Categories     Bread     Cookies     Sauce     Fish     Vegetable     Side     Bake     Fry     Noodle     Boil

Yield 4 servings

Number Of Ingredients 19

1/2 pound thin spaghetti
Coarse salt
2 pounds haddock fillets
2 pinches of cayenne pepper
Zest and juice of 1 lemon
3 cups Rice Krispies cereal, half crushed, half left whole
3 tablespoons chopped fresh flat-leaf parsley
3 tablespoons chopped fresh chives
1/2 cup butter or margarine, melted
Lo Mein
3 tablespoons vegetable oil (3 times around the pan)
3 garlic cloves, chopped
2-inch piece of fresh ginger, minced
1 cup shredded carrots, or 1 carrot, peeled and cut into matchsticks
2 cups bean sprouts
1 8-ounce can sliced water chestnuts, drained and chopped
1 red bell pepper, cored, seeded, and thinly sliced
6 scallions, thinly sliced on an angle
1/3 cup tamari (dark aged soy sauce) (eyeball it)

Steps:

  • Preheat the oven to 400°F.
  • Bring a pot of water to a boil, add the pasta and salt the water. Cook the pasta until slightly undercooked. Drain.
  • While the pasta works, prepare the fish. Season the haddock with salt, cayenne pepper, lemon zest, and the juice of 1/2 lemon. Cut the remaining 1/2 lemon into wedges and reserve. Crush half the cereal in a sealable plastic bag, then combine with the whole cereal, parsley, and chives. Dip the fish in the melted butter or margarine, then coat evenly in the cereal coating and place on a nonstick cookie sheet. Bake for 17 to 18 minutes, until evenly golden and crisp.
  • After the fish goes in the oven, heat a large nonstick skillet over high heat. Add the vegetable oil, garlic, ginger, and carrots. Cook for 1 minute, stir-frying the mixture, then add the bean sprouts, water chestnuts, red bell peppers, and scallions. Stir-fry for another 2 minutes and add the drained, hot pasta. Add the tamari and remove from the heat. Toss for a minute for the pasta to absorb the tamari and vegetable juices, and divide the No-Pain Lo Mein among 4 plates. Serve with the crispy oven-fried fish. Pass the lemon wedges at the table.

Time 20m

Yield 4 servings

Number Of Ingredients 11

Salt
4 cups chopped fresh crunchy raw vegetables: snow peas, bell peppers, cucumbers, scallions
12 ounces fresh Chinese egg noodles or long pasta like linguine
2 tablespoons dark sesame oil
1/2 cup tahini, peanut butter or a combination
2 tablespoons sugar
3 tablespoons soy sauce, or to taste
1 teaspoon minced fresh ginger (optional)
1 tablespoon rice or white wine or other vinegar
Hot sesame oil or Tabasco sauce to taste
1/2 teaspoon freshly ground black pepper, or more to taste

Steps:

  • Bring a large pot of water to a boil and salt it. Prepare the vegetables: trim, seed, peel as necessary and cut into bite-size pieces. Reserve in a container until ready to use.
  • Cook the noodles in the boiling water until tender but not mushy. When they're done, rinse in cold water, then toss with a little sesame oil. Store in one or more containers.
  • Whisk together the sesame oil and tahini, sugar, soy, ginger, vinegar, hot oil and pepper in a large bowl. Thin the sauce with hot water until it's about the consistency of heavy cream; you will need 1/4 to 1/2 cup per serving; store as desired.
  • When you're ready to eat, toss a portion of the noodles and a portion of the vegetables; top with sauce and stir to coat.

Yield 3-4 servings

Number Of Ingredients 15

Ingredients for noodles:
1 pound asparagus, trimmed and cut into 1-inch pieces
1 1/2 cups trimmed and halved snow peas
1 cup Marinated Sautéed Tofu cubes
9.5 ounces buckwheat soba noodles
1 tablespoon low-sodium soy sauce
Ingredients for sauce:
2 tablespoons low-sodium soy sauce
1 tablespoon mirin
1/2 tablespoon agave nectar
1/2 tablespoon rice vinegar
1 clove garlic, crushed
2 teaspoons cornstarch mixed in 1 tablespoon cold water
Dash sesame oil or chili oil (optional)
Pinch crushed red pepper flakes (optional)

Steps:

  • Put a large pot of water on to boil. Add the vegetables to the boiling water and cook for about 2 minutes. Remove the vegetables from the water with a strainer and place them in a large bowl. Add the tofu and mix well.
  • Bring the water back to a boil. Add the soba noodles and cook for 4 to 5 minutes, until tender.
  • For the sauce place all the sauce ingredients in a saucepan. Slowly bring to a boil, stirring constantly, until thickened and clear. Remove from the heat and pour over the tofu and vegetables, mixing well.
  • Remove soba noodles from water and place in a large bowl. Toss with the 1 tablespoon soy sauce to separate the noodles. Pour the vegetable mixture over the noodles and toss well to mix. Serve warm or at room temperature, with Sriracha hot sauce as a condiment, if desired, for more heat.
