3 cups chopped pitted dates (1 lb)
1 1/2 cups water
1/4 cup granulated sugar
1 cup packed brown sugar
1 cup butter or margarine, softened
1 3/4 cups all-purpose* or whole wheat flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  • Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
  • In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
  • Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

A date filled bar with a chewy oatmeal crust. This is my grandmother's recipe, which my whole family loves.

1 ½ cups rolled oats
1 ½ cups sifted pastry flour
¼ teaspoon salt
¾ teaspoon baking soda
1 cup packed brown sugar
¾ cup butter, softened
¾ pound pitted dates, diced
1 cup water
⅓ cup packed brown sugar
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine oats, pastry flour, salt, 1 cup brown sugar, and baking soda. Mix in the butter until crumbly. Press half of the mixture into the bottom of a 9 inch square baking pan.
  • In a small saucepan over medium heat, combine the dates, water, and 1/3 cup brown sugar. Bring to a boil, and cook until thickened. Stir in lemon juice, and remove from heat. Spread the filling over the base, and pat the remaining crumb mixture on top.
  • Bake for 20 to 25 minutes in preheated oven, or until top is lightly toasted. Cool before cutting into squares.

1 1/2 cups dates, pitted, chopped
2/3 cup fresh orange juice
3/4 cup unsalted butter
3/4 cup light brown sugar, packed
1 cup rolled oats (a generous cup!)
1 1/2 cups self rising flour

Steps:

  • Preheat the oven to 350 degrees F, then grease & line (with parchment) a 7"x11" cake pan.
  • Combine the dates & orange juice in a saucepan & bring to a boil before turning the heat down to low ~ Cover the saucepan & simmer gently for 5 minutes to soften the dates.
  • Remove from the heat & mash the date mixture until smooth, then set aside to cool.
  • In a mixing bowl, beat together the butter & sugar, then stir in the oats & flour to form a crumbly mixture.
  • Press half of this mixture into the base of the prepared pan to form a smooth base, then use a fork to prick the base all over.
  • Bake for 10-12 minutes or until lightly golden.
  • Spread the date paste over the cooked base & sprinkle the remaining crumbly mixture over that as a topping.
  • Return to the oven & bake for another 30 minutes or until lightly golden.
  • Remove from the oven, cut into 12 bars & allow to cool in the pan on a wire rack.
  • Great served either warm or cold.

1 cup pitted and chopped dates, or to taste
¼ cup cold water, or as needed
2 tablespoons white sugar
1 teaspoon vanilla extract, or more to taste
1 ⅜ cups self-rising flour
1 ½ cups margarine
1 cup oats
¾ cup white sugar

Steps:

  • Preheat oven to 355 degrees F (180 degrees C). Grease a 9-inch square baking dish.
  • Combine dates, water, 2 tablespoons sugar, and vanilla extract in a saucepan; cook and stir over medium heat until filling mixture forms a paste, about 5 minutes. Add more water if filling gets too thick. Remove saucepan from heat and cool.
  • Place flour in a bowl and rub margarine into flour using your hands until mixture resembles bread crumbs; stir in oats and 3/4 cup sugar. Press 1/2 of the mixture into the prepared baking dish. Spoon filling over over crust, smoothing with the back of the spoon, leaving a thin border between the filling and the edge of the dish. Sprinkle the remaining crumble mixture over filling.
  • Bake in the preheated oven until top is golden brown, 40 to 45 minutes.
