I made this up last night and everyone said it tasted like pizza. It's an easy light meal, and vegetarian too! It's best to use a beefsteak or slicing tomato, less seeds and liquid.

5 eggs
3/4 cup milk
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon garlic powder (to taste)
salt and pepper
1 medium zucchini, chopped
1 1/2 cups mozzarella cheese, shredded
1 tomatoes, sliced thin

Steps:

  • Whisk eggs, milk and herbs together.
  • add salt, pepper and garlic powder to taste.
  • scatter zucchini and cheese in a greased pie plate and pour egg mixture over it.
  • top with sliced tomato (and grated parmesan if you want!).
  • bake at 375 for 40 minutes until gold and puffy.
  • cool 15 minutes before slicing.

1 lb extra lean ground beef
1/3 cup breadcrumbs, plain, grated, dry
1/2 teaspoon dried oregano
1/4 teaspoon salt
1 egg
1/2 cup mushroom, slices
1 green bell pepper, chopped
2 ounces pepperoni, chopped
2 ounces black olives, canned, sliced
1 cup tomato sauce, low sodium
1 1/2 cups mozzarella cheese, shredded reduced-fat

Steps:

  • Preheat oven to 400 degrees F.
  • Mix uncooked beef, bread crumbs, oregano, salt and egg.
  • Press mixture evenly against bottom and side of ungreased 9 inch pie plate. Spread mushrooms, bell pepper, pepperoni and olives and then a thin layer of cheese on top of beef mixture. Repeat the layer without the cheese. This should fill up the pie.
  • Pour tomato sauce over toppings.
  • Bake uncovered for 25 minutes and the beef is no longer pink in center and the juice is clear.
  • Carefully drain the juices.
  • Sprinkle with cheese bake until the cheese is light brown.
  • Let stand 5 minutes.

2/3 cup all-purpose flour
Salt
1 cup whole milk
Butter, for pie dish
1 cup grated Cheddar
2 ounces small chorizo or pepperoni slices, about 3/4-inch diameter, optional
Special equipment: 1 round ovenproof pie dish, 8 or 9 inches in diameter

Steps:

  • Preheat the oven to 400 degrees F. In a small bowl, beat the egg with the flour, salt, to taste, and milk to make a smooth batter.
  • Butter a round ovenproof pie dish, then stir half the grated cheese into the batter, before pouring it into the dish.
  • Bake for 30 minutes. Take the dish out of the oven, sprinkle with the remaining cheese, and add the chorizo or pepperoni, if using, - or anything else - now, too. Return the dish to the oven and cook for another 2 or 3 minutes to make sure it's heated through.
  • Once the cheese on top is melted and looks burnished fold on the crustless pizza, take it out of the oven and serve, cut into slices. A green or tomato salad on the side would not be a bad idea...
  • Leftover Note:
  • Leftovers can be reheated the next day in a hot oven for 8 to10 minutes, but sadly they won't be as nice as the first time around.

4 cups shredded zucchini (about 4 medium)
1 onion, chopped
3 eggs
1/3 cup whole wheat flour
1/4 cup KRAFT Grated Parmesan Cheese
1 tsp. chopped fresh basil
1/8 tsp. ground red pepper (cayenne)
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese
1 yellow squash, thinly sliced
2 large plum tomatoes, sliced
2 Tbsp. sliced pimento-stuffed green olives

Steps:

  • Heat oven to 350°F.
  • Spread zucchini onto paper towel-covered baking sheet; cover with additional paper towels. Let stand 15 min.
  • Meanwhile, cook onions in nonstick skillet on medium-high heat 4 to 5 min. or until crisp-tender, stirring frequently. Remove from heat.
  • Whisk eggs, flour, Parmesan, basil and red pepper in large bowl until blended. Press top layer of paper towels into zucchini to remove excess moisture. Add zucchini to egg mixture along with the onions and mozzarella; mix well. Pour into 12-inch rimmed pizza pan sprayed with cooking spray.
  • Bake 25 min. or until center is set. Top with remaining ingredients; bake 10 min. or until yellow squash is tender.

When you're craving the flavors of Pepperoni Pizza but don't want the carbs, this Pepperoni Pizza Keto Crustless Quiche will really taste good!

8 oz. sliced mushrooms
2 tsp. olive oil (for browning mushrooms)
1 2.25 oz. can sliced black olives, drained well (Olives are optional but they're good if you like olives on pizza.)
1 cup shredded Mozzarella cheese
1 cup shredded Italian Blend cheese (sometimes called Pizza cheese)
1 tsp. + 1/2 tsp. Italian Herb blend
4 eggs, beaten well
1/2 cup heavy cream (see notes)
1/4 tsp. garlic powder
2 oz. sliced pepperoni

Steps:

  • Preheat oven to 400F/200C. Spray a 9 - 10 inch glass pie dish with non-stock spray.
  • Heat the olive oil in a non-stick frying pan. (I used my favorite 12" Green Pan Ceramic Non-Stick Frying Pan.)
  • Add the sliced mushrooms and cook over medium-high heat until mushrooms release the liquid, the liquid evaporates, and mushrooms are cooked and lightly brown.
  • While mushrooms cook, dump olives into a colander placed in the sink and let them them drain well.
  • Combine the Mozzarella and Italian Blend Cheese in a bowl and sprinkle over the 1 tsp. Italian Herb Blend (affiliate link). Stir the cheese with a fork so the dried herbs are evenly distributed in the cheese. Place the cheese in the pie dish.
  • Beat the eggs with a fork, then mix in the heavy cream, half and half, or milk and the garlic powder.
  • Mix the egg/cream mixture into the cheese in the pie dish, stirring well with a fork until all the cheese is completely coated with the egg mixture.
  • Make a layer of browned mushrooms on top of the cheese/egg mixture. Top that with the sliced olives if using.
  • Arrange the pepperoni slices in an overlapping layer over the top of the mushrooms and olives. Sprinkle with the other 1/2 teaspoon of Italian Herb Blend.
  • Bake the quiche 30-35 minutes, or until the eggs are completely set and the pepperoni is starting to brown.
  • Let quiche cool 3-5 minutes (it will sink down slightly as it cools. Serve hot.
  • This will keep for several days in the refrigerator and reheats well in the microwave or in a pan on the stove.

