COLD SESAME NOODLES WITH CUCUMBER

Remember those sesame noodles I used to order in New York as a cash- strapped actress? Well, I've re-created my own recipe here and, in my humble opinion, it's even better than the original. Best part? This is a cinch to make.

8 ounces Chinese egg noodles, cappellini, or pad thai- style rice noodles
1 tablespoon peanut oil
1/4 cup peanut butter
1/2 teaspoon toasted sesame oil
3 tablespoons rice vinegar
1/4 cup soy sauce
2 teaspoons toasted sesame seeds
1 tablespoon honey
2 tablespoons freshly grated ginger, or 1 tablespoon ground ginger
2 garlic cloves, minced
1 tablespoon red pepper flakes
1 tablespoon sriracha or other red chile sauce
2 Persian cucumbers, 1 grated, 1 thinly sliced
1 scallion, chopped
1/4 cup salted roasted peanuts, chopped
1/4 cup fresh cilantro leaves, chopped

Steps:

  • Bring a pot of water to a boil. Prepare a bowl of ice water.
  • Cook the noodles in boiling water until al dente, 3 to 5 minutes. Drain and transfer to a bowl of ice water and soak for 5 minutes, until well chilled. Drain again, return to the bowl, toss with the peanut oil, and set aside.
  • In a large bowl, whisk together the peanut butter, sesame oil, rice vinegar, soy sauce, sesame seeds, honey, ginger, garlic, red pepper flakes, and sriracha. Fold in the grated cucumber, half the scallion, and half the peanuts. Add the chilled pasta and toss to coat thoroughly. Transfer to a serving bowl, twirling the pasta into a nest shape. Top with the sliced cucumber, cilantro, and the remaining scallion and peanuts.

2 tablespoons dark (Asian) sesame oil
1 tablespoon soy sauce
1 tablespoon white-wine vinegar or rice vinegar (not seasoned)
1/4 teaspoon sugar
1/4 teaspoon salt, or to taste
1/8 teaspoon dried hot red pepper flakes
6 ounces capellini
1/2 seedless cucumber, cut lengthwise into thin spears and crosswise into thin slices (about 1 cup)
1 scallion, minced, or 1 tablespoon minced fresh coriander
1 1/2 teaspoons sesame seeds, toasted lightly and cooled

Steps:

  • In a small bowl stir together oil, soy sauce, vinegar, sugar, salt, and red pepper flakes until sugar and salt are dissolved.
  • In a large saucepan of salted boiling water cook capellini until tender and drain in a colander. Rinse noodles under cold water until cool and drain well.
  • In a large bowl toss noodles with sauce, cucumber, and scallion or coriander until combined well and divide between 2 plates. Sprinkle noodles with sesame seeds.

DRUNKEN CUCUMBER NOODLES

2 tablespoons low-sodium soy sauce
1 tablespoon fish sauce
1/2 teaspoon cornstarch
2 tablespoons hoisin sauce
1 tablespoon Thai chili paste (I used sambal)
1 1/2 teaspoons toasted sesame oil
1 tablespoon peanut oil
8 ounces ground chicken
1 small yellow onion, halved and sliced root to stem
1 orange bell pepper, cut into 1/2-inch dice
1 medium clove garlic, minced
1 cup grape tomatoes, halved
2 scallions, thinly sliced
1 pound cucumbers, cut into noodles with a spiralizer on a medium setting
3 tablespoons fresh Thai basil leaves

Steps:

  • In a small bowl, whisk together the soy sauce, fish sauce, cornstarch and 1 teaspoon water, making sure there are no lumps. Stir in the hoisin, chili paste and sesame oil.
  • Heat a large skillet over medium heat. Add the sauce mixture, bring to a simmer and simmer until thickened, about 1 minute. Reserve the sauce in a small bowl for later.
  • Wipe out the skillet and heat over medium-high heat. Add the peanut oil and when hot, add the chicken and cook until just browned, 5 to 7 minutes. Remove to a plate with a slotted spoon. Add the onions, peppers and garlic and cook until just softened, about 3 minutes. Return the chicken to the skillet, stir in the sauce, tomatoes and scallions and cook for 1 minute more.
  • Place the cucumber noodles in a large bowl and toss with the hot chicken mixture from the skillet directly before serving. Sprinkle with torn basil and serve.

