CUBAN CRUSHED POTATOES
A great dish for every occasion. Preparing a dish of Cuban crushed potatoes is a wise choice if you are either vegetarian yourself, or think you may have some vegetarians among your dinner guests. They're fairly simple to prepare.

Steps:
- In a medium saucepan, cover potatoes with water. Salt lightly and bring to a simmer. Cook until just tender, 10 - 15 minutes. Drain. Preheat the broiler.
- Spray a baking sheet lightly with non-stick cooking spray. Place 1 potato on a clean kitchen towel and fold towel over the potato. Press down on the potato firmly with the palm of your hand, crushing the potato lightly. Place the potato on the prepared baking sheet. Repeat with the remaining potatoes.
- Brush the tops of the potatoes with oil. Broil until the tops are brown and crusty, 5-8 minutes. Sprinkle with onions, parsley, salt and pepper before serving.

These potatoes are so easy to make, a really great addition to any meal. I think it brings the meal up a notch...just because they are so delicious and yet different. They are perfect for an appetizer as well. The regular recipe just calls for simple ingredients...potatoes,oil,salt,pepper, and a sprinkle of parsley. I chose to bring in more flavor by adding some garlic and chives. I also sprinkled some Parmesan and a bit of pepper jack cheese. I noticed that the melted cheese holds the crushed potatoes together and is easier to lift up without having pieces of potatoes fall all over. You can add some cilantro, parsley, thyme, oregano...or any other herbs you have and like. If you want to make them spicy, toss in some pepper flakes. But, I think you will enjoy these. "awesome flavor and easy. I cooked my potatoes in the microwave then finished under the broiler. I assumed you spread the oil/garlic/herb mixture over the potatoes after you cooked and squashed them and then covered with cheese. - Wash potatoes well and place in salted water.Bring to boil and cook till fork tender (15-20 minutes).
- Mix oil with crushed garlic clove....and any herbs you like. Set aside.Line a baking sheet with parchment. Place the potatoes on the parchment. Using a potato crusher, crush the potatoes carefully. You may also use a paper towel and press the potatoes with your palm. Just be gentle.Sprinkle some salt and pepper. Drizzle the garlic oil herb mixtrure over the potatoes. Add some Parmesan/Pepper Jack cheese and chives.Broil for 7-10 minutes or until nice and crispy.Sprinkle with additional chives. Sometimes, I bake the potatoes with the Parmesan cheese for 10-15 minutes, add the Pepper Jack cheese at the last moment, and then broil until golden brown.