2 cups coarsely shredded Cheddar, Muenster, Swiss or mozzarella cheese (or a combination of these cheeses)
Oregano, garlic powder, red pepper flakes and black pepper as desired
1/8 pound pepperoni, salami or cooked sausage, sliced into small pieces
4 sun-dried tomatoes, if available, cut into slivers

Steps:

  • In an 11- or 12-inch skillet, preferably the nonstick kind, spread the shredded cheese evenly over the bottom. Turn heat to medium.
  • As the cheese melts, sprinkle the seasonings on top and arrange the bits of meat and tomatoes according to personal preference.
  • Fry the cheese until the edges become crisp and brown. Meanwhile, fill the kitchen sink with about 1 inch of cold water.
  • When the cheese is done (edges slightly crisp, but the center not yet brown on top), remove the pan from the heat, and set it in the sink to cool the bottom quickly. After 30 to 45 seconds, take a fork and lift the cheese ''pie'' out of the skillet, transferring it to a cutting board. With a chef's knife or pizza cutter, cut it into small wedges and serve.

This is in 500 Low Carb Recipes, it's similar to another Crustless Pizza on here but it has no breadcrumbs. Next time I will use a high quality hamburger as I used one with more fat content and it shrunk significantly. For sugar free pizza sauce I combined tomato paste with some chicken stock to a consistency thinner than paste and thicker than spaghetti sauce, I added salt, italian seasoning and garlic powder to taste.

1 small onion, finely chopped
1 garlic clove, crushed
1 teaspoon dried oregano (optional) or 1 teaspoon italian seasoning (optional)
8 ounces sugar-free pizza sauce
parmesan cheese (optional) or romano cheese (optional)
8 ounces shreddded mozzarella cheese
pizza toppings
olive oil (optional)

Steps:

  • Preheat oven to 350°F.
  • In a large bowl and with clean hands, combine the meat with the onion and garlic, and a teaspoon of oregano or italian seasoning (if using). Mix well.
  • Pat the meat mixture out in a even layer in a 9x12 inch baking pan. Bake for 20 minutes.
  • When the meat comes out, it will have shrunk a fair amount, because of the grease cooking off. Pour off the grease and spread the pizza sauce over the meat. Sprinkle the parmesan (if using) on the sauce, and then distribute the shredded mozzerella.
  • Top with whatever you like ie: green peppers, mushrooms, onion, black olives etc.
  • Drizzle the whole thing with a little olive oil (if using)
  • Put your Meatza 4 inches below a broiler or griller set on high. Broil/Grill for about 5 minutes until cheese is melted and starting to brown.

2 cups grated raw zucchini
1 teaspoon salt
1 clove garlic, minced
1 medium yellow onion, chopped fine
1 medium green pepper, diced
1/2 lb fresh mushrooms, sliced
2 tablespoons olive oil
1 (16 ounce) can tomato paste
1/2 cup chopped green chili pepper (, fresh or canned)
2 eggs, well-beaten
1/2 teaspoon chopped fresh basil
1/2 teaspoon dried oregano
12 ounces mozzarella cheese
1/4 cup grated parmesan cheese
2 tablespoons flour

Steps:

  • Put zucchini in a strainer, sprinkle with salt.
  • Let stand for 45 minutes, then rinse with cold water.
  • Drain well and set aside.
  • Meanwhile, mix garlic, onion, bell pepper, mushrooms and oil in a frying pan.
  • Saute until tender.
  • Strain vegetables, discard liquid.
  • Mix vegetables with tomato paste and green chile.
  • Set aside.
  • Heat broiler and lightly grease 10-inch pie pan.
  • Mix together eggs, basil, oregano and half of mozzarella, half of parmesan and the flour.
  • Combine with the strained zucchini in a bowl.
  • Pour into prepared pan.

  • Put in 350-degree oven, spread on tomato paste mixture and top with remaining cheeses.
  • Bake 10 to 20 minutes, or until golden brown.
  • Cool on wire rack for five to 10 minutes and serve.

1/2 lb bulk Italian sausage ((hot or mild))
1/4 cup marinara sauce ((choose a low carb one like Rao's))
1/2 cup shredded mozzarella ((about 2 ounces) )
1/2 ounce sliced pepperoni
1/8 medium green pepper, thinly sliced
2 tbsp sliced black olives
2 small mushrooms, thinly sliced

Steps:

  • In a medium skillet over medium heat, cook the sausage until cooked through, breaking up any clumps with the back of a wooden spoon, about 8 minutes. Transfer to a paper towel lined plate to drain. (if your sausage is in links, remove the casings before cooking).
  • Spread the sausage in a small casserole dish or heatproof bowl, or in two 8-ounce ramekins.
  • Spoon the marinara sauce over the sausage and layer on the cheese and toppings. Save a little cheese to sprinkle over the topppings so that they stay in place.
  • Air fry at 350F for 8 to 12 minutes, or bake in a 375F oven for 10 to 15 minutes.

Steps:

  • Preheat oven to 350. Lightly spray a 9×13 baking dish with cooking spray. With a handheld mixer, mix cream cheese, eggs, pepper, garlic powder and parmesan cheese until combined. Spread into baking dish. Bake for 12-15 minutes, our until golden brown. Allow crust to cool for 10 minutes.
