¼ cup seasoned rice vinegar
1 teaspoon white sugar
½ teaspoon vegetable oil
¼ teaspoon grated peeled ginger
¼ teaspoon salt
1 cup sliced carrot
2 tablespoons sliced green onion
2 tablespoons minced red bell pepper
½ cucumber - halved lengthwise, seeded, and sliced

Steps:

  • Whisk rice vinegar, sugar, vegetable oil, ginger, and salt together in a bowl until sugar and salt are dissolved into a smooth dressing.
  • Toss carrot, green onion, bell pepper, and cucumber in the dressing to evenly coat.
  • Cover bowl with plastic wrap and refrigerate until chilled, about 30 minutes.

This Cucumber raita is refreshing, cooling and comforting to the palate. You can make this just under 10 minutes with only a few ingredients. Serve it as a side in any meal, with biryani or pulao.

1 cup cucumber (chopped )
1½ cup yogurt ((thick, more if needed))
¼ teaspoon salt (as needed)
½ teaspoon roasted ground cumin ((jeera powder, refer notes))
¼ teaspoon ground black pepper (( or cayenne pepper, adjust to taste))
2 tablespoons coriander leaves ((cilantro finely chopped))
½ teaspoon chaat masala ((optional, for garnishing))
4 to 5 mint leaves ((optional, finely chopped))
1 green chili pepper ((seeded and chopped))

Steps:

  • Rinse cucumber and peel it. Chop to tiny bite size pieces (about ¼ to ½ inch). If you prefer you may even grate it. Grated cucumbers let out moisture so make sure you use only greek yogurt if you want to grate them. Otherwise cucumber raita becomes runny.
  • Also fine chop coriander and mint leaves (optional).
  • Deseed the green chilli and chop. (optional)
  • Whisk chilled yogurt in a large mixing bowl.
  • Add chopped cucumber, green chilies, coriander leaves, mint leaves and salt. Mix all of them.
  • Taste test and add more salt if needed. Drizzle cumin powder, ground black pepper & chaat masala (optional).
  • Serve cucumber raita as a side in an Indian meal. It is usually eaten with Vegetable biryani or chicken biryani.
  • Cucumber raita is best served fresh but can be chilled for a few hours.

2 small or 1 large cucumber, peeled and seeded
2 carrots, grated
1 small or 1/2 large shallot, chopped
2 tablespoons rice wine vinegar
2 teaspoons Sriracha
1 teaspoon soy sauce
Kosher salt and freshly ground black pepper

Steps:

  • Halve and thinly slice the cucumber. Then place into a medium bowl with the grated carrots and shallots. In a small bowl, mix together the vinegar, Sriracha and soy sauce. Toss with the vegetables and season with salt and pepper only if needed. Serve.

Number Of Ingredients 7

1 large cucumber (about 1/2 pound), peeled if waxy, seeds removed if you can't get a seedless cucumber (like a Japanese, Persian, or hothouse)
Salt
1 cup plain Greek style yogurt
1/8 teaspoon cayenne (more to taste)
2 tablespoons chopped cilantro
1/2 teaspoon garam masala (more to taste)
1 small serrano or Thai chile, minced (optional)

Steps:

  • Cut the cucumber into very small dice or grate on the large holes of a grater. Sprinkle with a generous amount of salt, toss and let sit in a colander in the sink for 15 minutes. Rinse briefly and squeeze dry in a kitchen towel. Transfer to a bowl.
  • Beat the yogurt with a fork or a whisk and add the cayenne and garam masala. Toss with the cucumbers. Add the cilantro and chile and toss again. Taste and adjust salt. Chill until ready to serve.

This is super easy, very tasty and travels well so it's great for picnics, lunch bags, whatever. It tastes wonderful at room temperature. From the Chicago Tribune, originally attributed to Ron Bilaro, a personal chef in Chicago. The original recipe called for 2 T. of the sesame oil but I knocked that down to 1 T. as we feel a little goes a long way with sesame oil. Add more if you wish.

1 tablespoon sesame oil
2 tablespoons sesame seeds
1/2 teaspoon salt
fresh ground pepper, to taste
1 cup shredded carrot
1 English cucumber, peeled, seeded and diced
1/2 small red onion, cut in half and thinly sliced

Steps:

  • Whisk together vinegar, sesame oil, sesame seeds, salt and pepper in a small bowl.

This is a recipe I am posting for ZWT - India, untried by me at this time. I found this recipe on "Greeting India". Sounds like a wonderful side dish of cucumber salad. Time doesn't include the time to drain yogurt so allow 1/2 hour in addition to time posted.

1 large cucumber
2 cups plain yogurt
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon black pepper
salt
1/2 teaspoon lime juice
mint (to garnish)

Steps:

  • 1. Drain excess liquid from yoghurt by placing it in a mesh strainer or in cheesecloth for about half an hour.
  • 2. Roughly chop the cucumber with its seeds and skin. Season with salt, black pepper, and lime juice. Set aside.
  • 3. Transfer the drained yoghurt to a large bowl. Add cucumber mixture, cumin, and paprika. Mix well.
  • 4. Allow the raita to chill for 10-15 minutes, then garnish with mint.
  • 5. Serve as a cooling side dish with curried vegetables and rice.
