1 package (16 ounces) dried green split peas, rinsed
2 cups cubed fully cooked ham
1 large onion, chopped
1 cup julienned or chopped carrots
3 garlic cloves, minced
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1 carton (32 ounces) reduced-sodium chicken broth
2 cups water

Steps:

  • In a 4- or 5-qt. slow cooker, combine all ingredients. Cover and cook on low 8-10 hours or until peas are tender.Freeze Option: Freeze cooled soup in freezer containers. To use, thaw overnight in the refrigerator. Heat through in a saucepan over medium heat, stirring occasionally.

For a truly vegetarian soup, substitute vegetable bouillon for the chicken soup base. This recipe almost overflowed my 4-quart crockpot, you might want to halve the ingredients. I cooked it on high for the entire 8 hours because it was so full, but if you halve it, cooking it on low for the same amount of time will work fine.

1 (16 ounce) package dried split peas
1 (16 ounce) package dried lentils
12 cups water
12 teaspoons chicken soup base
4 carrots, chopped
1 large onion, chopped
2 celery ribs, chopped
2 garlic cloves, chopped
fresh ground black pepper, to taste
2 tablespoons italian seasoning

Steps:

  • Dump it all in the crock pot.
  • Cook on high for 8 hours or until beans are soft.
  • If you like it creamy, puree some or all of it with an immersion (hand held stick) blender.
  • If you don't have Italian seasoning, any combination of oregano, basil, sage, rosemary, thyme and marjoram will work.
  • Serve with crispy French or Italian bread.

1/2 yellow onion chopped (around 1/3 to 1/2 cup)
4 cloves garlic
1 tablespoon olive oil
1 cup chopped carrots
2 small to medium russet potatoes (peeled and chopped)
8 oz. split peas
8 oz. lentils
1 bay leaf
1/2 teaspoon oregano
1/4 teaspoon cayenne
7-8 cups vegetable stock
salt and pepper

Steps:

  • Sauté the onions and garlic in the olive oil until they begin to turn brown and caramelize. Remove from heat. In a large slow cooker (where I'm from we call 'em crock pots-but that kind of sounds less appetizing, right?), combine the cooked onions and garlic, chopped carrot, chopped potatoes, split peas, lentils, bay leaf, oregano, cayenne and 7 cups of vegetable stock.
  • Yep, you pretty much just dump it all in there and then set it to high for six hours. If you want to give it a creamier texture, you can blend it with an immersion blender or in batches in a good blender. Remove the bay leaf before you do this. Taste and add salt and pepper or even a bit more cayenne if you want more heat.
  • I think this tastes even better the next day warmed up! It will get quite thick, so you can thin it out with more stock or water as you reheat it.

2 teaspoons dried thyme
1/2 teaspoon dried marjoram
1/2 teaspoon ground sage

1 cup yellow split peas
1 large onion, coarsely chopped
2 carrots, coarsely chopped
5 cloves garlic, chopped
1 ½ teaspoons ground cumin
8 cups chicken broth

1 teaspoon lemon juice, or to taste

Steps:

  • Place the lentils, split peas, onion, carrots, garlic, and cumin into a pressure cooker, and stir in the chicken broth. Seal the cooker, bring to pressure over medium heat, and reduce heat to keep the pressure stable; cook under pressure for 30 minutes. Remove from heat, and allow pressure to subside. 3 slices bacon, chopped
1 onion, chopped
1 carrot, chopped
1/2 cup chopped leek (white and pale green parts only)
1 clove garlic, minced
6 cups low sodium chicken broth
1/2 cup lentils
1/2 cup split peas
1 medium potato, peeled,grated
1 smoked ham hock
1/3 cup chopped celery & leaves
1/4 teaspoon dried thyme
1 bay leaf
2 tablespoons dry red wine

Steps:

  • Saute bacon in large saucepan over medium-high heat until fat is rendered, about 4 minutes; remove bacon; drain off all but 1 ½ tblsps of fat; add onion, carrot, leek and garlic and saute until light brown, about 10 minutes; add broth, lentils, split peas, potato, ham hock, celery, thyme and bay leaf; bring to boil; reduce heat and simmer until lentils and split peas are tender, about 45 minutes; stir in red wine and simmer 5 minutes longer; discard bay leaf; remove ham hock from soup and remove any meat attached to bone; cube meat and return to soup along with chopped up bacon; season to taste with salt and pepper.

1 teaspoon salt

3 medium carrots, cut into 1/4-inch slices (1 1/2 cups)
2 medium stalks celery, finely chopped (1 cup)
1 medium onion, chopped (1/2 cup)
1 ham bone, 2 pounds ham shanks or 2 pounds smoked pork hocks

Steps:

  • Mix all ingredients except ham in 4- to 5-quart slow cooker. Add ham.
  • Cover and cook on Low heat setting 8 to 10 hours or until peas are tender.
  • Remove ham from cooker; place on cutting board. Pull meat from bones, using 2 forks; discard bones and skin. Stir ham into soup. Stir well before serving.

1 tablespoon vegetable oil
1 1/2 cups chopped Spanish onions
1 1/2 teaspoons garlic, minced
12 cups water
1 cup dried brown lentils
1 cup dried split peas
4 smoked ham hocks (about 3 3/4 lbs)
1 tablespoon salt
1 tablespoon lemon juice
1/2 teaspoon dried thyme leaves
1/2 teaspoon dried sage
1/2 teaspoon dried marjoram
1 -2 bay leaf
1 1/2 cups diced carrots
1 1/4 cups chopped celery
lemon slice

Steps:

  • In a heavy (cast iron is best) dutch oven heat oil over medium heat.
  • Add onion and garlic and cook about 5 minutes, stirring until soft.
  • Add remaining ingredients except carrots,celery and lemon slices.
  • Bring to boil.
  • Reduce heat to low, cover pot.
  • Simmer 1 1/4 hours.
  • Add carrots and celery.
  • Bring back to boil then reduce heat and simmer 40 minutes, uncovered.
  • Remove pot from heat.
  • Lift out hocks and bay leaf, discard bay leaves.
  • Cool hocks enough to handle, remove fat and bones.
  • Put meat back in soup. Stir and heat gently.
  • Float a lemon slice on top of each serving.

  • In a medium pot, bring broth to a boil, then carefully pour into a 5- to 6-quart slow cooker. Add split peas, onion, carrots, celery, bell pepper, garlic, thyme, bay leaves, and ham hocks; season with salt and pepper.
  • Cover and cook on high until split peas are creamy, 6 hours, stirring occasionally.
  • Remove ham hocks from pot. Discard skin and bones; dice meat. Discard bay leaves. Lightly mash peas with the back of a wooden spoon. Return ham to soup and season to taste with salt and pepper.
