CUCUMBER SAKE SHOTS
Steps:
- For the Cucumber Shot Glasses: Cut 4 (2-inch) long pieces out of the cucumber. Use a melon baller to carefully scoop out flesh from 1 end, leaving a 1/2-inch bottom on the other end. Repeat with remaining cucumber pieces, reserving cucumber flesh.
- For the Sake Shots: Combine cucumber flesh with lime juice in a blender. Blend until smooth, about 15 seconds. Pour cucumber puree through a fine mesh strainer, reserving 1/2 cup of cucumber juice. Add sugar and set aside.
- Pour watermelon rum and sake into a cocktail shaker filled with ice cubes. Add reserved cucumber juice and shake vigorously. Pour into cucumber shot glasses. Serve immediately.
PLUM SAKE

- Fill pitcher with ice and add sake, plum wine, and cherry juice. Stir and pour into glasses. Garnish with a cucumber slice and maraschino cherry.
CUCUMBER-LYCHEE GAZPACHO WITH FETA CROSTINI

- For the crostini: Preheat the oven to 400 degrees F.
- Line a baking sheet with parchment paper. Set baguette slices on the baking sheet, and bake until golden, about 5 minutes. Sprinkle with a little feta cheese and paprika, bake another 5 minutes.
- For the gazpacho: Add the cucumber, lychees, almonds, mint, cilantro, yogurt, salt and pepper to a blender or a food processor and blend until smooth. Taste for seasoning and adjust as necessary. Chill before serving. Top with warm crostini and serve.
MOM'S SPICY CUCUMBER KIMCHEE
May be a little salty, but that is because it's meant to be eaten with rice. Spices can be adjusted to your personal taste. Hope you enjoy! It goes great with bulgogi.

- Combine gochujang, white sugar, 1 tablespoon sesame seeds, and 2 teaspoons sesame oil in a small bowl to make a seasoned gochujang paste.
- Whisk vinegar, soy sauce, 1 teaspoon toasted sesame oil, and instant beef stock together in a large bowl. Stir in seasoned gochujang paste. Add cucumbers; stir until coated. Sprinkle with 1 tablespoon toasted sesame seeds.
- Let cucumbers marinate in the refrigerator before serving, at least 1 hour.
