1 can (6 ounces) crabmeat, drained, flaked and cartilage removed
1 package (10 ounces) frozen peas, thawed
1 cup chopped celery
1 small onion, chopped
3/4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon soy sauce
1/4 teaspoon garlic salt
1/4 teaspoon curry powder
1 can (3 ounces) chow mein noodles
1/2 cup slivered almonds

Steps:

  • In a large bowl, combine the crab, peas, celery and onion; set aside. Combine the mayonnaise, lemon juice, soy sauce, garlic salt and curry powder; add to the crab mixture and toss to coat. Stir in the chow mein noodles and almonds.

I love getting some color into my salads. In this recipe it's by adding some pink grapefruit and radishes. Combining fresh flavors with a good source of protein scores this salad top marks for energy and vitality.

200g fresh crabmeat
1 avocado, peeled, stoned and cut into small cubes
2 celery sticks, cut into small pieces
1 pink grapefruit, peeled and cut into segments, retain the juice
1 bunch of radishes, topped and tailed then cut into small sticks with a mandoline
1 Granny Smith apple, cored and cut into sticks with a mandoline
1 tsp fresh root ginger, peeled and cut into thin sticks (you can also juice and add to the dressing if you prefer)
A handful of fresh coriander leaves
Half that amount of fresh mint leaves, cut into fine strips
For the dressing:
2 tbsp pink grapefruit juice
1 tbsp lemon juice
1 tsp salt
1 tsp fresh ginger juice
2 tbsp extra virgin olive oil
1 tsp coriander seeds, slightly toasted and crushed into a powder (ground coriander is fine if you don't have time)
Freshly cracked black pepper

Steps:

  • To make the dressing, put the ginger and citrus juices into a bowl, add the salt and stir until dissolved. Add the ground coriander and pepper, then while whisking, slowly pour in the olive oil until combined.
  • Mix all the salad ingredients together in a large bowl, pour over the dressing and serve.

I used what I had on my refrigerator for this yummy salad and the addition of cauliflower was a wonderful addition. It gave a wonderful crunch to the salad, hence the name. This salad can be doubled or tripled easily for your needs. Goes great as a side to a burger or as a meal itself. We loved it! Enjoy!

8 oz imitation crab meat, chopped or fresh
1/2 c frozen sweet peas, thawed
1/2 c fresh cauliflower, chopped
1/4 medium red onion, minced
1/4 c celery, small chopped
1/4 - 1/2 c shredded cheddar cheese
1/2 tsp old bay seasoning or to taste
1/2 c plus 2 tablespoons - real mayonnaise
1/4 tsp black pepper

Steps:

  • 1. In a medium bowl, add chopped crab, onion, celery, seasonings, peas, cauliflower and cheese. Toss together and fold in the mayonnaise. You may want more or less mayonnaise, up to you. My proportions were just right for our taste. Sprinkle the top with more bay seasoning and chill for at least an hour so the flavorings can permeate.
