3/4 cup vegetable oil
1/4 cup molasses
1 1/2 cups white sugar
4 eggs, unbeaten, one at a time
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1 teaspoon salt
1/2 cup walnuts, chopped
3 cups carrots, grated, packed
1 (8 ounce) package cream cheese
1/2 cup margarine
3 1/2-4 cups confectioners' sugar
2 teaspoons vanilla

Steps:

  • CAKE:.
  • Preheat oven to 325°F.
  • Add ingredients in the above order, mixing well after each addition. Pour into prepared 2.5 Litre - 3 litre tube pan.
  • Bake at 325F for 1 1/4 - 1 1/2 hours.
  • Let cool before icing.
  • ICING:.
  • Cream cheese and margarine. Beat in the confectioner's sugar gradually, until you reach the desired stiffness. Mix in vanilla. Spread on cooled cake. Garnish with walnut pieces.

3 tablespoons butter
3/4 cup sugar
3 overripe bananas
2 tablespoons molasses
2 eggs
1 3/4 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
3/4 cup walnuts or 3/4 cup pecans, chopped
1/2 cup chocolate chips (optional) or 1/2 cup peanut butter chips (optional)

Steps:

  • Preheat oven to 350°F
  • Cream butter and sugar, mix in bananas, molasses and eggs until smooth. Mix together flour, baking soda and baking powder. Add to wet ingredients and beat until smooth. Fold in walnuts (pecans) and/or chocolate chips (peanut butter chips).
  • Bake in 8 1/2 x 4 1/2 -inch loaf pan at 350F for 1 hour or until done.

2 tablespoons reduced-fat butter, softened
1/4 cup sugar
1 large egg, room temperature
1/2 cup molasses
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon ground cinnamon
1/8 teaspoon salt
1/2 cup hot water
9 tablespoons fat-free whipped topping

Steps:

  • In a small bowl, beat butter and sugar until crumbly, about 2 minutes. Beat in egg. Beat in molasses. Combine the flour, baking soda, ginger, cinnamon and salt; add to butter mixture alternately with water, mixing well after each addition., Transfer to a 9-in. square baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Cut into squares; garnish with whipped topping.
