1 cup plus 1/4 cup orange juice, divided
1/2 cup plus 1/4 cup fresh lime juice, divided
1/4 cup white vinegar
4 (1-inch-thick) bone-in pork chops
1 tablespoon black pepper
2 tablespoons kosher salt
1 1/2 teaspoons ground cumin
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon dried oregano
3 tablespoons canola oil
1/4 cup chopped red onion
2 cloves garlic, chopped
1/4 cup white wine
1 cup watercress, for garnish
1 Roma tomato, chopped, for garnish
1/2 avocado, sliced, for garnish

Steps:

  • In a gallon-sized resealable plastic bag, combine 1 cup orange juice, 1/2 cup lime juice, and vinegar. Add pork and let it sit and marinate for about 1 hour in refrigerator.
  • In a small mixing bowl, combine all dried spices. Pat the pork chops dry with a paper towel and rub with the dry spice mixture.
  • Heat oil in a large saute pan over high heat. Place the pork chops in the pan and sear on 1 side until brown. Flip over and turn the heat down to medium-low. Add onion and saute for 2 minutes. Then add the garlic and continue to cook until garlic begins to brown. Pour in the remaining 1/4 cup orange juice, 1/4 cup lime juice, and white wine. Simmer until the liquid is slightly reduced and begins to thicken. The chops should be cooked through.
  • Remove the chops from pan and put on a warm plate. Continue to reduce juices in pan by half. Pour over the chops and serve immediately.
  • Garnish with watercress, tomatoes and avocado.

3/4 cup fresh orange juice
1/2 cup fresh lime juice
1/3 cup coarsely chopped fresh oregano leaves
6 cloves garlic, coarsely chopped
1 teaspoon ground cumin
1/4 cup canola oil
4 (8-ounce) pork chops, butterflied and thinly pounded
Salt and freshly ground black pepper
8 (1/4-inch) thick slices Swiss cheese
8 (1/4-inch) thick slices boiled ham
2 sour dill pickles, thinly sliced (need about 16 slices)
2 tablespoons chopped cilantro leaves
1/4 cup olive oil

Steps:

  • Heat the grill to high.
  • Whisk together 1/2 cup orange juice, 1/4 cup lime juice, 3 tablespoons oregano, the garlic, cumin, and canola oil in a large baking dish. Add the pork and turn to coat. Cover and let marinate for at least 15 minutes and up to 2 hours in the refrigerator.
  • Remove the pork from the marinade and pat dry. Place the chops on a flat surface, cut-side up and season with salt and pepper. Place 1 slice of cheese, 2 slices of ham, a few slices of pickle and another slice of cheese on 1 half of the chop. Fold over brush the top with oil and season with salt and pepper. Repeat with remaining ingredients.
  • Place the chops on the grill, oil side down and grill until golden brown, 3 to 4 minutes. Flip the chops over and continue grilling until the bottom is golden brown and the cheese has melted, 2 to 3 minutes longer.
  • Whisk the remaining orange and lime juices, oregano, and the cilantro with the olive oil and salt and pepper, to taste. Spoon over the chops and serve.

2 naval oranges, zested and juiced
2 limes, zested and juiced
5 cloves garlic
½ cup loosely packed cilantro leaves
½ cup extra-virgin olive oil
kosher salt and pepper to taste
2 (1 1/2 inches thick) boneless pork chops
1 cup shredded Swiss cheese
2 (3 ounce) ham steaks (1/4 inch thick)
2 dill pickle slices

Steps:

  • Place the orange juice, orange zest, lime juice, lime zest, garlic, cilantro, and olive oil in to a blender. Season to taste with kosher salt and pepper, then puree until smooth. Pour half of the vinaigrette into a resealable plastic bag. Refrigerate the remaining for use later as a sauce.
  • Cut each pork chop from one side through the middle horizontally to within one-half inch of the other side. Open the two sides and spread them out like an open book. Pound with a meat mallet to 1/4 inch thick, then place the pork chops into the bag with the marinade. Squeeze out any excess air, and refrigerate 4 to 6 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate. Remove the pork chops from the marinade, and shake off excess. Discard the remaining marinade.
  • Open the pork chops onto your work surface. Sprinkle 1/4 cup of the Swiss cheese on the bottom half of each pork chop. Cover the cheese with the ham steaks, then fan the sliced pickles on top of the ham steaks. Sprinkle the remaining Swiss cheese over the pickles. Fold the top half of the pork chop over the filling, and secure with several toothpicks.
  • Cook on the preheated grill until the pork is no longer pink in the center and the filling is hot, about 5 minutes per side. An instant-read thermometer inserted into the center of the filling should read 145 degrees F (63 degrees C). Serve with the reserved citrus vinaigrette drizzled overtop.

