Number Of Ingredients 6

2 cups each Rice Chex, Corn Chex and Wheat Chex
2 cups miniature pretzels
2 cups pecan halves
2 cups salted cashews
3/4 cup butter, cubed
3/4 cup packed brown sugar

Steps:

  • In a large bowl, combine the cereal, pretzels and nuts. In a small saucepan, combine butter and brown sugar. Bring to a boil; cook and stir until thickened, about 2 minutes. Pour over cereal mixture; toss to coat. , Spread into 2 greased 15x10x1-in. baking pans. Bake at 350° for 8 minutes. Stir; bake 6 minutes longer. Transfer to waxed paper-lined baking sheets. Cool completely. Store in airtight containers.

Number Of Ingredients 6

½ cup butter
¾ cup white corn syrup
1 cup packed brown sugar
1 cup chopped pecans
1 cup almonds
1 (12 ounce) package crispy corn and rice cereal

Steps:

  • Preheat oven to 275 degrees F (135 degrees C). Spray a large roasting pan with non-stick cooking spray.
  • In a medium-size microwave safe bowl, mix butter, white corn syrup and brown sugar. Place the mixture in the microwave and cook 2 minutes, or until butter melts.
  • Place the cereal, pecans and almonds into the prepared roasting pan. Pour the melted butter mixture over the cereal and nuts and mix gently until the cereal and nuts are coated.
  • Bake for 1 hour, stirring every 15 minutes.
  • As the snack mix is cooling, be sure to continue to stir so that the mix will not harden in one big lump.

6 cups popped popcorn
3 cups Crispix
2 cups Cheerios
1-1/4 cups pecan halves
1-1/4 cups dry-roasted peanuts
1 cup packed brown sugar
1/2 cup butter, cubed
1/4 cup light corn syrup
1 teaspoon vanilla extract
1/4 teaspoon baking soda

Steps:

  • In a greased roasting pan, combine the popcorn, cereals and nuts. In a large saucepan, bring the brown sugar, butter and corn syrup to a boil. Boil until a candy thermometer reads 250° (hard-ball stage), about 5 minutes., Remove from the heat; immediately stir in vanilla and baking soda. Drizzle over popcorn mixture; toss to coat. Transfer to a greased 15x10x1-in. baking pan. Bake, uncovered, at 250° for 1 hour, stirring every 15 minutes. Store in airtight containers.

2 packages ramen, broken into small pieces (seasoning packet discarded)
1 cup raw cashews
1 cup raw peanuts
1 cup cornflakes
3 tablespoons vegetable oil
4 teaspoons curry powder
1/2 teaspoon cayenne pepper
1/2 teaspoon fine salt
1/2 cup fried or freeze-dried peas

Steps:

  • Preheat oven to 400 degrees. On a rimmed baking sheet, toss ramen, cashews, peanuts, and cornflakes with oil until coated. Spread mixture in an even layer. Combine curry powder, cayenne, and salt; sprinkle over ramen mixture. Bake until golden brown, about 10 minutes, stirring halfway through. Stir in peas and let cool completely before serving.

1/2 cup granulated sugar

Steps:

  • Make the caramel crunch: Line a rimmed baking sheet with a nonstick baking mat; set aside. In a small saucepan, combine sugar and 1 1/2 tablespoons water; mixture should look like wet sand. Place saucepan over medium-high heat and cook until sugar is dark amber in color. Immediately pour caramel onto prepared baking sheet; let cool completely.
  • Crack cooled caramel into large pieces and place in a resealable plastic bag. Crush into tiny pieces using a rolling pin; you should have a scant 1/2 cup of caramel crunch.

I've been making this snack mix since 1991 and have been asked for the recipe several times. I usually break the pretzels in half. Be sure to transfer the hot mix to another pan to cool. I use a big aluminum baking pan.

Number Of Ingredients 10

3 cups Cocoa Puffs cereal
3 cups Rice Chex
1 cup peanuts
2 cups pretzels, small twisted
1 cup brown sugar, packed
1/2 cup butter
1/4 cup light corn syrup
1/4 teaspoon baking soda
1/4 teaspoon cream of tartar
1/2 teaspoon vanilla

Steps:

  • In a 13x9x2 baking pan combine the 1st four ingredients. Set aside.
  • In a medium saucepan combine sugar, margarine and corn syrup. Cook and stir over medium heat until butter melts and mixture comes to boiling.
  • Cook without stirring 4 minutes. Remove from heat.
  • Stir in baking soda and cream of tartar.
  • Stir in vanilla. Pour over cereal mixture. Kind of mix it up.
  • Bake in 300 degree oven for 30 minutes, stirring after 15 minutes.
  • Transfer to a large shallow pan. Cool.
  • Keep mix at room temperature for no more than one week in a tightly covered container or freeze in freezer bag for up to 3 months.