COLD PORK RICE NOODLES WITH CUCUMBER AND PEANUTS



Cold Pork Rice Noodles With Cucumber and Peanuts image

Sometimes you want dinner to be cold. For those evenings, there's this make-ahead pork and rice noodle dish, offering a robust infusion of zing from garlic, fish sauce and tons of fresh herbs plus plenty of flexibility. Add more peanuts and basil, or go heavy on the mint and lime. Use pork tonight, and ground turkey or chicken the next time; it's your choice. This basic formula is easily adapted, and the components pack up easily for a work lunch or another night's dinner. To make this vegetarian, substitute semi-firm tofu, cut into 1/2-inch cubes, for the pork, and substitute a few tablespoons of soy sauce for the fish sauce.

Steps:

  • Heat the oil in a large skillet or wok over medium heat. Add the garlic, pork and black pepper and stir to brown evenly, 2 to 3 minutes. Add fish sauce, sugar and sriracha, and continue cooking until pork is just cooked through and evenly coated with sauce, 2 to 3 minutes more. Set aside.
  • Bring a large pot of salted water to a rolling boil. Add the rice noodles and cook until tender, 2 to 4 minutes. Drain and rinse with cold water.
  • Drain the sauce off the pork into a bowl, and toss it with the noodles to coat. Divide the dressed noodles across four bowls and top with pork, cucumber, herbs and peanuts (or toss all together and transfer to a bowl). Drizzle with sriracha to taste and serve with lime for squeezing.

1/2 cup fresh orange juice
1/4 cup creamy peanut butter
2 tablespoons unseasoned rice vinegar
2 tablespoons chopped peeled fresh ginger
2 tablespoons fresh lime juice
1 tablespoon finely grated orange peel
1 tablespoon soy sauce
2 garlic cloves, peeled
1 1/2 teaspoons finely grated lime peel
2 teaspoons dried crushed red pepper, divided
1/3 cup canola oil
8 ounces soba noodles
1 teaspoon Asian sesame oil
3 cups (loosely packed) mixed baby greens
2 heads of baby bok choy, cored, thinly sliced crosswise
1 English hothouse cucumber, cut into matchstick-size strips
3 green onions, cut into matchstick-size strips
1/3 cup chopped fresh cilantro plus sprigs for garnish
2 tablespoons chopped fresh mint
Salted roasted peanuts

Steps:

  • Puree first 9 ingredients and 1 teaspoon red pepper in blender until smooth. With machine running, gradually add canola oil through opening in lid. Season dressing to taste with salt and pepper. DO AHEAD: Can be made 1 day ahead. Cover and chill. Bring to room temperature before continuing.
  • Cook soba noodles in large pot of boiling salted water until tender but still firm to bite. Drain. Rinse with cold water; drain well. Using kitchen shears, cut noodles crosswise in 2 to 3 places. Drizzle noodles in strainer with sesame oil and toss to coat.
  • Place greens, bok choy, cucumber, green onions, chopped cilantro, and mint in large bowl. Add 1 teaspoon red pepper, dressing, and noodles; toss to coat. Season to taste with salt and pepper. Garnish with cilantro sprigs and peanuts and serve.

