With crispy buttery croissants and smoky bacon, what is there not to love about this dish?! It bakes like a casserole but cuts into perfect individual sandwiches. The cheese is ooey gooey and the eggs cook up wonderfully. This will become your go-to breakfast. It's great if you're serving a crowd.

6 large croissants, cut open
1 pkg bacon, 16 oz.
8 slices provolone cheese
1 c cheddar cheese, shredded
8 eggs
2 Tbsp milk
2 Tbsp butter

Steps:

  • 1. Preheat oven to 375 degrees. Lightly grease the bottom of a 9x13 baking dish.
  • 2. Cook bacon and set aside on a plate with a paper towel to soak up the grease. Once cooled, break into 1 inch pieces (approximately).
  • 3. Place the bottom halves of the croissant in the dish, trying to get them to be as close together as possible.
  • 4. Spread provolone and cheddar over the tops of the croissants. Bake in the oven until cheese begins to melt (about 5 minutes).
  • 5. Remove from oven. Spread the bacon evenly over the top of the cheese.
  • 6. In a medium bowl, whisk the eggs and milk until well blended. Pour over the top of the bacon and croissants. Bake for 15 minutes or until egg is cooked. Remove from oven.
  • 7. Lightly butter the outside of the croissant tops and place atop the casserole. Place back in the oven for 5 minutes until croissants are toasted slightly.
  • 8. Remove and let sit for 10 minutes. Cut pieces with a knife before serving with a spatula.

1 jar (18 ounces) orange marmalade
1/2 cup apricot preserves
1/3 cup orange juice
3 teaspoons grated orange zest
6 croissants, split
5 large eggs
1 cup half-and-half cream
1 teaspoon almond or vanilla extract
Quartered fresh strawberries

Steps:

  • In a small bowl, mix marmalade, preserves, orange juice and zest. Arrange croissant bottoms in a greased 13x9-in. baking dish. Spread with 1-1/2 cups marmalade mixture. Add croissant tops., In another bowl, whisk eggs, cream and extract; pour over croissants. Spoon remaining marmalade mixture over tops. Refrigerate, covered, overnight., Preheat oven to 350°. Remove casserole from refrigerator while oven heats. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Let stand 5 minutes before serving. Serve with strawberries.

1 (10 1/8 ounce) can croissants (the new flat roll out one is the best)
6 eggs
2 tablespoons fat-free half-and-half (optional)
1 lb hot sausage
1/4 teaspoon salt (optional)
1/4 teaspoon pepper (optional)
1 cup cheddar cheese, shredded

Steps:

  • Lightly butter large casserole dish (optional). Unroll croissants and lay flat in single layer in large casserole dish.
  • Brown sausage in pan and layer on top of croissants.
  • In seperate bowl, scramble eggs with 1/2 and 1/2, salt and pepper. Layer on top of sausage.
  • Cover with remaining cheese and bake at 350 degrees for 30-45 minutes.

6 fresh baked croissants,cut into pieces and separated
8 applewood bacon strips
8 frozen pork sausage patties,thawed and cut them in quartered
8 large eggs
3/4 c heavy cream
2 tsp sea salt and black pepper
2 pkg (8 ounces) cream cheese,softened
6 white american cheese slices
2 c shredded sharp american cheese,divided

Steps:

  • 1. Preheat oven to 350 degrees F.Coat a 11x8 inch baking dish with cooking spray.
  • 2. Add croissant bottom pieces in a prepared baking dish.
  • 3. Cook bacon in a large skillet over medium heat for 5 minutes or until are browned.Remove from heat.Grab the bacon with tongs and transfer to a paper towel lined plate,to drain the grease,crumbled and set aside.
  • 4. Cook sausage patty pieces in bacon grease over medium heat in 5 minutes or until browned.
  • 5. In a large bowl,eggs,heavy cream,crumbled bacon,sausage patty pieces,sea salt/black pepper and cream cheese,whisk together until blended.Set aside.
  • 6. Pour half off egg mixture onto croissant bottoms.Layer with white american cheese and 1 cup shredded sharp cheddar cheese.
  • 7. Top with croissant top pieces.Pour remaining egg mixture on croissant tops and sprinkle with remaining shredded cheese.

4 freshly baked croissants
8 eggs
12 strips bacon, cooked
1 avocado, sliced thin
4 slices cheddar cheese

Steps:

  • In a griddle or frying pan, over medium heat, cook eggs over-easy.
  • Preheat oven to broil.
  • Cut croissants, and place the top and bottom of each croissant center-side up on a baking sheet.
  • Top the bottom of each croissant with two eggs, 3 strips of bacon, 1/4 the avocado slices, and one slice of cheddar cheese.
  • Broil the open-faced sandwiches, as well as the tops of each croissant, for 1-2 minutes until cheese is melted and the croissant starts to crisp slightly.
  • Remove from the oven, place the top of each croissant on each bottom, and serve warm.
