Steps:

  • Place first four ingredients in crock pot.
  • Cook on low 6-8 hours.
  • 30-60 minutes prior to serving, remove chicken, shred and return to crock pot.
  • To serve, use chicken mixture as filling inside tortillas.
  • Add desired condiments.

4 cups water
8 ounces salsa (about half an average jar)
1 (6 ounce) can tomato paste
2 garlic cloves
2 tablespoons vinegar
salt and pepper (to taste)

  • Press garlic cloves into the crock pot using garlic press, or finely mince using another method, adding juice and pulp to the crock. For the beginner cook, 1 Tbs of dry minced garlic can be substituted.

  • Crock Pot Directions:.

5 -6 pieces frozen boneless skinless chicken breasts (vary amount depending on crock pot size)
1 (8 ounce) bar cream cheese

  • In crock pot combine the following.
  • Chicken breast, can of black beans, jar of salsa, can of corn.
  • Cook on high for approximately 4 to 4.5 hours or until chicken is almost cooked through. (if using thawed chicken cook time will drop significantly and will probably need to be checked around 2 hours).
  • Once chicken is almost cooked through removed chicken pieces and shred.
  • Put shredded chicken back into crock pot and mix well. After mixing if you notice excess liquid on top skim off excess with spoon. (you dont want it runny its better a bit firm).
  • Add cream cheese - cut up bar as your put it in, It helps to melt it.
  • Stir occasionally to help mix cream cheese evenly and cook for about 30-40 more minutes.
  • Cook Rice while the Chicken is finishing.
  • When chicken is finished spoon over rice and enjoy!

I found this recipe on site called Kalyn's Kitchen and my family loves it! You would never guess that it's a healthy recipe with as quickly as it disappears in my house. The chops get extremely tender and the sauce is slightly spicy without being overkill. Make sure you use a spatula to get the chops out in one piece because they tend to get "fall apart" tender.

4 pork chops, with fat trimmed (I used pork loin sirloin chops)
1/2 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt (or Vege-Sal)
1/2 teaspoon fresh ground black pepper
1 tablespoon olive oil
1 cup salsa (I used an Aldi's house brand with Medium heat but we like stuff a little spicy)
2 tablespoons fresh-squeezed lime juice

Steps:

  • Trim all fat around the edges of pork chops and discard fat.
  • Combine ground cumin, garlic powder, salt, and fresh ground black pepper in a small bowl; then use the spice mixture to rub the trimmed pork chops on both sides.
  • Heat the oil in a heavy frying pan, add pork chops and cook over medium heat until well-browned, about 4 minutes per side. (The pork chops don't need to be done clear though, but they should be nicely browned.)
  • Spray sides and bottom of the slow cooker with olive oil or non-stick spray.
  • Put browned pork chops into the slow cooker, pour over salsa-lime mixture, and cook on high for 2-3 hours, or until the pork chops are very tender when pierced with a fork.
  • Serve hot, with a little sauce spooned over each pork chops.

I received compliments from everyone! Try it, it is so easy. These are the measurements I used. There were 6 adults (we each ate at least 2) and 3 kids (they ate maybe 1 1/2 between them) and we had tons of extras. Next time I will cut it not quite in half for that size of a group. My servings and yields are just estimates because we had so much left over-hard to gauge. I used thawed chicken when I made it.

3 pound(s) young goat (hind and leg portion are the meatiest) cut into medium size pieces
1 small onion diced
1 small bell pepper diced
1 stalk(s) celery with leaves diced
2 medium bay leaves
2 can(s) diced tomatoes
3 clove(s) garlic finely minced
2 - serrano chiles whole (adjust for heat)
1/2 teaspoon(s) mexican oregano dried
1 teaspoon(s) ground cumin
1 teaspoon(s) ground black pepper
1 teaspoon(s) salt (adjust to your taste)
2 tablespoon(s) oil for braising goat pieces
32 ounce(s) chicken broth to de-glaze pan and enough to cover goat and veggies in crock pot.

Steps:

  • Turn on crock pot to high and cover. Sprinkle goat pieces liberally with Salt and Pepper. Heat oil in pan. Place pieces in pan and brown on each side. This should take about 4-6 minutes each side Remove browned pieces and place in the crock pot
  • Add diced onion, bell pepper, celery, garlic, cumin and oregano to the pan with 1/2 cup of chicken broth to cook veggies and de-glaze the pan. When onions are translucent and other veggies are soft.
  • Add whole serranos to crock pot nestled in goat pieces. Add diced tomatoes with juices poured directly over the goat pieces to crock pot. Add sauteed veggies and any liquids in pan directly over tomatoes and goat pieces. Add enough chicken broth JUST to cover goat pieces. Save any extra chicken broth for another recipe. Place bay leaves on top and cover Cook on high for two hours and turn down to low for 2 or more hours OR cook on low for 6 - 8 hours. The meat should be very tender and will easily fall off the bone.
  • Remove bay leaves. Serve in bowls with fresh corn tortillas. Hope you enjoy!