Steps:

  • Adjust blade of slicer to 1/8-inch-thick setting. Using slicer, cut each cucumber lengthwise into long 1/8-inch-thick julienne strips, slicing until you reach core, then rotate cucumber a quarter turn and continue slicing and rotating until left with nothing but core. Blanch cucumber "noodles" in a 4-quart pot of boiling salted water 1 minute, then drain in a colander. Immerse colander with cucumbers in a large bowl of ice and cold water to stop cooking, about 2 minutes. Drain cucumbers, then transfer to a clean kitchen towel and pat cucumbers dry.
  • Heat butter in a 10-inch heavy skillet over moderate heat until foam subsides, then cook cucumbers, mint, salt, pepper, zest, and lemon juice, tossing to coat, until just heated through, about 1 minute.

Steps:

  • Combine sugar, water, soy sauce, ginger, garlic, and salt in a small saucepan. Bring to a boil, stirring until sugar and salt are dissolved, about 5 minutes. Remove from heat and cool slightly, about 5 minutes. Stir in rice vinegar to make dressing.
  • Bring a large pot of water to a boil. Cook udon noodles in boiling water, stirring occasionally, until noodles are tender yet firm to the bite, 10 to 12 minutes. Drain. Rinse with cold water and drain.

6 large heirloom tomatoes, cored and chopped
1/2 English cucumber, peeled and chopped
1 clove garlic, smashed
Kosher salt
1/2 cup fish sauce
1/2 cup rice wine vinegar
2 1/2 teaspoons sugar
1 teaspoon sambal
3 English cucumbers, peeled
2 sprigs thyme, stems removed and leaves chopped
1/2 bunch chives, thinly sliced
1/2 bunch flat-leaf parsley, stems removed and leaves finely chopped
1 cup instant mashed potato flakes
Four 6-ounce halibut fillets, skin removed
Kosher salt
2 large eggs, beaten with 1 tablespoon water
Extra-virgin olive oil
2 cloves garlic, smashed
4 baby zucchini, diced
2 ears corn, kernels removed
3 large heirloom tomatoes, 2 sliced 1/2-inch thick and 1 diced
Canola oil, for frying
1 cup all-purpose flour
1 cup white wine, plus more as needed
4 zucchini blossoms
Micro basil, for garnish

Steps:

  • For the tomato water: Line a hand strainer with cheesecloth and set over a large bowl. Add the tomatoes, cucumbers, garlic and a nice big pinch of salt to the bowl of a food processor. Pulse a few times, scrape down the sides with a spatula, and pulse again. Pour the mixture into the cheesecloth-lined strainer. Set aside to strain for 2 hours, giving it an occasional stir to redistribute the juices.
  • For the cucumbers: Add the fish sauce, rice wine vinegar, sugar and sambal to a large bowl and stir to combine. Trim the ends of the cucumbers so they are even in size. Using a mandoline, shave the cucumbers lengthwise on all sides, turning the cucumber when you get to the seeds. Discard the center with the seeds. Stack the shaved cucumber and slice lengthwise into noodles, about the width of linguine. Add to the dressing and sit for 30 minutes. Drain and set aside.
  • For the fish: Preheat the oven to 350 degrees F.
  • Add the thyme, chives, parsley and potato flakes to a small bowl and mix to combine. Sprinkle the halibut with salt, then brush with the egg wash. Dip each piece of fish into the herb and potato flake mixture, pressing firmly to ensure the crust is tightly adhered. Place onto a sheet tray with the crusted side up and set aside.
  • Heat a large saute pan with some olive oil and the smashed garlic over medium-high heat. Swirl the pan to infuse the oil with the garlic. Cook until the garlic is golden brown, a few minutes, then remove from the pan. Add the zucchini and cook to soften, 2 to 3 minutes, then toss in the corn and cook for another minute. Finally, add the diced tomatoes and season with salt. Cook for just a minute, then turn off the heat.
  • Heat a large nonstick pan with some olive oil over medium-high heat until the oil shimmers. Add the fish, crusted side down. Cook until the crust is golden brown and crispy, about 5 minutes. Flip the fish, then transfer onto a sheet tray lined with a rack. Arrange the sliced tomatoes next to the halibut. Place into the oven and bake until it reaches an internal temperature of 125 to 130 degrees F when inserted with a thermometer, 5 to 7 minutes.
  • Set up a deep fryer and heat canola oil to 350 degrees F. Combine the flour and wine in a small bowl and stir to make a batter. It should be the consistency of a thin pancake batter. If it's too thick, add a bit more wine. Dip the zucchini blossoms into the batter, then fry until golden brown, 1 to 2 minutes, flipping halfway through. Drain on a paper-towel-lined plate and season with salt.
  • To serve: Place a slice of the roasted tomato on the bottom of a shallow bowl and top with the cucumber noodles. Add some of the sauteed zucchini, corn and tomatoes over the top, followed by the fish, crust side up. Garnish with the fried zucchini blossoms and micro basil. Pour some of the tomato water around the edge of the plate right before serving.

