Steps:
- Add olive oil to a saute pan and heat over medium-high heat. Once hot, add in the beef stew meat, and season with salt and pepper. Sear the beef on all sides, for about 3 minutes, until browned.
- Add the beef to the crockpot, along with the onion, potatoes, and carrots.
- In a large mixing bowl, whisk together the beef broth, minced garlic, tomato paste, Worcestershire sauce, and thyme. Pour over the beef and vegetable mixture and add the bay leaf on top. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours.
- 20 minutes before serving, remove the bay leaf. Combine the cornstarch and 3 tbsp water in a small bowl and pour into the beef stew. Stir to combine.
- Add in the frozen peas and cover again. Once the peas are heated through and the stew has thickened, garnish with fresh parsley and serve.

- Shake the beef stew meat in a brown paper bag or resealable plastic bag with the flour and seasoning salt until evenly coated.
- Heat the olive oil in a skillet. Add the floured stew meat to the pan and brown on all sides. Remove using a slotted spoon or tongs & place into the bottom of a slow cooker. Season with pepper.
- Saute the diced onion for 2 minutes. Transfer the onions into the slow cooker as well.
- Pour in to the skillet the worcestershire sauce, water and beef demi glace and whisk until mixed, making sure you scrape up any browned bits in the bottom of the pan. Turn off the heat and set aside.
- Add the diced potatoes, carrots, celery and bay leaves to the slow cooker.
- Pour the broth mixture in the crockpot over the vegetables.
- Cover and cook on low for 8 hours. Remove the bay leaves before serving.

There are plenty of recipes out there (really good recipes) that call for ingredients that "spice up" or "fancy up" a beef stew recipe. I'm a plain cook and I like to let the main ingredients flavor a recipe as much as possible just using salt & pepper as my seasonings. If you are looking for fancy, spiced up or a recipe that will take you more than 10 minutes to add to the crockpot -- please skip this one. If you are looking for a easy-to-make, simple, basic yet delicious beef stew and you are OK with the fact that it's able to stand on it's own without herbs, spices or ingredients you can't pronounce, then you may be interested in this one. Perfect for picky kids or someone who has never really cooked before.

- Basic Info about the ingredients:.
- This recipe is very forgiving -- so if you only have 3 potatoes, no biggie. The important thing is that you get what you have in a crockpot!
- Amount of beef is flexible -- just buy around amount called for and don't sweat being exact.
- All veggies need to be washed & cut into thick slices or chunks.
- Potatoes should be left UNPEELED. I prefer red potatoes because I always leave the peel on - Yukon Gold are also a good choice).
- Ready? Here Goes!
- Dump beef in crockpot.
- Dump thickly sliced carrots, thick chunks of potato, celery & onion in crockpot.
- Open can of diced tomatoes with the juice, pour on top of beef and veggies.
- Dump 1 cup water and about a palm-sized amount of salt in the crockpot and give it a bit of a stir.
- Set crockpot to low and cook for 6-8 hours. If it ends up cooking longer - no biggie. It won't hurt the stew.
- If you feel the stew is too liquid-- right before you get ready to serve, you can add 4 tablespoons of corn starch to about 1/2 cup of water until dissolved and pour over stew and stir until the broth thickens.

- Directions: Cube meat into small pieces (less than 1") and dredge in flour, salt, garlic powder, black pepper in a large ziploc bag until well coated. In a large skillet or dutch oven, add the olive oil and heat on medium high. Add the meat and brown on all sides turning frequently. Set meat aside. In crockpot, combine all ingredients and mix well, set on HIGH for 6 hours, add meat last and stir thoroughly to mix, then set and leave alone for 6 hrs. Meat will be perfectly tender and flavorful. - 1. Take a non-stick skillet, add stew meat, add garlic salt and Lowery's seasoning salt. Brown meat (about five minutes).
- 2. While the meat is browning, add to the crock pot: cloves of garlic,stewed tomatoes, celery, carrots,green bell pepper, beef or chicken stock, brown gravy (I whisked the brown gravy with a bit of water; to eliminate lumps), beef or chicken stock, and onions.
- 3. Put lid on slow cooker. Place temperature on low and cook for 8-10 hours. Your time will depend on how your cooker heats. I have three pots and they each cook different.
- 4. Now, take your cubed potatoes (washed of course) and place in a very large bowl, sprinkle your dry ranch packet over potatoes. Take a large spoon and stir until every potato is coated well. Place coated potatoes in a zip lock bag and place in refrigerator overnight.
- 5. Now it's morning and you will pre-heat oven to 350 and bake your ranch covered potatoes until tender (20-30 minutes. Ovens vary so you might want to watch after about 20 minutes to make sure you don't burn them. Once done, add them to your stew and ENJOY!!
IRISH GUINNESS BEEF STEW CROCKPOT RECIPE

- Step 1 Peel and julienne the parsnips into 2 inch long pieces to match the length of the baby carrots. Add the pearl onions, baby carrots, parsnips, and potato quarters into the bottom of the crock pot. Step 2 Season the flour in a flat bowl and dredge the beef chunks. Step 3 Heat the oil in a large skillet. Add the floured beef cubes and brown them on all sides. You may need to complete this in two steps depending on the size of your skillet. Step 4 Remove the beef from the pan and add to the crock pot. Add the garlic to the skillet and brown for one minute. Step 5 Mix 1 cup of the beef broth with the red wine vinegar and dijon mustard in a small pitcher. Pour into the pan, scraping the bottom to loosen any beef or garlic. Step 6 Add the stock from the skillet, the additional beef stock, water and Guinness to the crock pot. Step 7 Add the thyme, bay leaves, cloves, brown sugar and chocolate chips to the crock pot. Mix ingredients together. Step 8 Place the lid on the crock pot and cook the stew on low for about 12 hours. Try not to lift the lid of the crock pot too often during cooking, since this can allow the heat escape and slow down cooking. The stew is done when the vegetables are tender. Step 9 Put the corn flour in a small pitcher or bowl and blend with 1/4 cup of cold beef broth, making sure the mixture is smooth. Turn the crock pot to high and add the thickening. Season the stew according to taste at this point. Cook for an additional 20 minutes to allow the stew to thicken. Stir occasionally. Step 10 Remove the bay leaves and discard. Serve in a large soup bowl. Tastes great with Irish Brown Bread.

- Trim fat from roast and cut into 1″ cubes.
- Clean carrots and celery and slice to about 1/4″ thickness. Wash potatoes (no need to peel yellow/golden potatoes) and cut into 1″ cubes. Clean onion; cut in half and slice (about 1/4″ slices). Clean garlic and roughly chop.

I like to take shortcuts whenever I can but fresh vegetables always tastes great if you have the time.I have found that frozen stew vegetables don't work as well in the crock pot but the peas are fine because you add them near the end.This is a hearty meal when served with a nice chunk of crusty bread for dunking! It incorporates the Irish and Italian flavors together very well as my family blend is both! I added the honey to round out the slight bitterness of the turnip and tomato.

- Prepare your vegetable by peeling and cutting potatoes ( or you can leave them whole if they are small), and the sliced carrots.Add to the crock pot with tomatoes, wine,honey and worcestire sauce.
- Heat the oil in a fry pan. Dredge cut up beef into seasoned flour and brown for about 3-4 minutes with the sliced onions. I like to add a cup of the beef broth to the pan and cook off the flour for about 2-3minutes, adding the gravy master. This will start the thickening.
