This cucumber martini is a crisp, cool take on the classic cocktail, featuring the refreshing scent of this hydrating vegetable.

2 slices cucumber, cut 1/8″ thick, plus more for garnish
2 ounces (4 tablespoons) vodka
1/2 ounce (1 tablespoon) dry white vermouth
1/2 ounce (1 tablespoon) St Germain

Steps:

  • Add the cucumber slices to a cocktail shaker and muddle them (gently mash) to release the juice. Add the vodka, vermouth and St Germain and fill the shaker with ice. Shake for 15 seconds until cold.
  • Strain the drink into a martini glass. Garnish with cucumber slices.

This crowd-pleasing cucumber martini made with vodka is easy to prepare and is a cool and refreshing twist on the cocktail classic.

3 cucumber slices (cut thick)
2 1/2 ounces vodka (or gin)
1/2 ounce dry vermouth
1 cup ice
Garnish: 1 to 3 cucumber slices (cut thin)

Steps:

  • Gather the ingredients.
  • Put the thick cucumber slices in a cocktail shaker. Use a muddler or a wooden spoon to muddle , or crush, the cucumber slices a bit to bring out more of their flavor.
  • Pour in the vodka and the dry vermouth .
  • Swirl just a bit to combine, then add the ice.
  • Put the top on the cocktail shaker and shake vigorously for at least 30 seconds. (It's important that you shake for this length of time.) This not only mixes the ingredients but also melts some of the ice into the cocktail to soften its edges and blend the flavors.
  • Strain the mixture into a martini glass.
  • Garnish with thin slices of fresh cucumber and serve.

1/4 ounce lemon juice

  • Shake the gin, pureed cucumber, dry vermouth and lemon juice in a shaker with ice. Strain into a chilled glass. Garnish with a lemon peel and cucumber slice.

50ml sugar syrup (buy ready-made, or make your own - see tip, below)
10 thin slices cucumber , plus 4 ribbons sliced with a vegetable peeler
large bunch mint , stems removed
1 tbsp dry vermouth
150ml gin

Steps:

  • Chill two martini glasses. Put all the ingredients in a cocktail shaker or jug (except the cucumber ribbons), along with a handful of ice. Shake or mix well to combine, then strain the liquid into the glasses. Garnish with the cucumber ribbons, bunched up and threaded onto a cocktail stick.