1.2l vegetable stock
knob fresh root ginger , peeled and shredded
100g soba noodle
1 tbsp reduced-salt soy sauce , plus extra to serve if you like
1 tbsp tahini paste or peanut butter
125g pack smoked trout fillets, flaked
½ large cucumber , sliced
6 spring onions , finely sliced
sesame seed , to serve
sesame oil , to serve

Steps:

  • Bring the stock and shredded ginger to the boil in a large pan, add the noodles, then simmer for 4 mins until tender.
  • Drain, then cool under cold running water. Mix together the soy, tahini and 2 tbsp water (or more if you need) to make a dressing the consistency of single cream. Toss the cooled noodles and fish with the dressing and cucumber. Scatter with the spring onions and sesame seeds, then drizzle with a little sesame oil, if using.

1 teaspoon honey (optional)
1 lime, peel sliced away and discarded
2 tablespoons pickled ginger
2 garlic cloves
1 -3 teaspoon chili-garlic sauce, use up to your heat level
1/4 cup warm water
1/4 cup organic soy sauce
1 cup organic peanut butter
1 large cucumber, ends removed
1 large zucchini, ends removed
minced cilantro, to taste and for garnish
minced basil, to taste and for garnish
peanuts, garnish (optional)
sliced chives, to taste and garnish
sliced scallion, to taste
1 small hot chili, sliced for garnish

Steps:

  • In a blender place in order all ingredients rice wine vinegar to peanut butter.
  • Now to make the noodles, I used my spiralizer but you can use a mandoline with the julienne blade or a julienne peeler. I used enough cukes and zukes to fill a 8 cup bowl.
  • Top with the blended sauce toss to coat veggies.
  • Place in a serving bowl and garnish with herbs, seeds, chili and nuts.

2 tbsp soy sauce
knob root ginger , peeled and shredded
1 lime , ½ juiced, ½ cut into wedges
250g pack firm tofu , drained
2 sheets medium egg noodles
1 tsp vegetable or sunflower oil
1⁄2 cucumber , peeled into ribbons
1 tbsp toasted peanut , crushed
1 fat red chilli , deseeded and finely sliced

Steps:

  • Mix the soy sauce, ginger and lime juice in a dish, then add the tofu. Leave to marinate for 5 mins, turning once. Boil the noodles for 4 mins, or according to pack instructions, then drain and cool.
  • Dry the tofu on kitchen paper. Heat the oil in a non-stick frying pan, then fry tofu for 3 mins on each side until golden. Cut into cubes.
  • To serve, mix the noodles, chilli, cucumber, tofu and the marinade in a bowl. Toss, then serve with lime wedges and peanuts.

1 medium aubergine
2 tablespoons miso
1 teaspoon sesame seeds
100 g rice noodles (vermicelli or flat ones)
1/2 cucumber
1 -2 tablespoon rice vinegar

Steps:

  • Heat the grill to medium. Halve the aubergine lengthways and cut a crisscross pattern into the cut side. Put cut-side down on a baking sheet and grill for 10 minutes, or until the skin starts to brown.
  • Turn over and spread 1 tbsp miso paste on each cut side, put back under the grill and cook for 15 minutes, or until the aubergine is soft and cooked through, being careful not to let it burn. Sprinkle with sesame seeds and grill briefly to brown them.
  • Meanwhile, soak the rice noodles following the packet instructions. Peel the cucumber, then use the peeler to cut into thin strips. Toss these with the noodles and season with salt and the vinegar.

