisk, over a low heat until smoothly amalgamated. Bring up to the boil; add the blanched orange and lemon zest, the ginger and a little salt and freshly ground black pepper. Simmer gently for 5 minutes. Pour into a serving jug or bowl, and then leave to cool.

Stir in orange juice, lemon juice, currant jelly and cayenne until well blended. Bring to boiling, then reduce heat, and simmer, uncovered, until jelly is melted. Serve warm or cold.
  • 2. Notes: This works well with any red meat (even beef) but moose and buffalo are especially good with this sauce!

1 lemon
1 green onion, minced
1 c. currant jelly
1/8 tsp. ground cloves
Salt to taste
2 tsp. cornstarch
1/2 c. golden raisins
1 orange
1 c. port wine
1/8 tsp. ginger
1/2 tsp. dry mustard
Dash of cayenne pepper
2 tbsp. cold water
With a citrus zester remove the rind of the lemon and orange. Drop the lemon and orange rinds and minced onion and white port wine into boiling water for about 3 minutes drain and set aside. Squeeze the juice of the lemon and orange into a saucepan. Dissolve the cornstarch in the cold water and add to juices add remaining ingredients. Stir in the orange and lemon rind and the minced onion simmer for an additional 5 minutes. Serve hot. This is especially good with wild duck or venison.

CHICKEN
3 lb. broiler-fryer, cut up or 3 lbs. of your favorite chicken parts
3 Tbsp. flour
3/4 tsp. paprika
3/4 tsp. salt
1/8 tsp. pepper
1/4 cup butter or margarine
CUMBERLAND SAUCE
1 cup ruby port
2-1/2 Tbsp. grated orange rind
1/3 cup orange juice
1 Tbsp. lemon juice
1/2 cup red currant jelly
dash of cayenne

Steps:

  • CHICKEN Preheat oven to 425 degrees Wash & dry chicken on paper towels Coat chicken with combined dry ingred. Melt butter in shallow baking pan in oven. Place chicken parts, skin side down, in single layer in pan. Bake, uncovered for 30 minutes, turn chicken and bake 15 min. longer, or until brown and fork-tender. Serve with Cumberland Sauce. CUMBERLAND SAUCE Combine port & orange zest in saucepan; cook over medium heat until reduced to 2/3 cup, @ 10 minutes. Stir in orange and lemon juices, currant jelly and dash of cayenne. Bring to a boil, then reduce heat and simmer, uncovered until jelly is melted. Serve warm or cold on chicken.

Number Of Ingredients 9

2 tablespoons red currant jelly (not jam!)
1/2 cup Port wine
1/2 cup of the appropriate broth (duck, beef, venison or vegetable)
A pinch of salt
1/2 teaspoon dried thyme
Freshly ground black pepper
1/2 teaspoon cayenne
1 tablespoon flour
cranberries

Steps:

  • 1. When your meat has come out of the pan, add the flour and mix with the remaining fat in the pan. If there is none, add a tablespoon of oil or fat. Lower the heat to medium and cook until the flour is browned, about 2-3 minutes. 2. Deglaze the pan with the Port. Let this boil furiously until it is reduced by half. Add some fresh or frozen cranberries. 3. Add the stock or broth, the salt, thyme and cayenne and let this boil down by half. 4. Add the red currant jelly and the black pepper, then stir well to combine. 5. Let all this boil down until it is thick, but still pourable. Serve at once.
