This has become a regular addition to my OAMC and I have created a public cookbook filled with recipe ideas using this recipe. This is a three-ingredient wonder that's easy (5 minutes of your time), delicious and versatile.

3 tablespoons taco seasoning, I use Bulk Taco Seasoning Mix
1 cup chicken broth
1 lb boneless skinless chicken breast

Steps:

  • Dissolve taco seasoning into chicken broth.
  • Place chicken breasts in crock pot and pour chicken broth over.
  • Cover and cook on low for 6-8 hours.
  • With two forks, shred the chicken meat into bite-size pieces.
  • To freeze, place shredded meat into freezer bags with the juices.
  • Press out all the air and seal.

10 ounces frozen corn kernels
2 (10 ounce) cans diced tomatoes and green chilies
4 ounces chopped green chili peppers, chopped
1 (3 ounce) packet reduced sodium taco seasoning
1 tablespoon cumin
1 tablespoon chili powder
3 boneless skinless chicken breasts
1/4 cup chopped fresh cilantro
1 1/2 tablespoons cumin (HOMEMADE TACO SEASONING)
1 1/2 tablespoons chili powder (HOMEMADE TACO SEASONING)
1/4 teaspoon garlic powder (HOMEMADE TACO SEASONING)
1/4 teaspoon onion powder (HOMEMADE TACO SEASONING)
1/4 teaspoon dried oregano (HOMEMADE TACO SEASONING)
1/2 teaspoon paprika (HOMEMADE TACO SEASONING)
1 teaspoon kosher salt (HOMEMADE TACO SEASONING)
1/2 teaspoon black pepper (HOMEMADE TACO SEASONING)

Steps:

  • Please note: The (HOMEMADE TACO SEASONING) ingredients are for you to substitute the taco seasoning packet by mixing you own.
  • Combine beans, onion, chili peppers, corn, tomato sauce, diced tomato, cumin, chili powder and taco seasoning in a slow cooker and mix well.
  • Nestle the chicken in to completely cover and cook on LOW for 8 to 10 hours or on HIGH for 4 to 6 hours.
  • Half hour before serving, remove chicken and shred.
  • Return chicken to slow cooker and stir inches.
  • Top with fresh cilantro and your favorite toppings!

SALAD:
2 skinless, boneless chicken breasts, 16-ounce total
1 tablespoon reduced sodium taco seasoning
1/2 teaspoon cumin
1 cup canned black beans, rinsed
1 cup chunky salsa
6 cups chopped romaine or red leaf
1/4 cup reduced fat Mexican cheese blend, shredded
1/2 cup zesty avocado cilantro buttermilk dressing

Steps:

  • Place the chicken in the slow cooker and season with taco seasoning and cumin. Pour the beans over the chicken and top with salsa. Cover and cook on LOW for 4 hours, or until the chicken is tender and easily shreds with 2 forks. Shred the chicken and combine with the beans and sauce, keep warm until ready to eat. Makes 3 1/2 cups. To serve, place the chopped lettuce on a plate or in a bowl. Top with some of the chicken, shredded cheese and salad dressing.

1 1/2 lbs boneless skinless chicken breasts
2 (15 ounce) cans pinto beans, rinsed and drained
2 (15 ounce) cans kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 1/2 cups frozen corn
1 1/2 cups frozen okra
1 (10 ounce) can Rotel tomatoes & chilies
4 (14 1/2 ounce) cans no-salt-added diced tomatoes
1 red pepper, chopped
1 green pepper, chopped
6 large celery ribs, chopped
1 yellow onion, chopped
1 (1 1/2 ounce) envelope taco seasoning mix (no MSG, reduced salt)

Steps:

  • Stir the envelope of taco seasoning mix with broth in a large 6 quart crock-pot.
  • Remove fat from chicken breast and add to crock-pot.
  • Cook on high about two hours and shred chicken using two forks.
  • Add all other ingredients to crock-pot. Stir.
  • Cook on high for 2 hours or low for 4 hours.
  • Serve over whole grain brown rice (not parboiled).

Maybe because I used too much chicken broth. Still, the result was tasty, so here it is. This is based on a crock pot that only has on/off as a setting, so timing may vary from pot to pot

3 boneless skinless chicken breasts, cut into three pieces
2 tablespoons taco seasoning mix
1 (16 ounce) package frozen corn
1 (15 ounce) can low sodium chicken broth
low-fat cheddar cheese, grated (optional)
low-fat sour cream, to taste (optional)

Steps:

  • Combine 2 TB of taco seasoning mix with the 15 ozs of chicken broth.
  • Cut chicken breasts into three pieces.
  • Dump everything into the crock pot for 4-6 hours or until chicken is ready.
  • When chicken is tender, shred with two forks.
  • Dump frozen corn into pot, heat for one hour.
  • Serve with Cheddar Cheese and/or sour cream on top, if desired.

  • Throw first 3 ingredients in crock pot.
  • Cook on high 4-5 hours or low 7-8 hours.

1 jar taco sauce or salsa (I prefer taco sauce, but the kids like salsa so whatever you have on hand)

Steps:

  • Place chicken in crockpot, pour sauce over top. Cover and cook on medium for about 6 hours. Shred with a fork, it will fall apart without much effort on your part. Meat will have a lot of juices, so spoon into shells with a slotted spoon. Serve with your favorite garnishes. Good for burritos, enchiladas, and most Mexican dishes.

1 lb boneless (skinless chicken breasts)
1.25 oz taco seasoning packet
1 oz ranch dip mix packet
½ cup chicken broth
½ cup water
2 cups shredded taco cheese
8.8 oz Spanish or taco rice (cooked)

Steps:

  • Place your chicken breasts in your crock pot
  • Sprinkle your taco seasoning and ranch dip mix evenly across your chicken breasts
  • Pour your broth and water on top
  • Cover and cook on low for 3-4 hours or high for 1.5-2 hours (chicken should be shredded easily with two forks when done)
  • Remove your chicken from your crock pot and shred with two forks
  • Put your chicken back in your crock pot and mix well with your juices