I adore smoked mackerel. It's a great source of omega oils. Any thin, Asian-style noodle will work nicely in this recipe, which can be served warm or cold. I often use Vietnamese rice noodles, about the thickness of linguine.

200 g smoked mackerel fillets (2 small)
2 tablespoons soy sauce
2 tablespoons sesame oil
1 teaspoon fresh ginger, grated

1 birds eye chile, finely chopped (seeded to taste)
1/4 cup chopped mint
1/4 cup chopped coriander
1/4 cup chopped parsley

  • Cut the cucumber into ultra-thin slices (I use my food processor to get them paper thin). Toss cucumber slices with salt and let sit for 20 minutes. Drain well, squeezing gently to remove any excess water. Peel the carrots and shred (again, I use my food processor for this -- it makes it so much easier). In a large bowl, combine the cucumber slices, carrots, 2 tbsp seasoned rice vinegar, 1 tsp dark sesame oil and toasted sesame seeds. Toss well to combine. Set aside. Cook the rice vermacelli noodles according to package directions. Once cooked, rinse with cold water and let fully drain. In a large bowl, combine the rice noodles, 2 tbsp seasoned rice vinegar, 1 tsp dark sesame oil, ground ginger, garlic powder and soy sauce. Toss until fully coated. Divide the rice noodles among four plates and top with the cucumber and carrot salad. Serve.

Salmon Lova with Soba Noodles and Cucumber Salad image

3 quarts warm water
8 spring roll wraps
Eight 5-ounce salmon fillets
1/2 cup olive oil
2 teaspoons salt
1/8 teaspoon white pepper
1/4 cup clarified butter
1 cup Soba Noodles and Cucumber Salad, recipe follows
2 cups spicy orange beurre blanc
1 pound soba noodles
2 large cucumbers, peeled, halved, seeded, sliced 1/16-inch, salted and squeezed
1 cup Japanese Vinaigrette, recipe follows
1 tablespoon dashi
1 tablespoon sesame seeds
1/2 cup white vinegar
1/4 cup mirin
8 teaspoons rice vinegar
1/2 teaspoon soy sauce
1 teaspoon sesame oil
2 tablespoons sugar

Steps:

  • Pour the warm water into a medium mixing bowl. Place the spring roll wraps in the water and press down until totally immersed. When the wraps are soft, remove from the water and using your fingertips, pat lightly with olive oil. Place the salmon fillet in the center of the wrapper and season with a pinch of salt and pepper. Fold the left and right sides of the wrap over the fish. Then fold the top and bottom. Turn over and pat with more olive oil. Repeat the process until all are completed.
  • Using an ovenproof nonstick pan, heat the clarified butter. Place the salmon fillets in the pan, seam side down, lightly brown one side, turn over, and finish in a 400 degree oven for approximately 10 minutes. Plate with the soba noodles and cucumber salad and top the salmon with the beurre blanc. Garnish with julienned pickled ginger
  • Cook the soba noodles according to the instructions on the package in boiling salted water until al dente, 6 to 8 minutes. Rinse and chill. Add the cucumbers, Japanese vinaigrette, and dashi to the noodles and gently toss together. Garnish with toasted sesame seeds.
  • Put all the ingredients in a bowl and whisk until thoroughly blended. Process until the mixture is rough-textured, not completely smooth.

Steps:

  • Whisk together yogurt, horseradish, mustard, and lemon juice. Season with 1/4 teaspoon salt.
  • Cut thin ribbons of cucumber with slicer, then very thinly slice onion. Toss with half of yogurt sauce.

