1 lb of cucumbers (about 2 good sized cucumbers), ends trimmed, but peel still on, coarsely chopped
1/2 cup lime juice from fresh limes (from about 1 pound of limes, or 5 to 10 limes, depending on how juicy they are)
1 1/4 cup packed (spearmint) mint leaves (about a large handful), woody stems removed
1/2 cup sugar
Approximately 1 1/4 cup of water

Steps:

  • Add ice: Fill a large pitcher halfway with ice cubes. Add the juice. Serve with sprigs of mint and slices of lime.

Light and refreshing with a slight bite from fresh ginger, this cooling cucumber drink is perfect on days when the warmth of the sun bakes everything in its path. A simple syrup of bruised mint and sugar adds sweetness. Agua fresca, a chilled nonalcoholic drink popular in Mexico and Central America, is most often made by blending fruit or soaked grains or by steeping plant blossoms in water. The mix is then strained, sweetened and served chilled. Enjoy this cucumber version as is, or add a splash of gin to turn it into a light aperitif or a delightful afternoon cocktail.

1 1/2 packed cups fresh mint leaves, plus sprigs for garnish
1/2 cup granulated sugar
1/4 teaspoon kosher salt (Diamond Crystal)
1 cup hot water
2 English cucumbers, ends trimmed, cut into 1-inch pieces
1 (3-inch) piece fresh ginger (about 2 ounces), scrubbed and chopped
1 lime, plus more as needed
Ice cubes, for serving

Steps:

  • In a medium bowl, combine the mint leaves, sugar and salt, and crush them all together using a fork or the back of a wooden spoon just until the mint is bruised. Pour in the hot water, and stir until the sugar and salt dissolve. Allow the mixture to steep for 5 minutes while you prepare the cucumbers.
  • Combine the cucumbers and ginger in a blender. Zest the lime right over the blender, then halve it and squeeze in its juice. Pour in 1 cup room-temperature water and purée on high until smooth. Pour the purée through a fine-mesh strainer, pressing lightly on the solids with a spatula to extract the liquid. Discard the solids and pour the agua fresca into a medium pitcher.
  • Pour the mint syrup through the same strainer into a container, pressing on the leaves to extract the liquid. Add ¼ cup strained syrup to the agua fresca. Taste and add more syrup or more lime juice to taste. Cover any leftover syrup and refrigerate for another use.
  • Fill glasses with ice, pour in the agua fresca, garnish with mint and serve immediately.

Cucumber Lime agua fresca is among some of the popular drinks for those hot summer days. An easy to prepare a drink that takes the term "agua fresca" to the next level, it really tastes like fresh times 2! Cucumber, lime juice, sugar, and mint to garnish.

1 large English cucumber or 2 garden cucumbers (about 3 cups
when chopped)
½ cup of lime juice (about 4-6 limes (depending on the size)
or juiciness of the limes)
6 cups of water
2/3 cups of sugar
3 cups of ice cubes
3 small sprigs of mint
Some lime & cucumber slices to garnish the drink.

Steps:

  • Peel the cucumbers and remove the seeds using a spoon. Chop cucumbers into chunks and place into the blender. Gather all the ingredients to prepare the agua fresca.
  • Add the 2/3 cups of sugar, ½ cup of lime juice, and three cups of the water into the blender. Process for a couple of minutes, until everything has been processed into a smooth mixture.
  • Now, using a strainer, pour the mixture into a large-sized pitcher. In this case, I'm using my Rubbermaid pitcher. Press down on the strainer with the back of a spoon to extract as much liquid as possible. Afterwards, discard those residues.
  • Add the remaining 3 cups of water and 2 cups of ice cubes, then stir and refrigerate for an hour. To serve, place some slices of lime or cucumber in the glasses and garnish with a few mint leaves. Enjoy!

¼ cup granular sucralose sweetener (such as Splenda®), or to taste

Steps:

  • Blend 2 cups water, cucumbers, lime juice, and 2 tablespoons sweetener together in a blender until smooth. Pour into pitcher; add remaining water. Stir in additional sweetener to taste.
