Bob Marley's Reggae: Jerk Marinated Chicken Breast Skewers, Chargrilled and Served with Creamy Cucumber Dipping Sauce and Yucca Fries image

1 onion, finely chopped
1/2 cup finely chopped scallion
2 teaspoons fresh thyme leaves
1 teaspoon salt
2 teaspoons sugar
1 teaspoon ground Jamaican pimento (allspice)
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1 hot pepper, finely ground (or 2 Scotch bonnet peppers)
1 teaspoon ground black pepper
3 tablespoons soy sauce
1 tablespoon cooking oil
1 tablespoon cider or white vinegar
2 pounds chicken breast, dice 1/2-inch thick
Green tai leaves
2 pounds fresh Yucca, peeled, cut into fries
Cucumber Dipping Sauce, recipe follows
Fresh pineapple wedges
25 ounces cucumber
7 ounces sour cream
7 ounces mayonnaise
1-ounce cider vinegar
1/2-ounce salt
Pinch cayenne pepper
1/2-ounce Dijon mustard
1/2-ounce chopped garlic

Steps:

  • For the marinade: mix together onion, scallion, thyme, salt, sugar, allspice, nutmeg, cinnamon, hot pepper, black pepper, soy sauce, oil and vinegar. These ingredients can also be combined in a food processor. Preheat the fryer. Skewer 2 1/2 ounces of chicken onto each skewer. Place the skewers in a shallow baking dish and cover with the marinade. Marinate in the refrigerator overnight. Place the skewers onto a hot grill and grill until done, about 2 to 3 minutes per side. Place the Yucca fries in the fryer and fry the fries until golden brown. Remove and drain on paper towels. Season with salt. Place 3 of the skewers on the left side of the plate. Place green tai leaf on the other end of the plate and top with a wedge of fresh pineapple. Place 6 ounces of cooked yucca fries in the middle of the plate. Place 3 ounces of cucumber sauce in a souffle cup next to the skewers and serve.
  • Peel and seed cucumbers and roughly chop. Add sour cream and mayonnaise. Add rest of ingredients and puree in a blender.

1/2 cup rice vinegar
2 tablespoons superfine sugar
1/4 cucumber, cut in half lengthways, de-seeded and finely sliced
1 small carrot, finely chopped
5 tablespoons sweet chili sauce

Steps:

  • Put the rice vinegar and sugar into a saucepan and heat gently until the sugar has dissolved. Boil for 2 minutes, until syrupy. Allow to cool.
  • Stir the finely cut cucumber and carrot into the vinegar with 2 tablespoons of sweet chilli dipping sauce.

1/4 cup sour cream
2 tablespoons fresh lemon juice
1 garlic clove, minced
1 teaspoon coarse salt
8 ounces English (hothouse) cucumber (about 3/4 cucumber), peeled, grated, and pressed between paper towels

  • Stir together yogurt, sour cream, lemon juice, garlic, salt, and cucumber. Sauce can be refrigerated, covered, up to 1 day.

2/3 c olive oil
2 Tbsp fresh lemon juice
2 Tbsp chopped fresh garlic
2 tsp dried oregano
2 tsp salt
1/2 tsp coarse ground pepper
1/2 tsp crushed red pepper
3 lb frozen chicken wing drummettes thawed (48 oz)
CUCUMBER DIPPING SAUCE
1 c yogurt, plain
1 c sour cream
1 small cucumber
1 Tbsp lemon juice
1 Tbsp dill weed, dried
1/2 tsp salt
1/4 tsp fresh ground black pepper, course

Steps:

  • 1. Combine all marinade ingredients, then pour over chicken in large zip lock bag. Coat chicken well with mixture. Refrigerate, turning occasionally for 3 hours or overnight.
  • 2. Heat oven to 400 degrees. Remove chicken from marinade and discard marinade. Arrange chicken on aluminum foil-lined 15x10x1 pan. Bake for 45 - 50 minutes, turning once.
  • 3. Cucumber Sauce needs to be combined and refrigerated for at least 2 hours but is best if made a day ahead. Peel, seed, and shred cucumber then combine all ingredients in small bowl.

TZATZIKI CUCUMBER DIPPING SAUCE

4 cups plain yogurt, regular
3 large cucumbers, peeled and seeded
salt
3 garlic cloves (or more to taste)
1 tablespoon fresh lemon juice
1 tablespoon olive oil
fresh ground pepper (optional)
1/4 cup freshly chopped mint leaf (or to taste) (optional)

Steps:

  • Line a sieve with a double thickness of dampened cheesecloth.
  • Spoon in yogurt and set the sieve over a bowl.
  • Refrigerate for two to three hours or until yogurt is about half its volume, nicely thick and creamy.
  • Shred or cut cucumber into julienne strips.
  • Place in a colander in sink or over a bowl, sprinkle generously with salt, mix well and let drain for at least 30 minutes to an hour.
  • Rinse and gently pat dry.
  • In a mortor and pestal muddle the garlic into a bit salt.
  • Add to the thickened yogurt, cucumber, lemon juice, olive oil, and if desired, the pepper and mint.
  • Mix well.
  • Serve or refrigerate for a day or two so flavors mingle.
  • Stir again before serving and sprinkle with additional minced mint leaves if desired.

1 small cucumber, peeled and grated

Cucumber Blossom Fritter with Eggplant and Tahini Dipping Sauce image

4 tablespoons all-purpose flour, plus 2 tablespoons for coating
2 eggs, separated
6 ounces beer
Salt and Freshly ground black pepper, to taste, to taste
18 cucumber blossoms
Olive oil, for frying
3 tablespoons olive oil
1 garlic clove, peeled and crushed
1 pound eggplant, peeled and cubed
1 tablespoon tahini paste
1 lemon, juiced
1 teaspoon Madras curry powder
1/2 cup cucumber juice
Salt and freshly ground black pepper, to taste

Steps:

  • In a mixing bowl combine the four tablespoons of flour with the two egg yolks and the beer whisking them into a smooth batter; season with salt and pepper. Whisk the egg whites in a mixing bowl to firm peaks, then fold into the beer batter. Dust each cucumber blossom with flour, then dip into the batter and deep-fry until golden brown and crisp.
  • Serve the dipping sauce at room temperature with freshly fried cucumber blossom.
  • In non-stick pan over low heat, pour one tablespoon of olive oil. Add the crushed garlic, and when the garlic is lightly browned, add the diced eggplant and cover. Toss the eggplant gently, cooking all sides. When the eggplant is cooked through, place them into the food processor and puree with tahini paste, lemon juice, curry powder, cucumber juice and the remaining olive oil. Adjust the seasoning with salt and pepper.;