150g vermicelli rice noodles
1 garlic clove , finely grated
2 tbsp light soy sauce
1 tbsp caster sugar
4 tbsp rice wine vinegar
2 tbsp sesame oil
½ large cucumber
2 carrots , grated
2 skinless poached salmon fillets , flaked
2 tbsp peanuts , roughly chopped, to serve

Steps:

  • Put the noodles in a bowl and cover with boiling water from the kettle. Set aside for 4 mins. Drain and rinse under cold running water, then return to the bowl.
  • Mix the garlic, soy sauce, sugar, vinegar and sesame oil together in a separate bowl. Lightly smack the cucumber with a rolling pin to split it, then chop into 2cm pieces. Add to the bowl with the dressing and toss everything together.
  • Add the dressed cucumber and the carrots to the bowl with the noodles and toss to combine. Gently toss through the salmon, then divide between two plates, scatter over the peanuts and serve.

For the dressing:
3 tablespoons tahini (a runny variety if possible, available in Middle Eastern markets)
1 tablespoon soy sauce
2 tablespoons seasoned rice wine vinegar
1 to 2 teaspoons hot red pepper oil (to taste)
Pinch of cayenne (optional)
2 teaspoons finely minced fresh ginger or 1 teaspoon ginger juice (see below)
Salt and freshly ground pepper to taste
1 tablespoon sesame oil
1/4 cup vegetable or chicken broth or water (more to taste
For the salad:
3/4 pound udon or soba noodles
1 tablespoon dark sesame oil
1 yellow or red pepper, cut in thin 2-inch strips
1 Persian cucumber or 1/3 European cucumber, cut in 2-inch julienne
1 medium-size ripe tomato, diced
1 cup chopped cilantro
1/4 cup chopped chives or scallions
1 tablespoon black sesame seeds

Steps:

  • For ginger juice, grate a 1-inch piece of ginger. Wrap in a piece of cheesecloth, twist both ends of the cheesecloth and, holding the package over a bowl, wring out so that the juice is squeezed through the cheesecloth into the bowl. 1. In a bowl or measuring cup, whisk together all of the ingredients for the dressing. Taste and adjust seasoning. You can make it spicier if desired. 2. Cook the noodles. I like to cook wheat udon and soba the Japanese way. Bring 3 or 4 quarts of water to a boil in a large pot. Add the noodles gradually, so that the water remains at a boil, and stir once with a long-handled spoon or pasta fork so that they don't stick together. Wait for the water to come back up to a rolling boil - it will bubble up, so don't fill the pot all the way - and add 1 cup of cold water. Allow the water to come back to a rolling boil, and add another cup of cold water. Allow the water to come to a boil one more time, and add a third cup of water. When the water comes to a boil again, the noodles should be cooked through. Drain and toss with1 tablespoon sesame oil. 3. Combine the noodles, pepper, cucumber, tomato, cilantro, chives or scallions and black sesame seeds in a large bowl. Toss with the dressing and serve. The salad can also be refrigerated for a few hours before serving. In this case add half the cilantro now and the rest just before serving. Yield: Serves 6

3 English cucumbers (usually plastic-wrapped, 2 1/2 to 2 3/4 lbs total)
2 tablespoons unsalted butter
2 tablespoons finely chopped of fresh mint
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon finely grated fresh lemon zest
1 teaspoon fresh lemon juice

Steps:

  • Julienne each cucumber into long 1/8" strips, omitting cucumber's core.
  • Blanch cucumber "noodles" in a 4-quart pot of boiling salted water 1 minute, then drain in a colander.
  • Immerse colander with cucumbers in a large bowl of ice and cold water to stop cooking, about 2 minutes.
  • Drain cucumbers, then transfer to a clean kitchen towel and pat cucumbers dry.
  • Heat butter in a 10-inch skillet over moderate heat until foam subsides, then cook cucumbers, mint, salt, pepper, zest and lemon juice, tossing to coat, until just heated through, about 1 minute.
