CUCUMBER SALAD (PIPINNA SAMBOLA)
This cucumber salad is a staple dish in my household. The few ingredients of this salad combine to create a cool, refreshing mix of flavors.

Steps:
- Thinly slice the cucumber and place the slices in a bowl. Thinly slice the onion, separate out the rings or slices, and add to the cucumber.
- Thinly slice the green chili on the diagonal and add to the cucumber.
- Add the salt and pepper, squeeze the lime wedge over top, and combine all the ingredients with your hands. Taste and adjust the salt if necessary. Serve right away.

Steps:
- Peel cucumber and slice very thinly. Put in a bowl, sprinkle with salt and let stand for at least 30 minutes.
- Press out all liquid and if too salty, rinse with cold water. Drain well.
