Great summer appetizers don't have to be complicated and don't necessarily need the stove These crisp, refreshing cucumber rounds topped with a savoury herbed cream cheese come together in mere moments and disappear just as quickly!

1 English cucumber (seedless, well chilled)
1 brick Philadelphia Cream Cheese (8 oz, any variety, softened to room temperature)
¼ cup minced fresh dill weed (or a combination, parsley, or chervil ~or~ 1 ½ tablespoons dried dill weed or parsley)
2 tablespoons dill pickle juice
¾ teaspoon granulated onion or onion powder
½ teaspoon granulated garlic or garlic powder
Freshly ground black pepper to taste
1 green onion (green part only, minced)

Steps:

  • Add the softened cream cheese, dill weed, dill pickle juice, granulated onion or onion powder, granulated garlic or garlic powder, and freshly ground black pepper to the bowl of a stand mixer, a large bowl with a hand mixer, or a bowl with a sturdy spoon. Mix on high (or mix aggressively by hand) until the cream cheese is soft, smooth, and all other ingredients are evenly distributed. Scrape into a pastry bag fitted with whichever tip you prefer, a zipper top bag, or a bowl which is then covered with plastic wrap and refrigerate for at least an hour before serving.

These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

½ cup sour cream
½ cup mayonnaise

1 cucumber, thinly sliced
¼ cup snipped fresh dill leaves, or as needed

Steps:

  • Mix cream cheese, sour cream, mayonnaise, ranch dressing mix, and dried dill in a bowl until creamy and smooth.

3 shallots, finely chopped
2 teaspoons butter
2 cups (8 ounces) crumbled blue cheese
2 packages (8 ounces each) cream cheese, softened
1/2 cup sour cream
2 tablespoons Cognac or brandy
1/4 teaspoon salt
1/4 teaspoon white pepper
1/2 cup chopped walnuts, toasted
Assorted crackers

Steps:

  • In a small skillet, saute shallots in butter until tender. Remove from the heat; cool. , Meanwhile, in a large bowl, combine the cheeses, sour cream, Cognac, salt and pepper. Add shallots and mix well. Line a 3-cup bowl with plastic wrap. Spread cheese mixture into prepared bowl. Cover and refrigerate for at least 1 hour., Unmold onto a serving plate; garnish with walnuts. Serve with crackers.

3/4 cup finely diced seeded cucumber

2 medium cucumbers
12 ounces of softened cream cheese
4 green onions, finely chopped
1 teaspoon salt
1/4 teaspoon pepper
1 loaf white bread
paprika or chili powder

Steps:

  • Peel cucumbers and cut lengthwise into quarters; remove seeds; finely chop.
  • Remove liquid by drying and pressing onto paper towel.
  • Combine cream cheese, cucumbers, green onions, salt and pepper; mix well.
  • Cut rounds with cookie cutter from slices of bread, you can get two or three per slice.
  • Spread with cucumber mix.
  • Top with paprika or chili power.
