5 cups chopped rotisserie chicken
2 (8 ounce) packages low-fat cream cheese
1 (8 ounce) can black beans, drained and rinsed
1 (4 ounce) can Mexican-style corn, drained and rinsed
1 (8 ounce) can Rotel Tomatoes, drained (use the extra spicy kind for extra spice!)
1 ounce hot and spicy taco seasoning (or regular for less spice)
1 cup shredded queso chihuahua cheese
1 1/2 cups shredded Mexican blend cheese, divided
chopped fresh cilantro (to garnish)

Steps:

  • Preheat oven to 400 F.
  • In a large bowl, mix together the cream cheese, beans, corn, tomatoes, enchilada sauce, queso cheese, 1/2 cup Mexican Blend cheese, and taco seasoning.
  • Stir in the chicken.
  • Pour the mixture into a 9x9 inch casserole dish or pie dish sprayed with nonstick spray (this mixture would make enough for one casserole dish or 2 pie dishes).
  • Top with the remaining cup Mexican blend cheese and cilantro.
  • Bake for 25-30 minutes or until cheese is bubbly and melty.
  • Top with more cilantro and sour cream if desired.
  • Enjoy!

1 lb cooked chicken breast, shredded
1/2 cup finely chopped onion
2 teaspoons finely chopped red bell peppers (optional)
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
8 ounces shredded colby-monterey jack cheese (or cheddar-jack)
1 (4 ounce) can diced green chilies
1/8 teaspoon cayenne pepper
1/2 teaspoon cumin
1/2 teaspoon cilantro

Steps:

  • Mix everything together in a mixing bowl until well blended.
  • Transfer the mixture to a lightly greased/sprayed medium baking dish.
  • Bake uncovered at 350 degrees for 30 minutes, or until the edges are lightly golden brown.

I found this dip on another site. I usually plan ahead and grill extra chicken a day or so ahead. However, the purchased grilled chicken would work just as well. Cooking time does not include preparing the chicken.

1 lb boneless skinless chicken breast half, grilled and shredded
1 (8 ounce) package cream cheese, softened
1 cup mayonnaise
1 (8 ounce) package shredded colby-monterey jack cheese or 1 (8 ounce) package Mexican blend cheese
1 (4 ounce) can diced green chili peppers
1 jalapeno pepper, finely diced

Steps:

  • Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, shredded cheese, green chile peppers and jalapeno pepper.
  • Transfer the chicken mixture to a medium baking dish.
  • Bake uncovered at 350 degrees for 30 minutes, or until the edges are golden brown.
  • ***NOTE***I season the chicken with my favorite spices prior to grilling.
  • Fajita seasoning or Montreal seasoning work well.
  • The purchased grilled chicken would save a step, also.
  • I have added more or less jalapeno depending on the tastes of those I will be serving it to.

1 (10 3/4 ounce) can condensed cream of chicken soup
1 cup shredded sharp cheddar cheese
1 (5 ounce) can evaporated milk
1/4 cup finely chopped red bell pepper
1/4 cup finely chopped onion
1 (4 ounce) can chopped green chilies
1 (1 1/4 ounce) package taco seasoning
1 green onion (optional)
tortilla chips
crusty bread (optional)

Steps:

  • In a large microwave safe bowl, combine first 8 ingredients.
  • Microwave uncovered on high 4-5 minutes.
  • Stir.
  • Microwave an additional 3-4 minutes or until heated through.
  • If desired, sprinkle hot dip with chopped green onion.
  • Serve with tortilla chips, or torn pieces of crusty bread.

For some reason I just love this dip. I usually have a little leftover chicken from dinner. I chop it and freeze it just for this dip. In a pinch you could use the already cooked chicken strips from the grocery store, but that could get very expensive. You can also double this for a party and use a 13 x9 pan instead of the pie plate. I keep meaning to make enchiladas out of this filling to see how it goes, but I haven't gotten around to it yet.

1 (8 ounce) package cream cheese, softened
2 cups shredded mexican cheese, divided
1 (7 ounce) can chopped green chilies, undrained
1 teaspoon garlic powder
1/4 teaspoon chili powder
1/2 lb boneless skinless chicken breast, cooked, finely chopped
tortilla chips, heavier the better

Steps:

  • PREHEAT oven to 350°F
  • Beat cream cheese, 1 cup of the shredded cheese, chilies and seasonings in small bowl with electric mixer on medium speed until well blended.
  • Stir in chicken.
  • SPREAD into 9-inch pie plate.
  • Sprinkle with remaining 1 cup shredded cheese.
  • BAKE 20 to 30 minutes or until dip is heated through, and cheese is melted and just slightly browned at edges.
  • Serve with tortilla chips.
