CROCKPOT SHREDDED CHICKEN
This is a super easy shredded chicken recipe that makes tasty, tender chicken. Use it for tacos, casseroles, chicken salad, sandwiches, etc.! The recipe can be increased if you are looking to feed more than one person, unlike myself. I haven't tried freezing it yet, but I imagine it would freeze nicely for future meals. And, the leftover liquid and bones can be used to make a nice broth.

Steps:
- Pour water and chicken broth into 5.5 quart crockpot.
- Mix in salt, pepper, and garlic powder (you can also directly season the chicken thighs with this mixture, but the lazy way works just fine!).
- Place chicken thighs in the crockpot in a single layer, fattier side down.
- Toss in halved shallots (or quartered onion), whole garlic cloves, and bay leaves.
- Cook on low for 7-10 hours.
- Remove chicken and shred with a fork.
- For broth: add bones from the shredded chicken, 1-2 cups water, salt and pepper to taste, and carrots or celery (if desired). Continue to cook on low for 4-6 hours.
SLOW COOKER BALSAMIC CHICKEN
So easy and so good. I use frozen chicken breasts and cook on high for 4 hours in the slow cooker. The sauce is not thick, it is a bit runny, but very tasty. Add tomato paste if you want it thicker. Serve on top of pasta and sprinkle with Parmesan cheese. I use one can of crushed tomatoes and one can of diced tomatoes.

Steps:
- Drizzle olive oil into the slow cooker. Place chicken breasts on top of oil and season each breast with salt and pepper. Top chicken breasts with onion slices, garlic, oregano, basil, rosemary, and thyme. Drizzle balsamic vinegar over seasoned breasts and pour tomatoes on top.
- Cook in the slow cooker set to High until chicken is no longer pink in the center and the juices run clear, about 4 hours.

Steps:
- Place chicken, mushrooms, brown sugar, garlic, rosemary, sage, pepper, soy sauce, cola, and vinegar into crockpot. Cover and cook on low for at least 5 hours.
- About one-half hour prior to serving, cook pasta as directed. Meanwhile separate chicken meat with a wooden spoon in the crockpot.
- Once pasta is ready, strain and set to one side. In a skillet, on medium heat, quickly sauté cabbage in herb butter. Stir in pasta and turn off heat.
- Place in serving bowls, top with shredded chicken, and sprinkle with Parmesan and parsley.
