Sweet and Tangy Pot Roast made in the slow cooker is a cross between sweet and sour flavors with bbq sauce over super tender beef.

3 pound boneless beef chuck roast
1/2 teaspoon salt
1/2 teaspoon pepper
1 can condensed french onion soup
1 cup ketchup
1/2 cup water
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1/2 teaspoon garlic powder
1/4 cup cornstarch
1/4 cup cold water

Steps:

  • Season chuck roast with salt and pepper.
  • Add vegetable oil to dutch oven on medium high heat.
  • Sear beef on both sides until well browned, about 4-6 minutes on each side.
  • In your slow cooker, whisk together the condensed french onion soup, ketchup, water, dijon mustard, Worcestershire sauce and garlic powder.
  • Add the meat to the slow cooker and coat well.
  • Cook on low for 8 hours.
  • Whisk water and cornstarch together then add to the slow cooker.
  • Cook on high for 30 minutes until sauce thickens before serving.

salt and pepper to taste
1 packet dry onion soup mix
1 cup water
3 carrots, chopped
1 onion, chopped
3 potatoes, peeled and cubed
1 stalk celery, chopped

Steps:

  • Season the roast with salt and pepper to taste. Brown on all sides in a large skillet over high heat, about 4 minutes per side.
  • Place the roast in the slow cooker and add the soup mix, water, carrots, onion, potatoes, and celery.
  • Cover and cook on Low setting for 8 to 10 hours.

1 large sweet onion, sliced into thin strips
4 lbs boneless bottom round roast
3 large baking potatoes, cut into large chunks
2 garlic cloves, minced
14 ounces low-fat beef broth
1 ounce onion soup mix
1/4 cup all-purpose flour

Steps:

  • Remove strings or netting around roast.
  • Place sliced onion in the bottom of a 5 quart Crock Pot with roast placed on top.
  • Place garlic and potatoes around beef roast.
  • In a small mixing bowl, mix together 1 1/4 cup of beef broth and onion soup mix; pour over roast.
  • Place reserved beef broth into refrigerator to be used for gravy.
  • Cover and cook on LOW for 9 to 10 hours.
  • Remove vegetables and beef with a large slotted spoon and place on a large oven proof serving platter.
  • Cover with aluminum foil and place in a 200 degree oven to keep warm.
  • In a medium mixing bowl, mix remaining beef broth with flour; gradually stir into juices.
  • Turn heat to HIGH and cook for 10 minutes or until gravy thickens to your liking.

This is a really flavorful roast,slow cooked in fabulous spices and red wine. I usually serve mine over noodles, but occasionally I'll change off to something else, like rice and recently I served it over garlic mashed potatoes, YUMMO! You'll find your favorite way too! Choose a wine that you would drink with the meal. Don't cook with a wine that you wouldn't drink yourself.

1 (2 -3 lb) chuck roast
2 tablespoons salt
1 teaspoon finely crushed black pepper
1 teaspoon paprika
2 teaspoons dried oregano, crumbled
3 -4 large onions (sliced thin or chopped)
4 garlic cloves, smashed
3 tablespoons tomato paste
1 cup dry red wine
1 cup water

Steps:

  • Trim off any excess fat from the meat. Mix salt, pepper, paprika and oregano. Rub this mixture into the meat, on all surfaces.
  • Put onions, garlic, tomato paste and about one-half of the liquid into the crock pot, or slow cooker and mix well. Add the remaining liquid and stir.
  • Nestle the meat down into the liquid, cover and cook on the low setting 8-9 hours, or until the meat is tender. Note: begin checking the roast for doneness at about 6 hours.
  • Taste for seasoning and make any adjustments. Serve with noodles, rice, or potatoes.

This recipe came from a Better Homes and Gardens crock pot cookbook. I love sweet potatoes and thought this would be a nice change from the usual pot roast. I used apple juice in place of the water.

2 lbs chuck roast
1 tablespoon oil
1 medium onion, sliced
2 lbs sweet potatoes, peeled and sliced
1/4 cup water
1 1/2 teaspoons beef bouillon granules
1/4 teaspoon celery seed
1/4 teaspoon ground cinnamon
1/4 teaspoon black pepper

Steps:

  • Trim the fat from the pot roast. Heat oil in a skillet and brown the meat on all sides.
  • Place the onions and potatoes in the crock pot and place the meat on top.
  • Combine the remaining ingredients and pour over the top. Cover and cook on low for 8-10 hours or on high for 4-5 hours.
  • Remove meat and vegetables and place on platter.
  • If desired, for gravy, pour juices into a glass measuring cup. Skim off fat and add water to equal 2 cups of liquid. Pour into a small saucepan over medium heat. Mix 2 tbs cornstarch and 2 tbs cold water and add to liquid. Cook and stir until thick and bubbly.