1 tablespoon lime juice
1 teaspoon adobo seasoning
4 boneless pork loin chops (4 ounces each)
4 slices deli ham (about 3 ounces)
4 slices Swiss cheese

Optional: Mayonnaise, additional Dijon mustard and thinly sliced dill pickles

Steps:

  • Mix mustard, lime juice and adobo seasoning. Lightly pound pork chops with a meat mallet to 1/2-in. thickness; spread both sides with mustard mixture. Refrigerate, covered, 3-4 hours., Grill pork, covered, over medium heat 3 minutes. Turn pork and top with ham; grill 2 minutes longer. 1 tablespoon cumin seed
1 tablespoon cracked black pepper
1/2 teaspoon salt

This is the perfect recipe for those who love the flavors of a classic Cuban pork roast but are cooking in small quantities. Typical of Cuban fare, these are full of tropical flavors but not spicy. The garlic and lime pair beautifully in a fragrant marinade. Though you can marinade as briefly as an hour, for best results let the pork soak up to 6-8 hours. 3 cloves garlic, chopped
1 teaspoon ground cumin
1 teaspoon dried oregano
5 tablespoons fresh lime juice

  • Heat olive oil in frying pan over medium heat.
  • Add garlic, cumin, and oregano, cook 1 minute.
  • Quickly add lime juice, and bring to boil until slightly thickened.

1/3 cup fresh lime juice

  • Brown lightly salted pork chops in oil at medium heat for 2 or 3 minutes.
  • Turn chops, adding garlic, lime juice and water to the skillet.

1 c orange juice
1/2 c pineapple juice
1/4 c white vinegar
juice from 2 limes
RUB
1 1/2 tsp ground cumin
1 Tbsp garlic powder
1 Tbsp dried minced onion
1 Tbsp black pepper
1 1/2 Tbsp salt
1 1/2 Tbsp oregano
IN FRY PAIN
6 large 1 inch thick pork chops with bones
3 Tbsp oil for frying
1/4 c chopped red onion
2 Tbsp minced garlic
1/2 c white wine
1/2 c orange juice
juice from 1 more lime

Steps:

  • 1. mix marinade, pour into ziplock bag with pork chops and put in fridge for 1/2 to 2 hours
  • 2. remove pork chops from bag, disgard juice and bag. Pat chops dry with paper towels
  • 3. heat oil in fry pan
  • 4. note---I had to use 2, side-by-side fry pans to make 6 large chops
  • 5. rub both sides of each chop with the pre-mixed rub.
  • 6. in each hot fry pan place 3 chops. fry for a few minutes until 1st side is seared.
  • 7. flip chops, add onions all around the edges and middle, wherever you can fit them
  • 8. lower heat and cook for 2 or 3 more minutes, add garlic and cook until garlic starts to become brown.
  • 9. note--- the trick here is to sear both sides of these chops nicely before deglazing.
  • 10. add wine, orange juice and lime juice, lower heat to simmer.
  • 11. slowly simmer for about another 5 to 7 minutes on each side. remove chops and plate.
  • 12. return pan to stove with gravy and onions. return heat to boil, then lower again and reduce by about half. spoon over pork chops.

Steps:

  • Heat 2 tablespoons olive oil in a large nonstick skillet over medium-high heat.   • Heat oil in a large saute pan over high heat.
  • Place the pork chops in the pan and sear on 1 side until brown. Flip over sear until brown.
  • Remove chops and place in crock pot (slow cooker).
  • Add onion and garlic to pan and saute for 1-2 minutes, add onion/garlic to crock pot with the pork. Combine orange juice, lime juice, vinegar, and chicken broth and pour over the pork in the crock pot.
  • Cover and cook for 45 min - 1 hour on high heat or 2 hours on low heat. Check for doneness depending on the size of the chops. They may need more time in the crock pot if they are bigger pork chops. Don't keep them in the crock pot too long or they will dry out.
  • Pour remaining liquid over the chops when ready to eat. Garnish with the slow-cooked onions and tomatoes and/or avocado. Enjoy!
