CUCUMBER, POMEGRANATE AND GOAT CHEESE APPETIZERS
These are adapted from "TANGY TART HOT & SWEET", by Top Chef's Padma Lakshmi. There, they were called an open-faced tea sandwich, but I'd consider them more like "toasts". They have a nice crunch, and the green, red, and white are great for the holidays. According to my produce book, pomegranates are in season November & December, although I've seen nice pomegranates (at my local Trader Joe's) in February. I've found an easy, mess-free way to seed a pomegranate, which I'll include at the end of the recipe below. I'm not a big fan of the flavor of goat cheese, and prefer to cut it by using equal portions of goat and cream cheese. But these also taste great using just cream cheese.

- Combine optional olive oil and softened goat or cream cheese. Spread evenly onto toast slices. You may mix the dill weed in at this point, but I think it looks prettier when sprinkled on top.
- Sprinkle toasts with pomegranate seeds and gently press them into the cheese (I prefer to add them after the cucumber, but then you have to be careful those carpet-staining seeds don't escape). Arrange approximately 4-6 slices of cucumber (depending on the size of your bread) on each slice of toast. Sprinkle with dill weed.
- Carefully cut each slice in half on the diagonal to make triangles. Serve open-faced on a platter.
- To seed a pomegranate (rinsed & dried): Using a small, sharp knife, slice the "crown" off the top of the pomegranate. Make 4-8 shallow cuts from north to south through the rind. Immerse the whole fruit in a large bowl of water, and gently twist to break the sections apart. Using your fingers, pull the red seeds away from the white pith. Discard everything that floats (most of the pith & peel float, while the seeds sink) and drain into a colander. You may need to remove a few pieces of pith, but there shouldn't be too much.

Fresh and great when using pre-chilled produce, this smart little appetizer is wonderful as a snack or warm up to your back yard summer dinner party. I came up with this recipe when I went on the Vegetable Broth Fast and everyone like it so much I thought I would share the recipe with you. It is pretty much guacamole on a slice of cucumber. Except while on the fast I omitted the cilantro, onion and seasonings. Still pretty good. The dish is easy and quick to make. The perfect recipe for unexpected guests or when you find yourself in a pinch for time.

- * Peel and dice all the onion.
- * Dice the tomato.
- * Chop the cilantro.
- * Peel and pit each avocado.
- In a medium sized mixing bowl combine the avocados, onion, tomato, and cilantro smashing it all together with a fork. With the lime half squeeze the lime juice into the mixture. Add the salt, pepper and chili powder and continue mashing till a creamy/lumpy texture is achieved. Set a side.
- With the other lime half rub the cut side on a serving platter so the plate has a thin layer of lime juice on top of it.
- On a cutting board thickly slice a cucumber so each slice is about a quarter of an inch. Lay each slice flat on the platter. Once all the slices are in place spoon a dollop of the avocado mixture onto each slice of cucumber. Garnish with cilantro leaves if you like. Enjoy!

- About twenty minutes before you want to start working, set the cream cheese out on the counter to soften. (You can skip this step, if necessary, but it will mean a bit more effort in the next step, mixing the cream cheese with the wasabi.)
- When the cream cheese is softened, combine the wasabi powder and water to make a smooth paste. Mix the cream cheese in with the wasabi paste until it is combined.
- Wash the cucumbers well and then peel them lengthwise in alternating strips.
- Slice the cucumbers into disks about an eighth to a quarter inch thick.
- Top each cucumber slice with a fold of smoked salmon.
- Put a ½ tsp. of cream cheese atop the salmon.
- Secure each appetizer with a toothpick.
- Serve on a tray.
- Note: Takes a half hour of active labor plus about twenty minutes to soften the cream cheese.

- 1. Peel the skin off the cucumbers. Cut into 2 inch thick slices. Using a small melon baller, scoop out most of the inside. You want to leave the walls and a thick portion of the bottom intact.
