NEW JERSEY BURGER (AKA THE CRUNCHBURGER)



New Jersey Burger (Aka The Crunchburger) image

1 1/2 pounds ground chuck (80 percent lean) or ground turkey (90 percent lean)
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
8 slices American cheese, each 1/4-inch thick
4 potato hamburger buns, split; toasted, if desired
4 slices beefsteak tomato
4 leaves romaine lettuce
4 slices red onion
Horseradish mustard mayonnaise
4 handfuls potato chips

Steps:

  • 1. Divide the meat into 4 equal portions (about 6 ounces each). Form each portion loosely into a 3/4-inch-thick burger and make a deep depression in the center with your thumb.
  • Season both sides of each burger with salt and pepper.
  • 2. Heat a gas grill to high. Brush the burgers with canola oil and grill until desired doneness is reached. Top each with 2 slices of cheese and cover during the last minute of cooking.
  • 3. Place the burgers on the bun bottoms and, if desired, top with tomato, lettuce, onion, and dollop of horseradish mustard mayonnaise. Pile on the potato chips, cover with the bun tops, and serve immediately.

  • Bobby's Perfect Patty
  • Shape 6 ounces of 80 percent lean ground beef chuck into a uniform patty, no more than 3/4 inch thick (don't overwork the meat). Make a depression in the center with your thumb so the burger won't bulge; the indent will rise as the patty cooks. Preheat a grill or cast-iron grill pan to high. Brush the burger with canola oil and season with salt and pepper. Grill until golden brown and slightly charred, turning once (7 minutes for medium-rare). Avoid pressing with a spatula! Add cheese for the last minute of cooking.
  • Provolone
  • Oozy cheese makes this burger: Two slices of aged provolone are added during the last minute of grilling.
  • Hot Peppers
  • Bobby likes his Philly cheesesteaks with lots of pickled hot peppers, so he loads them on here, too.
  • Roasted Peppers
  • In place of classic griddled bell peppers, Bobby uses roasted red peppers, sliced into strips.
  • Onions
  • Bobby sautes thin rings of Spanish onion in canola oil until soft and golden to top off the burger.

1/2 cup mayonnaise
2 tablespoons roasted red pepper puree
2 teaspoons adobo sauce
Kosher salt and freshly ground black pepper
Canola oil, for brushing
1 1/2 pounds ground chuck (80 percent lean)

4 sesame seed buns, split
8 slices American cheese
Yellow mustard, for serving
Shredded iceberg lettuce, for serving

Steps:

  • Heat a gas or charcoal grill to high heat. Brush the grill grates with oil.
  • For the fry sauce: Combine the mayonnaise, roasted red pepper puree and adobo sauce in a small bowl and stir together until smooth. Season with salt and pepper to taste. Use right away or cover and refrigerate for at least 1 hour to allow flavors to meld.
  • For the burgers: Divide the meat into 4 equal portions (about 6 ounces each). Shape each portion with your hands into a round patty, about 3/4 inches thick. Use your thumb to make a divot in the center of each burger. Sprinkle both sides of each burger with salt and pepper.
  • Grill, covered, until golden brown and slightly charred on the first side, about 3 minutes. Flip the burgers and cook until golden brown and slightly charred on the second side, about 4 minutes for medium.
  • While the burgers cook, toast the buns on the grill until lightly charred, 10 to 15 seconds. Set aside.
  • Add 2 slices of cheese to the tops of each burger. Cover the burgers with the grill lid, large domed lid or large metal bowl and count to 10 until the cheese is melted.
  • Spread some yellow mustard on the bottom buns and spread some of the fry sauce on the top buns. Place the burgers on the bottom buns. Top with the shredded lettuce and the top buns and serve immediately.

BBQ CRUNCH BURGER

Two 4-ounce ground beef patties
2 teaspoons seasoning salt
2 slices Cheddar
1 bun
1 tablespoon your favorite spicy BBQ Sauce
Lettuce, tomato, onion, pickles, for dressing the burger
4 large BBQ pork rinds

Steps:

  • Heat a cast-iron skillet or flat top griddle to 350 degrees F.
  • Sprinkle the burger patties with about 1/2 teaspoon seasoning salt on each side. Then place in the skillet. Cook for 2 minutes, and then flip over and continue to cook for 1 1/2 more minutes. Place the cheese slices on the patties and allow to melt as the patties finishing cooking.
  • Toast the bun if desired. Then add 1/2 tablespoon spicy BBQ sauce to each half. Dress the bottom bun with lettuce, tomato, onion and pickles, and then stack the burger patties onto the bottom bun. Top with pork rinds, and then the top bun.

PRESSED CUBAN-STYLE BURGER

1 pound ground chuck
Salt and freshly ground black pepper
1/2 cup best quality mayonnaise
3 cloves roasted garlic, pureed
1/4 cup Dijon mustard
4 hamburger buns
4 slices thinly sliced smoked ham
8 slices thinly sliced Swiss cheese
2 dill pickles, sliced into 1/4-inch thick slices

Steps:

  • Form the meat into 4 (1/4-inch thick) burgers. Season the meat with salt and pepper on both sides and cook in a saute pan over high heat to medium doneness, about 2 to 3 minutes per side.
  • Combine the mayonnaise and roasted garlic in a small bowl and season with salt and pepper, to taste. Spread both sides of each bun with mayonnaise and mustard.
  • Place a slice of cheese on the bottom portion of each bun, place the burger on top of the cheese, then top the burger with a slice of ham then another slice of cheese then the pickle slices. Place the tops of the bun over the pickles and cook on a sandwich press or wrap the burgers in aluminum foil and cook in a hot skillet over high heat with a heavy skillet placed on top of the burger to press the sandwich. Cook until golden brown and cheese has melted.
