3 cucumbers (, standard (or 2 long Telegraph/English cucumber(Note 1))
1/2 red onion (, finely diced)
1 1/2 tbsp red wine vinegar ((Note 2))
3 tbsp extra virgin olive oil
1 garlic clove (, minced)
1/2 tsp Dijon mustard
3/4 tsp mixed dried herbs ((Note 3 sub))
1/2 tsp white sugar ((optional))
1/2 tsp salt and black pepper (, EACH)

Steps:

  • Shake Dressing in a jar.
  • Cucumber: Trim ends then slice about 3 mm/ 1/8" thick.
  • Place in bowl with red onion.
  • Pour over Dressing, toss gently and serve immediately.

This classic cucumber salad is made with a homemade vinegar dressing and fresh dill. It's the vinegar cucumber salad your grandma used to make!

3 English cucumbers (or 4 regular cucumbers)
3 teaspoons salt (divided)
1/2 cup white wine vinegar
1/4 cup sugar
2 tablespoons chopped fresh dill
1/4 teaspoon white pepper

Steps:

  • Wash outer skins of the cucumbers and rinse well.
  • Cut off the ends but don't peel them. Cut the cucumbers into paper thin slices.
  • In large bowl, mix cucumber slices with 2 teaspoons salt. Let sit at room temperature for 1 hour. Drain excess liquid from cucumbers.
  • In medium bowl, make dressing by whisking together the white wine vinegar, sugar, dill, white pepper, and 1 teaspoon salt. Pour vinegar dressing over the drained cucumbers and mix well, tossing to coat.
  • Cover salad with plastic wrap and refrigerate 3 hours before serving.

2 English cucumbers (2 pounds)
1 small red onion
1 1/2 tablespoons salt
1 tablespoon plus 1 teaspoon white wine vinegar or sherry vinegar
1 teaspoon sugar
2 teaspoons dried dill or 2 tablespoons fresh

Steps:

  • Slice the cucumber lengthwise, remove the seeds, and slice thinly. Thinly slice the onion.
  • In a colander, toss the cucumber and onion with the salt and let it sit and drain for 20 minutes. Press the liquid out of the vegetables and rinse well with cold water.
  • In a medium bowl combine the vinegar and sugar and stir well. Add the cucumber mixture and toss to coat. Stir in the dill.
