SMOKED SALMON, CUCUMBER AND RADISH BITES



Smoked Salmon, Cucumber and Radish Bites image

Mustardy cream cheese dolloped on a radish slice, placed on cucumber rounds and topped with smoked salmon makes for an elegant bite-size hors d'oeuvre.

3 ounces cream cheese, at room temperature
2 tablespoons heavy cream
2 tablespoons grainy mustard
2 ounces smoked salmon, diced
2 tablespoons minced red onion
1 English cucumber
6 large radishes, thinly sliced
Dill sprigs, for garnish

Steps:

  • Beat the cream cheese, heavy cream and mustard in a medium bowl with an electric mixer until fluffy. Combine the salmon and onions in a small bowl.
  • Cut the cucumber crosswise into 1/3-inch rounds. Scoop 1/2 teaspoon cream cheese mixture onto each radish slice and place it on a piece of cucumber, cream cheese-side down, pressing lightly. Top with a small sprig of dill, followed by 1/2 teaspoon salmon mixture.

2 ounces reduced-fat cream cheese, at room temperature (Neufchatel)
2 tablespoons light mayonnaise
1 tablespoon drained prepared horseradish
1 (12 ounce) peeled cucumbers, preferably seedless
18 sprigs fresh parsley or 18 sprigs fresh dill

Steps:

  • Combine the cream cheese, mayonnaise, and horseradish; chill at least 30 minutes.
  • Score the cucumber lengthwise with the tines of a fork.
  • Cut the cucumber crosswise into 1/2-inch slices, making 18.
  • Using a melon baller or 1/2 teaspoon measuring spoon, scoop out a small hollow on the straight side.
  • Do not cut all the way through.
  • Transfer the cream cheese mixture to a pastry bag fitted with a fluted tip. Pipe the cheese mixture into the cucumber cups.
  • (Use a small spoon if a pastry bag is not available.)
  • Garnish the tops of the cups with parsley or dill sprigs.
