1 tablespoon lemon juice
1/2 teaspoon sugar

1 unpeeled small cucumber
1 cup cubed melon of your choice

Steps:

  • In a small bowl, combine the oil, lemon juice, sugar and pepper. Slice cucumber, then cut into quarters. , In a serving bowl, combine cucumber and melon. Pour dressing over all; toss gently to coat.

1 large cucumber, halved lengthwise and thinly sliced crosswise
2 medium tomatoes, diced
1 small onion, thinly sliced
2 cups cubed seedless watermelon
3 tablespoons red wine vinegar
2 tablespoons olive oil
1 teaspoon sea salt
1 teaspoon white sugar
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon ground thyme
½ teaspoon ground black pepper

Steps:

  • Combine cucumber, tomatoes, onion, and watermelon in a large bowl.
  • Mix vinegar, olive oil, salt, sugar, oregano, basil, thyme, and pepper together in a separate, smaller bowl and pour over salad. Stir to coat well.
