Number Of Ingredients 10

1 medium cucumber, peeled, halved lengthwise, seeded, and grated on the large holes of a box grater
1 tablespoon shallot, finely chopped
3/4 cup sour cream
1/4 cup low-fat buttermilk
1/4 cup mayonnaise
3 1/2 tablespoons (about 1 lemon) fresh lemon juice
1 1/4 teaspoons coarse salt
Pinch of cayenne pepper
3 tablespoons fresh flat-leaf parsley, finely chopped
3 tablespoons fresh chives, finely chopped

Steps:

  • Stir together cucumber, shallot, sour cream, buttermilk, mayonnaise, lemon juice, salt, cayenne, parsley, and chives in a medium bowl. Season with additional salt and cayenne, if desired.

1 teaspoon salt
1/4 pound snow peas
1/4 pound sugar snap peas
1/4 pound wax beans
1/4 pound purple beans
1/4 pound haricots verts
1 medium cucumber, peeled and halved lengthwise
1 tablespoon finely chopped shallot
3/4 cup sour cream
1/4 cup buttermilk
1/4 cup mayonnaise
3 1/2 tablespoons fresh lemon juice, about 1 lemon
3 1/2 tablespoons coarse salt
3 tablespoons each finely chopped fresh flat-leaf parsley and fresh chives

Steps:

  • Bring a large pot of water to a vigorous boil. Add about a teaspoon of salt.
  • Snap off the ends of all the beans, leaving the tail on if desired
  • Cook beans and peas in separate batches, starting with the snow peas and ending with the haricots verts, just until color is brightened and they are crisp-tender. They should bend without snapping but not be at all limp, 30 to 60 seconds. Remove with a slotted spoon and immediately plunge into an ice-water bath.
  • Once beans have cooled completely, drain in a colander, shaking to remove as much excess water as possible. Spread them on a clean kitchen towel and gently pat away remaining moisture. Loosely wrap vegetables in the towel and chill for up to 2 hours.
  • To make dressing: Grate cucumber on the large holes of a box grater.
  • In medium bowl, mix together cucumber shallot, sour cream, buttermilk, and mayonnaise. Add fresh lemon juice, salt, parsley, chives, and cayenne pepper. Season with more salt and cayenne, if desired.
  • Arrange vegetables on a platter and serve with dressing for dipping.

1 medium cucumber, peeled, halved lengthwise, seeded and grated on large holes of box grater
1 tablespoon shallot, finely chopped (or green onion)
3/4 cup light sour cream
1/4 cup low-fat buttermilk
1/4 cup mayonnaise
1 -3 tablespoon fresh lemon juice
1 1/4 teaspoons salt
1/2-1 teaspoon sugar (optional)
1 pinch cayenne pepper
1 -3 tablespoon flat leaf parsley, finely chopped
2 -3 tablespoons fresh scallions, finely chopped (or chives)
1/2-1 tablespoon fresh dill (or 1/2 tsp. dried) (optional)

Steps:

  • Stir together cucumber, shallot, sour cream, buttermilk, mayonnaise, lemon juice, salt, sugar, cayenne, parsley, scallions and dill, if using, in a bowl. Add additional salt and cayenne if needed.
  • The dressing can be refrigerated in an airtight container for up to 3 days. Enjoy!

1/4 cup sliced green onions (4 medium)
6 slices cooked bacon, chopped
2 hard-cooked eggs, peeled, coarsely chopped
1 cup cucumber ranch dressing
1 small cucumber, seeded and finely chopped (3/4 cup)
2 tablespoons chopped fresh dill

Steps:

  • On large serving platter or in 13x9-inch (3-quart) glass baking dish, arrange salad ingredients in rows or if desired, arrange individual salads on lettuce-lined plates.

This is from TOH. Its great because you can mix the dry ingredients and keep in a cool dry place in ziploc bags. All you have to do later is to add the ingredients for the other dressings and enjoy. I suggest refrigerating at least 24 hours before serving to allow the flavors to blend. The base mix yields 3 cups of mix. This divides into 4 portions to use at any point. Each portion makes 6 batches of salad dressing.

1/2 cup finely crushed saltine
1/2 cup dried onion flakes
1/2 cup garlic salt
1/2 cup onion salt

2 cups mayonnaise
2 cups buttermilk
1/4 cup chili sauce
2 tablespoons sweet pickle relish
1 medium cucumber, peeled, seeded and pureed
1 teaspoon celery seed

Steps:

  • BASE MIX: In a large bowl, combine the first 8 ingredients. Divide into 4 portions; store in containers or bags in a cool dry place.
  • RANCH DRESSING: In a bowl, whisk together 2 tablespoons mix with mayo and buttermilk. Refrigerate until serving. Serve as is, or use to make one of the following great dressings.
  • THOUSAND ISLAND DRESSING: Add chili sauce and pickle relish to 1 cup prepared Ranch dressing.
  • CUCUMBER RANCH DRESSING: Add cucumber and celery seed to 1 cup prepared Ranch Dressing.

HOMEMADE CUCUMBER RANCH DRESSING MIX



Homemade cucumber ranch dressing mix image

No preservatives and better flavor YUM!!

3/4 c powdered milk or buttermilk
1/4 c potato flakes
2 tsp dill pickle
2 tsp onion powder
2 tsp dried onion flakes
2 Tbsp dried parsley
1/2 tsp ground black pepper
1 tsp garlic salt
1 dehydrated large cucumber

Steps:

  • 1. Put all ingredients in food processor and process until blended and powdered. This comes out a bit thinner because of the lack of preservatives and fillers. I mix it with 3/4 cp mayo or sour cream to 1/4 cup milk and 3 tablespoons of the mix.
  • 2. Try more or less to your liking! NOTE- you may add 1/4 tspn to this dressing of xanthan gum to thicken it as the recipes is thin. Instead of using xanthan gum I just use a little more mayo and less milk! I dont care for using additives
  • 3. If you don't have dehydrated cucumber you can finely dice fresh cucumber (its better that way!)

Steps:

  • Stir together all ingredients in a medium bowl. Season with additional salt and cayenne pepper, if desired. Dressing can be refridgerated in an airtight container for up to 3 days.
