2 teaspoons lemon juice
2 teaspoons finely chopped onion
1/2 teaspoon dill weed
1/4 teaspoon prepared horseradish
Dash hot pepper sauce
3/4 cup finely diced seeded cucumber
Assorted crackers or assorted fresh vegetables

Steps:

  • In a large bowl, beat cream cheese until smooth. Add the lemon juice, onion, dill, horseradish and pepper sauce. Fold in cucumber. Cover and chill for at least 1 hour. Serve with crackers or fresh vegetables.

1 large cucumber, peeled,cored,and seeded (about 1 1/2 cups grated)
1/4 teaspoon salt
8 ounces cream cheese, softened
1/2 cup mayonnaise
3 tablespoons sour cream or 3 tablespoons plain yogurt
2 dashes Tabasco sauce, to taste
1/4 teaspoon lime juice
1/4 teaspoon garlic powder, to taste
1 teaspoon minced reconsitituted sun-dried tomato
2 tablespoons minced green onions
salt and pepper, to taste

Steps:

  • Peel, core, and seed the cucumber, then grate.
  • Sprinkle cucumber with salt in a colander and toss (this allows the cucumber to"sweat" out excess water); let stand for 30 minutes, stirring once or twice, then remove and gently squeeze liquid from cucumber.
  • Mix grated cucumber with remaining ingredients and chill for a least an hour before serving.
  • Serve with crackers or bread.

  • Melba is a really hard cracker its not easy to eat by some guests.
  • Pap and Gram prefer the softer crackers !

2 -3 green onions

2 teaspoons sugar
1/4 teaspoon salt

Steps:

  • Peel the cucumber and cut in chunks. If it's got a lot of big seeds, scoop some out and discard. Put it in a food processor and chop fine. If it's really moist, or you didn't seed it, then you may want to squeeze off some of the excess juice.
  • Put the onion in the processor and chop. Add the rest of the ingredients. Process, scrape down the sides, and process again until smooth.
  • I like it best on soft, white bread. But it's also great on crackers.

  • Peel and seed the cucumber: put in a food chopper and chop until very VERY VERY fine.
  • In a small bowl, combine all the ingredients.
  • Add food coloring to desired shade.

Let spread soften and stir it before serving. Sprinkle spread with remaining tablespoon onion.

That's the way the recipe was titled when I got it from a friend and I saw no reason to change the name. Summer is coming and this is the perfect snack for warm weather. I prefer baked wheat crackers as a base but I'm sure any other cracker or thinly sliced miniature bread loaf will work well too. Don't be put off by the initial steps; it's worth the effort! No cooking and prep time does not include a cool down in the refrigerator to blend the flavors.

2 medium cucumbers
11 ounces cream cheese (one 8 oz. and one 3 oz. package)
3 green onions, finely chopped with greens
2 tablespoons fresh parsley, chopped
1/3 cup mayonnaise (not Miracle Whip)
1 teaspoon garlic salt
1 teaspoon dried chives
1/2 teaspoon pepper (seasoned is fine)
1/4 teaspoon hot pepper sauce
cracker (or miniature bread loaf sliced)

Steps:

  • Peel the cucumbers. Slice them in half lengthwise; remove the seeds with a spoon or melon baller. Grate the cucumber halves by hand or with a food processor.
  • Here is the part that makes it work; squeeze the liquid out of the grated cucumbers by the handful, then place them on several layers of paper towels. Cover with additional layers and press down hard to squeeze out all the moisture. The rest is easy!
  • In the bowl of a food processor fitted with a steel blade (or in the medium mixing bowl of an electric mixer), combine the cream cheese, green onions, parsley, mayonnaise, garlic salt, chives, pepper and hot pepper sauce; process or mix until well blended.
  • Carefully stir in the cucumbers. Add more mayonnaise if needed, to get a spreading consistency. Refrigerate for a few hours before serving.
  • Store in a covered container in the refrigerator for a maximum of 7 to 10 days.
