- Preheat oven to 375° In a large bowl, combine first eight ingredients. Spoon into a greased 1-1/2-qt. baking dish. Bake, uncovered, 20 minutes or until a thermometer reads 160°. , Combine topping ingredients; sprinkle over potatoes. Bake 5-10 minutes or until topping is lightly browned.

- Place sweet potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain and place in a food processor. Add the milk, egg substitute, egg, butter and extracts; cover and process until smooth. Pour into a 1-1/2-qt. baking dish coated with cooking spray., In a small bowl, combine brown sugar and flour. Cut in butter until crumbly. Sprinkle over sweet potato mixture; sprinkle with pecans. Bake, uncovered, at 350° for 35-40 minutes or until a thermometer reads 160°.

BEST CRUNCHY TOPPED SWEET POTATO CASSEROLE
This is the BEST Sweet Potato Casserole I have ever tasted. This is one of my most requested casseroles especially for Thanksgiving. Using the real butter, real vanilla,and brown sugar makes a huge difference to the flavor. Much richer tasting. Yummy!

- 1. Peel baked sweet potatoes @ 3 lg potatoes- blend potatoes in large mixer bowl-add butter,sugar,evaporated milk,eggs and vanilla in this order. Blend well and pour into greased 8x11 dish.
- 2. Topping: 1 Cup LIGHT Brown Sugar 1/3 C COLD REAL BUTTER 1 Cup Chopped Pecans 1/3 C. Flour Blend with a fork (until crumbly) and sprinkle on top of casserole.
- 3. Bake at 350 till set @ 35 minutes. If it starts to get too dark place foil loosely across the top.
- 4. Tip: If you make the night before leave off the topping. Next morning cook in oven w/o topping w/foil on till halfway set-take foil off-put topping on and bake till brown with foil off. ENJOY! Delicious! You can double this recipe just put in 9x13 pan or 2 small pans.

I'm frequently assigned the sweet potatoes for the holiday dinners. That's alright, because I love the sweetness of it. But, I keep my eyes open for new versions. This is one of the sweeter ones I've come across, but also has a lovely crunchy texture. I wasn't sure if "mashed" meant "canned", so we bought 3 lbs of raw sweet...

- 1. If using raw sweet potatoes, bake per the norm (I chose 400* for 1 hour, no pre-heat). Be sure to prick them before baking, or they will, um, well, leak. . . I allowed them to cool for 1/2 hour, but with baking mitts, you could probably peel the skins away right away.
- 2. In a large bowl, combine the first eight ingredients. Spoon into a greased 1-1/2 qt. baking dish. Bake, uncovered, at 375* for 20 minutes or until a thermometer reads 160*.
- 3. Combine topping ingredients; sprinkle over potatoes. Bake 5 - 10 minutes longer or until the topping is lightly browned.
