⅓ cup butter, softened
1 cup white sugar
1 cup molasses
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
½ teaspoon ground ginger
½ teaspoon ground cloves
1 cup milk
4 cups semisweet chocolate chips
1 cup raisins

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease cookie sheets.
  • In a medium bowl, cream together the butter and sugar until smooth. Stir in the molasses. Combine the flour, baking soda, salt, cinnamon and ginger; stir into the molasses mixture alternately with the milk. Finally, mix in the chocolate chips and raisins. Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 10 to 15 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

This was my Grandmother's recipe. It is a molasses cookie with coffee in it.

Number Of Ingredients 16

1 cup shortening
2 eggs
2 teaspoons baking soda
1 cup brewed coffee
1 cup molasses
1 tablespoon distilled white vinegar
½ cup unsweetened cocoa powder
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon ground nutmeg
½ teaspoon ground cloves
4 ½ cups all-purpose flour
2 cups confectioners' sugar
¼ cup unsweetened cocoa powder
5 tablespoons water as needed
2 cups white sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Dissolve the baking soda in the coffee.
  • Cream the shortening with the white sugar. Beat in the eggs, coffee mixture, molasses, vinegar, 1/2 cup of the cocoa powder, spices, and flour. Dough should be thick and slightly sticky. Drop rounded spoonfuls of dough onto a greased cookie sheet.
  • Bake for 10 to 12 minutes. Let cookies cool, then glaze.
  • To Make Glaze: Combine the confectioner's sugar, 1/4 cup cocoa, and enough water to achieve a desired spreading consistency. Beat until smooth.

Cookies:
1 cup sugar
1 cup shortening
1 egg
1 cup molasses
2 teaspoons baking soda dissolved in 1 cup hot water
4 cups flour
1 teaspoon cinnamon
1 teaspoon ginger
1 teaspoon salt
Butter Cream Frosting:
1/2 cup butter
1/8 teaspoon salt
1 pound powdered sugar
1 teaspoon vanilla
2 tablespoons milk
Food coloring

Steps:

  • Preheat oven to 375 degrees. Mix together the egg, molasses, shortening, sugar, and baking soda dissolved in hot water. In a seperate bowl mix the flour, cinnamon, ginger, and salt. Add flour mixture to wet ingredients and stir until thouroughly mixed. Drop dough by the spoonful onto an ungreased cookie sheet and bake until the cookies puff up and are done in the middle (test with a toothpick as you would for cake). When done, transfer cookies to baking rack to cool a little before frosting. Frosting: Melt the butter and mix everything but the milk and food coloring together. Add just enough milk to make the right consistency of frosting, then stir in food coloring to the desired color.

This is a Family Heirloom recipe, that my Norwegian Grandma was making at least as early as the 1920s, when my Mom was just a little girl. She probably got it from her Mom. It is a cake-like cookie, that seems to get better as it sits.

1 cup(s) shortening
1 cup(s) sugar
2 eggs
1 cup(s) molasses
5 cup(s) flour, maybe a little less
2 teaspoon(s) cinnamon
1 teaspoon(s) ginger

2 teaspoon(s) baking soda
1/2 teaspoon(s) salt

1 cup(s) strong, hot coffee

Steps:

  • Cream shortening and sugar until fluffy.
  • Mix in eggs.
  • Add spices, and 4 to 5 cups of flour, to make a very thick dough.
  • Mix in hot coffee and vinegar.
  • Drop by spoonfuls onto cookie sheet (I line with parchment).
  • Bake at 375 degrees for 10-12 minutes,

1 c melted shortening
1 tsp cinnamon
1 tsp ginger
4 c flour
ICING
1 1/2 c confectioners' sugar
1-2 Tbsp milk

  • 1. mix ingredients in order given,mix well.Drop by Tablespoons onto greased cookie sheets.Bake at 375* for 12-15 min
  • 2. mix confectioner' sugar and enough milk to reach desired consistancy.Ice cookies while still warm

1 cup vegetable oil
1 cup brown sugar
2 eggs, beaten
1 cup molasses
4 cups all-purpose flour
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
2 tsp baking soda
1 cup boiling water

Steps:

  • Preheat oven to 375° F. Using a handheld electric mixer, "cream" oil and brown sugar together. Add eggs and molasses and beat until well combined. Sift flour, salt, and spices in a medium mixing bowl. In another bowl, combine the baking soda and boiling water, stirring until baking soda is dissolved. Fold dry ingredients into batter, alternating with baking soda mixture. Drop batter by spoonfuls onto a lightly greased on parchment-paper-lined cookie sheet. (Greased sheets yielded a crisper cookie edge.) Bake for 8 to 10 minutes, until puffy and firm to touch. Transfer to a wire rack and allow to cool.
