1/2 cup ketchup
4 teaspoons Creole seasoning, divided
1 tablespoon finely chopped onion
1 tablespoon finely chopped green pepper
1 tablespoon finely chopped celery
1/4 teaspoon hot pepper sauce
1 package (8 ounces) cream cheese, softened
24 English cucumber slices
24 peeled and deveined cooked medium shrimp
2 tablespoons minced fresh parsley

Steps:

  • For cocktail sauce, in a small bowl, combine the ketchup, 2 teaspoons Creole seasoning, onion, green pepper, celery and pepper sauce. In another bowl, combine cream cheese and remaining Creole seasoning., Spread or pipe cream cheese mixture onto cucumber slices. Top each with a shrimp and cocktail sauce. Sprinkle with parsley.

1/2 pound cooked shrimp, peeled, deveined and finely chopped
1/2 cup reduced-fat mayonnaise
2 green onions, thinly sliced
1 celery rib, finely chopped
1 teaspoon dill pickle relish
Dash cayenne pepper
1 medium English cucumber, cut into 1/4-inch slices

Steps:

  • In a small bowl, combine the first six ingredients. Spoon onto cucumber slices. Serve immediately.

8 oz unsweetened crushed pineapple, drained
1 pkg mini salad shrimp, rinsed and drained
1/4 c reduced-fat mayonnaise
1 Tbsp finely chopped green onion
2 tsp dijon mustard
1 1/2 tsp minced fresh dill
1 medium 8-inch cucumber, cut into 1/4 inch circles,skin on and scored
fresh dill sprigs for garnish

Steps:

  • 1. Combine in a bowl the pineapple,shrimp, mayonnaise, onion, mustard and dill. Spoon onto cucumber slices. Garnish with dill sprig or sprinkle with dried dill weed.
  • 2. Note: To score cucumber: Before slicing - take a fork and with the tines scrape them down the length of the cucumber or squash exposing the white of the veggie- until you have scored it all around then slice.

I adopted this recipe and prepared it on August 23, 2006. I felt that it needed a boost of flavor and made some changes to the dressing (importantly to include the wasabi). The original poster found this in Sunset Magazine. The cucumbers become more flavorful the longer you soak them, but I would caution against marinating the shrimp for more than 20 minutes, as the texture will suffer.

8 ounces shrimp, cooked, peeled, deveined, and tails removed (31-40 per pound)
2 English cucumbers, about 1 1/2 pounds total, rinsed
1/3 cup rice vinegar
2 tablespoons sugar
2 tablespoons soy sauce
1 -2 tablespoon wasabi powder (to taste)
1/3 cup unsalted dry roasted peanuts, chopped
fresh parsley, chopped (optional)
green onion, chopped (optional)

Steps:

  • Rinse and drain shrimp - blot dry with papertowels to remove excess water.
  • Slice the cucumbers thinly.
  • In a pretty bowl, combine the vinegar, sugar, soy sauce, and wasabi, then mix in the cucumbers and shrimp.
  • Chill 20 minutes.
  • Garnish with peanuts, parsley, and/or green onions just before serving.
