Steps:
- Preheat the oven to 425 degrees F.
- Place pork loin on a rack in a roasting pan.
- Fill bottom of pan with about 1 inch of beer.
- Season the pork loin with salt and pepper.
- In a medium bowl, combine the orange juice, honey, soy sauce, sherry, hoisin sauce, mashed black beans, five spice powder, and garlic to form a thin paste.
- Rub the paste into the pork loin; use all the mixture that you can, the rest can be used to baste every 20 minutes.
- Roast the pork for 15 minutes, then reduce the oven temperature to 325 degrees F; cook for 45 to 60 minutes more, basting with the pan juices and/or leftover spice paste every 20 minutes.
- The pork loin should register 165 degrees on a meat thermometer, and the juices run clear.
- Remove from the oven and let rest for 15 minutes.
- Transfer to a warmed serving platter and surround with orange segments and watercress sprigs.
- Serve immediately.

MARINATED PORK LOIN - CUBAN STYLE
The sour orange and garlic imparts a wonderful flavor to this pork roast. Roast for approximately 2 hours or until done. **Cooking time does not reflect marinating the pork loin overnight.

- 1. Combine all marinade ingredients in a blender and blend until thoroughly mixed. Reserve some of the marinade for basting the pork loin during the roasting process.
- 2. Cut small slits in the pork loin to allow the marinade to penetrate the meat and then place it in a gallon bag.
- 3. Pour remaining marinade over the pork and work it around to ensure entire roast is covered with the marinade. For best results, marinate the pork overnight.
- 4. Preheat the oven to 350 degrees F. Remove the pork from the marinade and place it in a roasting pan. Roast for 2 - 2 1/2 hours, basting frequently with reserved basting marinade.
- 5. Tent the roast and allow it to stand for 10 minutes before serving.
GRILLED PORK LOIN SKEWERS - CUBAN STYLE
This delicious grilled pork calls for "sour orange" juice (Seville oranges). If sour orange is not readily available, you can make your own by mixing 3 parts regular orange juice and 1 part lime juice. *Marinating time is not included in grilling time

- Combine garlic, 3 tbsp. cilantro, parsley, cumin, oregano, salt, pepper and sour orange juice. and regular orange juice. Mix well.
- Add the pork cubes and toss to coat. Allow pork to marinate at least 4 hours - toss the pork several times.
- Drain and thread the pork cubs onto skewers. Brush with oil.
- Grill the pork until browned and cooked through - turning several times while grilling. Grill onion slices or serve raw - over the pork. Garnish the pork with lime wedges and the remaining chopped cilantro. Squeeze lime over the pork when serving.
