1 1/2 lbs ground beef
2 cups fried onions (French's cheddar or original)
3 tablespoons Worcestershire sauce, French's
3/4 teaspoon garlic powder
6 slices cheese, American

Steps:

  • Mix beef, 1 c fried onions, worcestershire sauce and garlic powder. Shape into 6 burgers.
  • Grill burgers about 10 minutes until cooked through in center.
  • Top each with 1 slice cheese. Cook 1 minute until cheese melts.
  • Serve burgers on rolls with lettuce and tomatoes, if desired. Top each burger with remaining fried onions.

CRUNCHBURGER (AKA THE SIGNATURE BURGER)

This is the "house" burger at Bobby's Burger Palace. It's a basic burger (I like it garnished with red onion, tomato, romaine lettuce, and horseradish mustard) with CRUNCH. The crunch factor comes from a big handful of potato chips layered between the burger and the bun. Some of you may have added chips to your sandwiches as kids, and if people ever told you that you were nuts, I'm here to say that you're not! Oozing melted cheese becomes a part of the chips and those crunchy chips become a part of the burger -- delicious. I love getting a mouthful of juicy burger and salty, crispy potato chips in one bite; it's a way to get a true contrast of textures into your cheeseburger. In fact, I make it an option to have all of the burgers at Bobby's Burger Palace "crunchified."

Number Of Ingredients 14

1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
Kosher salt and freshly ground black pepper
1 1/2 tablespoons canola oil
8 slices American cheese, each 1/4 inch thick
4 potato hamburger buns, split; toasted, if desired (see Cook's Note)
4 slices beefsteak tomato (optional)
4 leaves romaine lettuce (optional)
4 slices red onion (optional)
Horseradish Mustard Mayonnaise, recipe follows (optional)*
4 handfuls of potato chips
1/4 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons drained prepared horseradish
Kosher salt and freshly ground black pepper

Steps:

  • Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb. Season both sides of each burger with salt and pepper.
  • Heat the oil in the pan or griddle over high heat until the oil begins to shimmer. Cook the burgers until golden brown and slightly charred on the first side, about 3 minutes for beef and 5 minutes for turkey. Flip over the burgers. Cook beef burgers until golden brown and slightly charred on the second side, 4 minutes for medium rare (3 minutes if topping with cheese) or until cooked to desired degree of doneness. Cook turkey burgers until cooked throughout, about 5 minutes on the second side.
  • Add the cheese, if using, to the tops of the burgers during the last minute of cooking and top with a basting cover, close the grill cover, or tent the burgers with aluminum foil to melt the cheese.
  • Place the burgers on the bun bottoms and, if desired, top with tomato, lettuce, onion, and a dollop of horseradish mustard mayonnaise. Pile on the potato chips, top with the bun tops, and serve immediately.
  • Whisk together the mayonnaise, mustard, and horseradish in a small bowl and season with salt and pepper. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. The sauce can be prepared 1 day in advance and kept covered in the refrigerator.

Early in the writing of this book, I struggled to get my ruminations on paper. Although I hesitate to call my temporary impasse writer's block, I can't imagine much worse. Words wouldn't come. And the ones that did weren't smart or engaging or funny. After an eternity of fretting, I began making burgers for lunch. My intent was to cook my way through the recipes I planned for the book. This onion burger was the first thing I tried. After 2 days of oniony repasts, the dark cloud lifted and the words came.

1 pound ground chuck
2 onions, shaved (use a mandoline or a very sharp knife to make the thinnest possible slices)
American or pimento cheese
6 buns, split
Mustard

Steps:

  • Place a heavy skillet over medium-high heat. Leave it there for 5 minutes. Loosely gather a handful of ground beef and slip it into the pan. Repeat 6 times. The burgers should be freeform lumps.
  • With the side of a spatula, push the burgers into a semblance of a round. After about a minute, pile on all the onions and then, with as much force as you can manage, smash the onions into the meat. Again, work the sides of the patties into a semblance of a round. Cook another minute and then flip. Season with salt. Smash the burgers again, hard.
  • Place burger on bottom half of the bun and spread with mustard. Spread the cheese on top half of the bun and place on the burger.

PHILLY BURGER

2 tablespoons Worcestershire sauce, divided
4 teaspoons Dijon mustard, divided
1 can (2.8 ounces) French-fried onions, divided
1 pound ground beef
3 ounces cream cheese, softened
1 jar (2.5 ounces) sliced mushrooms, drained
1 teaspoon dried parsley flakes
4 Kaiser rolls

Steps:

  • In a large bowl, combine 1 tablespoon Worcestershire sauce, 3 teaspoons mustard and half of the onions. Crumble beef over mixture; mix well. Form into four patties., Grill, covered, over medium heat or broil 4 in. from the heat 6-9 minutes on each side or until a thermometer reads 160° and juices run clear., Meanwhile, in a small bowl, combine cream cheese, mushrooms, parsley and remaining Worcestershire sauce and mustard. Spread cheese mixture onto cooked patties; top with remaining onions. Grill or broil 30 seconds longer or until onions are crisp-tender. Serve on Kaiser rolls.
