SLOW COOKER RIBS, POTATOES AND SAUERKRAUT



Slow Cooker Ribs, Potatoes and Sauerkraut image

A one pot meal of baby back ribs, potatoes and sauerkraut in the slow cooker.

Number Of Ingredients 10

1 rack pork baby back ribs
1 white onion, (sliced)
2 Tbsp. cooking oil
1 tsp. salt
1/4 tsp. pepper
1 tsp. dried thyme
3 garlic cloves
2 lbs. sliced red potatoes
16 oz. sauerkraut, (rinsed and drained)
1 cup chicken broth ((or your favorite beer!))

Steps:

  • Remove the membrane off the back of the ribs by sticking a finger under it in the middle of the ribs, life up and pull. It may not come off in one piece. You can see how I remove this in the video.
  • Preheat the oven to Broil.
  • Cut the ribs into single rib pieces. Place the cut onion onto a baking sheet. Add the ribs on top of the onion. Drizzle over the oil. Sprinkle over the salt, pepper and thyme over the ribs. Add the garlic cloves.
  • Place the baking sheet into the oven under the broiler. Leave in the oven until the ribs are slightly browned. Mine took about 10 minutes. Keep an eye on them so they don't burn.
  • Add the sliced potatoes to the slow cooker. Add the contents of the baking sheet on top of the potatoes. Drain and rinse the sauerkraut if desired. Add the sauerkraut on top of everything.
  • Pour over the chicken broth.
  • Cover and cook on HIGH for 5 hours or for 7-8 on low.
  • Serve and enjoy!

This is a really easy, delicious recipe for when it's to cold to do ribs on the grill and only uses your crockpot so you aren't dirtying a bunch of pots and pans! Another great thing is that this isn't a "set in stone" recipe. If you like red potatoes instead of yellow? Use them! You prefer a different bbq sauce or spice rub? Use it! NOTE: All seasonings are to taste. This site just makes me use measurements so I guessed there. I used McCormick Grill Mates Cowboy Rub for my "dry rub seasonings" it just wouldn't recognize it as a food.

1 rack baby back ribs
2 tablespoons dry rub seasonings
1 teaspoon granulated garlic
1 teaspoon chipotle chili powder
1 (19 ounce) bottle jack daniel's honey smokehouse barbecue sauce
1/4 th cup water
4 medium yellow potatoes
1 teaspoon italian seasoning
1/2 teaspoon seasoning salt
3 teaspoons butter
1 (16 ounce) bag frozen vegetables

Steps:

  • Cut your rib rack in half.
  • Sprinkle both sides of the two halves with your rub, garlic, and chipotle chili pepper and rub into meat.
  • Place both halves in crock pot and pour barbecue sauce over them coating well.
  • Pour water into the bottom of the crockpot.
  • Cut potatoes (I did 8ths) and season with season salt, garlic, and Italian seasonings
  • Place potatoes in crockpot around the sides on top of the ribs.
  • Cook on high for 3 hours and 40 minutes.
  • Put bits of butter on the potatoes and dump frozen veggies on top.
  • Cook for 20 more minutes.

These Slow Cooker ribs are going to melt in your mouth and fall off the bone! They are cooked low and slow so they are perfectly tender and then covered in a sauce that's absolutely to die for!

4 pounds pork baby back ribs
1 Tablespoon brown sugar
2 teaspoons paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon pepper
2 cups Homemade BBQ Sauce (or Store Bought)

Steps:

  • Prepare your ribs by removing the membrane and patting dry with a paper towel.
  • Prepare the rub by combining brown sugar, paprika, garlic powder, onion powder, salt and pepper. Rub evenly on top of the ribs.
  • Cut the ribs in half. Add half of the rack of the ribs into the bottom of the slow cooker. Pour half of the sauce on top and layer with the other rack with remaining sauce. You can also wrap the ribs around the slow cooker if the top will fit on.
  • Cook the ribs on low for 6-7 hours or high for 3-4 hours.
  • Preheat oven to 425 degrees Fahrenheit. Remove the ribs and set on a baking sheet. Pour the sauce on the top. Cook for 10 minutes until the tops get crispy. Brush with additional sauce if needed.

3 pounds bone-in beef short ribs
1/2 teaspoon salt
1/2 teaspoon pepper
1 tablespoon canola oil
4 medium carrots, cut into 1-inch pieces
1 cup beef broth
4 fresh thyme sprigs
1 bay leaf
2 large onions, cut into 1/2-inch wedges
6 garlic cloves, minced
1 tablespoon tomato paste
2 cups dry red wine or beef broth
4 teaspoons cornstarch
3 tablespoons cold water
Salt and pepper to taste

Steps:

  • Sprinkle ribs with salt and pepper. In a large skillet, heat oil over medium heat. In batches, brown ribs on all sides; transfer to a 4- or 5-qt. slow cooker. Add carrots, broth, thyme and bay leaf to ribs., Add onions to the same skillet; cook and stir over medium heat 8-9 minutes or until tender. Add garlic and tomato paste; cook and stir 1 minute longer. Stir in wine. Bring to a boil; cook 8-10 minutes or until liquid is reduced by half. Add to slow cooker. Cook, covered, on low 6-8 hours or until meat is tender., Remove ribs and vegetables; keep warm. Transfer cooking juices to a small saucepan; skim fat. Discard thyme and bay leaf. Bring juices to a boil. In a small bowl, mix cornstarch and water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened; press cancel. These are the best I've had, short of the actual grilling method of course! This is a very simple recipe that I came up with a few years ago. It's not rocket science, just ribs cooked in the slow cooker and finished in the oven. This is what I do when I want ribs during the week and have to work all day. I'm eating them within a half-hour of getting home, and they turn out perfect every time!

3 pounds baby back ribs, trimmed
salt and ground black pepper, to taste
½ cup water
½ onion, sliced
1 clove garlic, minced
1 (18 ounce) bottle barbeque sauce

Steps:

  • Season ribs with salt and pepper.
  • Pour water into slow cooker. Layer the ribs into the slow cooker. Top the ribs with onion and garlic.
  • Cook on High for 4 hours (or Low for 8 hours).
  • Preheat oven to 375 degrees F (190 degrees C).
  • Transfer ribs to a baking sheet. Discard onion and garlic. Coat ribs with barbeque sauce.
  • Bake in preheated oven until the sauce caramelizes and sticks to the meat, 10 to 15 minutes.

1/2 teaspoon salt
1/2 teaspoon pepper
1 large onion, cut into 1/2-inch rings
1 bottle (18 ounces) hickory smoke-flavored barbecue sauce

During the heat wave of July 2011 we got tired of grilling and bbq. The crockpot did get more than it's fair share of use. Using what I had on hand I made this dish and was very happily surprised at the great outcome! I grew up with Mom fixing neck bones & potatoes often, so I thought this might be a close call to a trip down memory lane yet updated.

1 slab pork spareribs, trimmed and cut up
salt & pepper (to taste)
1 large onion, roughly chopped
1 bay leaf
2 teaspoons pork seasoning
bottle beer (your choice)
6 potatoes, peeled and quartered

Steps:

  • Rinse and dry the ribs.
  • Cut down serving size (2-3 bones per serving).
  • Season with salt and pepper to taste.
  • Place ribs in crockpot on High heat.
  • Peel and quarter potatoes, rough chop onions and add to the ribs in the crock.
  • Add bay leaf and pork seasoning.
  • Pour beer into crock, cover and cook on high 6-8 hours or until done.
  • Stir halfway through.
