SMALL TUNA AND BROCCOLI CRUST-LESS QUICHE



Small Tuna and Broccoli Crust-Less Quiche image

I threw this together for lunch today, I'm doing a low carb diet right now and thought a quiche would be a nice change from a salad type lunch. I didn't specify what kind of cheese to use but please do not use a mild cheese like mozzarella or a mild cheddar because it will not have enough flavor for the quiche. I used goat cheese that had been immersed in wine, but an extra sharp cheddar, gruyere, or swiss would work really well. ***You will need a 6-inch pie plate for this recipe, you can POSSIBLY use a normal size pie plate if you double the recipe, but proceed with that at your own risk.

2 cups fresh broccoli florets, raw
1 (5 ounce) can tuna in water
2 ounces cheese, shredded
1 garlic clove, minced
1/4 cup green onion, chopped
1 large egg
1/2 cup cream
1/4 teaspoon dry mustard
3/4 teaspoon dried marjoram
salt and pepper
nutmeg, grated to taste

Steps:

  • Preheat oven to 350 F and grease well a 6 inch pie plate.
  • Boil the broccoli in salted water for 2 minutes; drain and set aside. Drain tuna from can and pat dry with paper towels. In a bowl toss together the cooked broccoli, tuna, garlic, green onions, and cheese. Pour the broccoli and tuna mixture into the pie plate and spread evenly.
  • In a separate bowl whisk together the egg and cream. Whisk in dry mustard, marjoram, salt and pepper. Slowly pour the egg mixture over the broccoli mixture disturbing the egg mixture evenly. Sprinkle grated nutmeg over quiche.
  • Bake for 30 minutes and then let cool at room temp for about 15 minutes before serving.

3 large eggs,beaten
1/4 tsp baking powder
1 pinch salt and pepper
1/4 c half and half,fat free(or regular)
1/4 c cheddar cheese, shredded
2 Tbsp romano cheese, grated
1 can(s) cooking spray, butter flavor
1/2 c broccoli florets,chopped
2 Tbsp onions,chopped
2 large mushrooms, fresh,sliced thin

Steps:

  • 1. I used three one cup ramekins to make these. Spray each ramekin with the butter spray. Saute the onions in the olive oil until golden brown then add the chopped broccoli florets,sliced mushrooms until just tender,season with salt and pepper then set to the side to cool.Combine the eggs,baking powder and half and half,mix them well.
  • 2. Divide the broccoli mixture between the three ramekins and distribute the egg mixture between them then top with cheddar and grated cheese.
  • 3. Bake in your pre-heated toaster oven at 350 degrees for 20-25 minutes or until a toothpick inserted in the middle comes out clean,enjoy!

1 bunch of greens (Swiss Chard, spinach, etc.)
1c chopped onions, leeks, or shallots
4-8oz of mushrooms, sliced
1 pepper (green, red, hot, etc.)
4 or 5 large eggs. If you have a lot of vegetables, you will need an extra egg to bind the quiche together.
1c milk
1-2c grated cheese, to taste (gruyère, fontina, parmesan, gouda all work well)
Salt, pepper, and fresh herbs to taste. Pick one: thyme, parseley, chives, basil, or oregano all work well.
Feel free to substitute other vegetables for the peppers. Zucchini or summer squash work well, too.

Steps:

  • Saute the onion, pepper, mushrooms, and other ingredients about 5-10 minutes or until tender. I prefer to get the water out of the mushrooms and caramelize the onions a bit. Add chopped greens and let them wilt. If you want to cook with the stems of the greens, add them to the other vegetables. In another bowl, beat eggs. Stir milk, cheese, and herbs into to the eggs. Fold in the vegetables and pour into a large buttered pie dish. Bake for 40 minutes at 350F or until the top starts to brown.

This is a fabulous basic Quiche dish that doesn't require a crust (just pie shaped cookware), but a crust can certainly be used if you'd like! The ingredients can also be altered if you'd like. This one uses asparagus & tomato, but it's also great with sausage, crab, and bacon! Enjoy!

2 cups fat free mozzarella cheese
8 ounces Egg Beaters egg substitute
1/4 cup all-purpose flour
1/2 tablespoon baking powder
1/2 cup skim milk
1/2 cup asparagus
1 whole tomato
2 tablespoons basil
1 teaspoon pepper
1/2 teaspoon oregano

Steps:

  • Preheat oven to 325.
  • 1. Slice the tomato leaving about 5 of your largest full circles aside.
  • 2. Chop all the remaining tomato & asparagus.
  • 3. In a large bowl, mix all the other ingredients (not the veggies) & whisk until well blended.
  • 4. Add the veggies, except for you 5 tomato circles.
  • 5. Pour the mixture into a standard oven safe dish.
  • 6. Place your 5 tomato circles on top - just for aesthetics.
  • 7. Bake in oven about 12-15 minutes. You can test by gently shaking the dish & making sure that the egg in the center is solid.

We make this at the restaurant for our lodge guests, quick and easy tasty start to the morning. Super easy to make it without meat if you so choose and its just as good.

2 Tbsp olive oil
2 c vegetables of choice
1/4 c all purpose flour
6 large eggs
1 c nonfat plain yogurt
1 c cottage cheese, lowfat
1/2 c parmesan cheese
1/2 tsp italian seasoning
1/2 lb shrimp, crab, or sausage, your choice or none at all

Steps:

  • 1. Pre heat oven to 350
  • 2. Sauté vegetables until tender.
  • 3. Mix together flour, eggs, yogurt, cottage cheese, parmesan cheese and hergs. Stir in the vegetables and seafood (or meat) and cheese.
  • 4. Pour into a buttered 10 inch quiche pan or pie pan and bake for 45 minutes.
  • 5. Allow to stand for 5 minutes before cutting.
  • 6. Garnish with sour cream and salsa if desired. The wonderful thing about this is that you can easily make it your own by adding what you like.

4 large eggs
1 1/3 cups milk
2 teaspoons cornstarch
1 teaspoon dried mustard
1/2 cup chopped scallions
1 (4 oz. can) sliced mushrooms, thoroughly drained
1/2 (14.5 oz. can) chopped tomatoes, thoroughly drained
1/2 cup diced honey-baked/deli ham
Kosher salt and cracked black pepper
1 cup shredded Cheddar cheese
1/2 cup grated Parmesan cheese
1 1/2 cups plain croutons

Steps:

  • 1. Preheat the oven to 375 degrees F.
  • 2. In a large mixing bowl, whisk eggs together with milk, cornstarch, and mustard.
  • 3. Stir in scallions, drained mushrooms, tomatoes, and ham. Season liberally with salt and pepper. Transfer mixture to a 9-inch pie plate or quiche dish.
  • 4. Top with shredded cheese and croutons. Bake until the center is set 30-35 minutes. Let cool on a wire rack. Serve warm or at room temperature.
