1/2 tomato, chopped, reserved from Hummus Sandwich recipe
1/2 English cucumber, chopped, Hummus Sandwich recipe
1/2 cup white beans from Hummus Sandwich recipe
2 tablespoons reserved hummus, from Hummus Sandwich recipe
2 tablespoons reserved vinaigrette, from Corn Salad recipe
Kosher salt and freshly ground black pepper
1/2 small head lettuce, shredded

Steps:

  • Put the tomatoes, cucumber, and white beans into a bowl and toss to combine. Whisk together the hummus and vinaigrette and add to the bean mixture. Adjust the seasoning with salt and pepper, to taste. Spread the lettuce onto a platter, top with the bean mixture and serve.

Peel, seed, and thinly slice 1 cucumber
1.5 cups of white beans
light oil and mild vinegar
1 Tablespoon. white sugar

Steps:

  • Always looking for tasty protein sources, and ways to use up the last of our fall garden produce! Thinly slice several mint leaves. I use spearmint, as it grows abundantly in our garden. We like it very much, so I used 10 or 12 leaves. Mix in a small amount of white sugar, since cucumbers can be bitter this time of year. I used approximately 1 Tablespoon. Peel, seed, and thinly slice 1 cucumber. Add 1 to 1.5 cups of white beans. I used Goya cannellini beans. I rinsed them. Dress with a light oil and mild vinegar.
