2 (10 ounce) cans chunk chicken, drained
2 (8 ounce) packages cream cheese, softened
1 cup Ranch dressing
¾ cup pepper sauce (such as Frank's Red Hot®)
1 ½ cups shredded Cheddar cheese
1 bunch celery, cleaned and cut into 4 inch pieces
1 (8 ounce) box chicken-flavored crackers

Steps:

  • Heat chicken and hot sauce in a skillet over medium heat, until heated through. Stir in cream cheese and ranch dressing. Cook, stirring until well blended and warm. Mix in half of the shredded cheese, and transfer the mixture to a slow cooker. Sprinkle the remaining cheese over the top, cover, and cook on Low setting until hot and bubbly. Serve with celery sticks and crackers.

Got this from the gym that I belong too - don't know why - it's not exactly low-fat, but it's absolutely delicious. The first day I got it, I halved the recipe and DH and I ate the entire thing!

2 cups cooked chicken, diced or shredded (Canned Chicken breast works well too)
4 ounces red hot sauce (or to taste)
3/4 cup chopped celery
8 ounces cream cheese
1/2 cup ranch dressing
shredded cheddar cheese
crackers (for dipping) or raw vegetables (for dipping)

Steps:

  • Cream the cheese and ranch dressing.
  • Add celery.
  • Set aside.
  • In skillet, saute hot sauce and chicken.
  • Stir chicken mixture into cream cheese mixture.
  • Spoon into a 9 inch pie plate and cover with cheddar cheese.
  • Bake at 350 for 30- 35 minutes.
  • Serve warm with tortilla chips, crackers, or cut up raw veggies.

2 cups shredded cooked chicken (from about 1/2 rotisserie chicken)
1 1/2 cups cottage cheese
1/2 cup Buffalo-style hot sauce
6 ounces grated pepper jack (about 3 cups)
6 ounces grated mild Cheddar (about 3 cups)
1/4 cup crumbled blue cheese
Rainbow baby carrots, celery sticks and assorted crackers and chips, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the chicken, cottage cheese, hot sauce, pepper jack and Cheddar in a large bowl and mix well. Transfer to an 8-inch square baking dish, spreading it into an even layer. Sprinkle all over with the blue cheese and bake until hot and bubbly, about 35 minutes.
