CUCUMBER TOMATO PASTA SALAD

¾ cup olive oil
1 teaspoon garlic powder
2 teaspoons oregano
2 teaspoons basil
1 teaspoon pepper
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon Dijon mustard
⅔ cup white wine vinegar
1 large diced cucumber
5 medium diced tomatoes
8 ounces diced mozzarella
half box cooked penne pasta (8 ounces)
2 tablespoons fresh parsley

Steps:

  • Make the dressing. Combine the olive oil, garlic powder, basil, oregano, salt, pepper, onion powder, and Dijon dressing in a small bowl. Add the vinegar while whisking until well-combined.
  • Add the other ingredients and chill. In a large mixing bowl, combine the cooked pasta with the dressing and add the cucumber, tomato, and mozzarella. Cover the pasta salad and chill in the fridge for at least two hours.
  • Serve. Remove from the fridge and add the fresh parsley. Stir again to combine.

8 ounces rotini pasta (or any pasta you like)
1 pint grape tomatoes
1 English cucumber
1/2 red onion
1 tablespoon fresh dill
1 tablespoon fresh parsley
1 tablespoon fresh basil
1/4 cup sour cream
1/4 cup mayonnaise
1 tablespoon red wine vinegar
1 teaspoon sugar
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Bring a pot of salted water to a boil and add pasta. Cook pasta according to package directions.
  • While pasta cooks, halve tomatoes, slice the cucumber, and onion. Chop the dill, parsley, and basil. Put all ingredients into a large bowl.
  • To a small bowl or mason jar, add sour cream, mayonnaise, red wine vinegar, sugar, garlic powder, salt, and pepper. Whisk together or shake to combine.
  • Drain and rinse the cooked pasta. After cooling for 5 minutes, add it to the bowl with the chopped vegetables and herbs. Pour dressing over and toss to combine. Taste and adjust seasoning. Cover and refrigerate for 1 hour before serving.

1 bunch scallions
1/3 cup plus 2 tablespoons extra-virgin olive oil
8 ounces fusilli pasta
4 tablespoons Chardonnay vinegar
1 tablespoon Dijon mustard
Sea salt and freshly cracked black pepper
2/3 cup kalamata olives, pitted and chopped
1/2 cup cherry tomatoes, halved
1/4 red onion, finely diced
One 6-ounce piece provolone cheese, diced
1/4 cup fresh dill, chopped
1/4 cup fresh parsley, chopped
2 cups baby arugula

Steps:

  • Preheat a grill to high.
  • Toss the scallions in 2 tablespoons of the olive oil and season with salt and pepper. Grill the scallions until the bulbs are tender and the greens are well charred, 6 to 8 minutes, turning every couple of minutes. Set aside to cool. When the scallions are cooled, chop them finely.
  • Bring a large pot of salted water to a boil for the pasta. Add the pasta and cook until al dente, about 2 minutes less than the package instructions.
  • In a medium bowl, whisk together the vinegar and mustard. Season with salt and pepper. Whisk in the remaining 1/3 cup olive oil. Add the scallions and toss to coat.
  • When the pasta is finished cooking, drain and add to the vinaigrette. Add the olives, tomatoes, red onion, provolone, dill, parsley and arugula. Toss to combine.

CUCUMBER, TOMATO AND PASTA SALAD



Cucumber, Tomato and Pasta Salad image

I make this recipe mostly in late Spring and especially during the Summer months using cucumbers and cherry tomatoes, fresh from my own garden. I usually make enough for at least two or three servings so I'll have something for a quick, easy brown-bag lunch or perhaps a light dinner. This recipe is easy on the budget, relatively healthy, and is a great side dish. I'll sometimes have a small bowl of this salad with a toasted slice of baguette bread, lightly brushed with extra virgin olive oil and rubbed with a fresh garlic clove and a sprinkling of oregano, and a glass of my favorite wine. 2 cups tri-color spiral pasta, uncooked
10 -15 cherry tomatoes, cut into halves
2 -4 tablespoons black olives, canned sliced
1 large cucumber, sliced and quartered (peel, if desired)
1/3 cup feta cheese, crumbled
1/4 cup Italian dressing
1 tablespoon almonds, sliced (optional)

Steps:

  • Cook rotini as directed on package to al dante; Drain and run pasta under cold water.
  • Drizzle italian dressing over pasta, mixing slowly so as not to break apart the pasta pieces. Add in tomatoes, black olives, cucumber, and 5 tablespoons of the feta cheese. Continue mixing ingredients until well-coated.
  • Sprinkle remaining feta cheese over pasta mixture and top with almonds. (Instead of almonds I've used Melissa's Salad Sprinkles. This could not be located in RecipeZaar as a recognized ingredient but I wanted to record it in the directions as another option for a salad topper.).
  • NOTE: If you don't care for feta cheese, try using Parmesan cheese instead. It tastes just as good and gives the salad a somewhat different flavor. Use only four to five tablespoons instead and mix in as given above.

1 (8 ounce) package bow tie pasta
1 large cucumber, thinly sliced
1 large onion, thinly sliced
1 ½ teaspoons dried dill
¾ cup white vinegar
1 cup white sugar
1 cup water
1 tablespoon vegetable oil
1 tablespoon prepared mustard
½ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook the bow tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes. Drain and rinse several times with cold water until pasta is cool.
  • Stir pasta, cucumber, onion, and dill in a salad bowl. Whisk vinegar, sugar, water, vegetable oil, mustard, salt, and black pepper in a separate bowl until sugar and salt have dissolved. Pour dressing over the pasta mixture and toss lightly to coat with dressing. Let chill for 2 hours before serving.
