CRUNCHY FREEZE
A family favorite that is great for entertaining any time of the year. Very simple and elegant to make ahead. Simply delicious! Cut into squares and top with warm chocolate or caramel sauce. For holidays, you may add crushed candy canes on top of the warm sauce -- and try butter pecan or peppermint ice cream instead of vanilla!

- Preheat oven to 300 degrees F (150 degrees C).
- In a large bowl, stir together butter, cereal, brown sugar, coconut and pecans. Spread on a baking sheet.
- Bake in preheated oven 30 minutes, stirring every 10 minutes. Let cool completely.
- In a 9x13 inch dish, place two-thirds of the cereal mixture. Spread softened ice cream over cereal. Top with remaining cereal. Cover tightly and freeze 8 hours or overnight.

- 1. Melt margarine in 13 x 9 x 2-inch baking pan at 300°F about 10 minutes or until just melted. Add KELLOGG'S RICE KRISPIES cereal, sugar, coconut and nuts. Mix well. Return to oven for about 30 minutes, stirring frequently until evenly browned. Cool completely.2. Remove half of mixture from baking pan. Spread remaining mixture evenly in pan. Place slices of ice cream on top of cereal mixture, smoothing top. Sprinkle remaining cereal mixture over ice cream, pressing lightly. Freeze about 2 hours or until hardened. Scoop Crunchy Freeze into dessert cups. Serve immediately.

CRUNCHY FREEZE
My mom used to make this a lot when I was growing up. And we would drizzle fresh maple syrup over the top of each serving. I always liked eating the ice cream and saving the crunchy part for last. Actually, I still do that! Since it's such a steamy hot summer, this is a good recipe to make up to cool you down! Eating this always takes me back to my youth. Gosh, that seems forever ago.

Steps:
- Melt oleo in 9 x 13" pan in 300* oven for 10 minutes.
- Add cereal, sugar, nuts and coconut to melted oleo and mix well.Return to oven for 30 minutes, stirring occasionally until slightly brown. Cool.
- Remove 1/2 of mixture from pan and spread softened ice cream over the half left in pan. Sprinkle remaining topping over ice cream.
- Freeze. Eat. Enjoy!
