1/2 lb bacon, cut into 1/2-inch pieces
1 medium onion, chopped (1/2 cup)
1 cup ketchup
1/2 cup packed brown sugar
1/4 cup mild-flavor (light) molasses
1 tablespoon cider vinegar
1 teaspoon ground mustard
2 cans (15.5 oz each) great northern beans, drained, rinsed
2 cans (15 oz each) black beans, drained, 1/2 cup liquid reserved

Steps:

  • In 10-inch skillet, cook bacon and onion over medium heat, stirring occasionally, until bacon is crisp and onions are tender; drain.
  • In 3 1/2- to 4-quart slow cooker, mix bacon, onion and remaining ingredients, including reserved liquid. Cover; cook on Low heat setting 3 to 4 hours.

1 c salsa
2/3 c bbq sauce
1 whole sweet onion, chopped
2 can(s) pork and beans (28 oz, each)
1 can(s) chili beans (15 oz.)
1 can(s) black beans, rinsed and drained
4 sausage links, kielbasa, bacon (cooked and drained), or other meat of choice
1 jalapeno pepper, chopped, optional (for those who like it spicy)
2/3 c brown sugar, optional (for those who like their baked beans on the sweeter side)

Steps:

  • 1. Combine all ingredients in a slow cooker, stir to combine, set on low or slow cook option for 6-8 hours stirring occasionally (if you are able).
  • 2. When mixture has thickened and is hot and bubbly, it is ready to eat!
  • 3. This is great as a side for burgers, but hearty enough to be a main dish by itself. Enjoy!

And the same principles for cooking beans on the stovetop apply: Skip soaking the beans; use flavorings to infuse the beans and the bean-cooking liquid; and salt before and after cooking. You can follow this formula for almost any dried bean, but know that the cook time will vary based on the age and type of bean, as well as the size and strength of your slow cooker. Start checking at the six-hour mark to see how quickly your beans are cooking. Keep flavorings in fairly large pieces, as the long cook time could turn smaller bits to mush.

1 pound dried beans (except red kidney beans; see Tip)
1/4 cup extra-virgin olive oil
Kosher salt (Diamond Crystal)
Optional flavorings (see Tip)

Steps:

  • In a 5-quart or larger slow cooker, add the beans, olive oil, 1 teaspoon salt and your selection of flavorings. Add water to cover 2 inches above the beans, then cook on low until tender, 8 to 10 hours. To test for doneness, taste more than one bean to ensure they're all cooked through; they should flatten without much effort when pressed between your fingers. (If you plan to eat your beans cold, cook them a bit past tender, as they'll firm as they cool.) Season to taste with salt.
  • Let cool slightly, then eat right away or store beans in their liquid in an airtight container for up to a week in the fridge or up to 3 months in the freezer.

These are a hit at my house for even those that aren't fans of baked beans. I think it's the bacon that adds the x-tra somethin somethin. Or maybe the french fried onions. This can also be done in the oven and so reduce the baking time to 1 1/2 hrs.

1 1/4 cups sugar
1/2 tablespoon vinegar
1/2 teaspoon brown mustard
1 lb bacon
1/4 cup ketchup
1 (6 ounce) can French-fried onions

Steps:

  • Fry bacon until it's almost done.
  • Mix all ingredients together using only 3/4 of the can of french fried onions.
  • Cut up the bacon into bite size pieces.
  • Add bacon.
