This is a really good and easy slow cooker recipe for pinto beans, it's really good with some fresh cornbread on the side. One of my favorites!! You can add the jalapenos to your taste. We like it with a little kick but it's just as good without them.

1 (16 ounce) package dried pinto beans
1 (32 ounce) box chicken broth
1 teaspoon salt
1 teaspoon black pepper
3 fresh garlic cloves, finely chopped
1 small onion, finely chopped
3 -4 jalapenos, finely chopped (i like it spicy you can leave this out)
1/2 teaspoon cumin powder (also optional)

Steps:

  • Rinse dried pintos under cool water and drain
  • Put them into a large bowl and cover with hot water and let sit over night.This helps cut down on cooking time and take some of the "gas" out. They will swell quite a bit so you need a large bowl.
  • In the morning, rinse beans well with cool water, drain and then put in crock pot.
  • Add chicken broth and all other ingredients.
  • Fill with water till water is about an inch or 2 above beans.
  • Cook on low all day for about 8-9 hours.
  • Cook up some cornbread and you are ready to eat!

1 lb dried pinto bean, sorted and washed
5 cups water
1 large onion, chopped
4 -8 ounces cooked ham, chopped
3 garlic cloves, minced
2 jalapeno peppers, seeded and chopped
1 tablespoon chili powder
1 teaspoon pepper
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano
salt, to taste

Steps:

  • Cover beans with water and soak overnight; drain.
  • Place beans in a 6 quart crock pot with water and remaining ingredients except salt. Cook on low setting for 8-10 hours, or until beans are soft and done. Stir a couple of times during cooking, if possible. Add salt after beans are done. Cooking salt in the beans will make them tough.
  • Note: The jalapenos will give your beans a bit of heat. You can control how hot you want them by the amount of pepper you add. If you want no heat, replace the jalapeno with 2 tablespoons of chopped green bell pepper.

1 (8 ounce) bag dried pinto beans
1/4 yellow onions or 1/4 white onion, finely chopped
1 teaspoon cumin
2 teaspoons garlic powder
1 teaspoon chili powder
2 teaspoons salt
1/2 teaspoon red pepper flakes

Steps:

  • Soak beans overnight or for 8 hours. Discard floating beans and beans that are cracked.
  • Rinse beans thoroughly under cold water. Add beans to Crockpot, cover with 1" of water.
  • Add salt - approximately 1 tablespoon.
  • Add approximately 1 teaspoon of garlic & chili powders.
  • Add 1 1/2 (approx) of cumin.
  • Sprinkle red pepper flakes.
  • Cook on low 4-6 hours or until beans are tender.
  • Once beans are done transfer some of your beans to the Cuisnart. Add some of your cooking water. Mix until blended.

A basic dried bean recipe for the slow cooker. Seasoned with smoked turkey pieces, this is a lower fat recipe with plenty of flavor.

2 lbs dried pinto beans (works for other dried large beans)
1/2 smoked turkey drumstick (available at supermarkets cut into chunks)
11 cups water, for soaking
water (to cover for cooking)
1 -2 tablespoon kosher salt (to taste)
1/8 teaspoon black pepper
1/8 teaspoon cayenne (or to taste)

Steps:

  • Sort and rinse beans with 3 waters (from one container to another 3 times).
  • Place in a 5 to 6 quart crock pot with soaking water overnight (my preference, but it can be cooked without pre-soaking).
  • Note: a 4 quart crock pot will be absolutely full, but I have used a 4 quart pot.
  • Drain soaking water and add water to cover by 1 to 1.5 inches.
  • Add smoked turkey pieces.
  • Cook for 10 hours on low.
  • Add salt and peppers to taste.
  • Note: I have used cumin, thyme, and oregano for seasoning, but basic salt and pepper is very good).
  • Serve with cornbread.

1 (1 lb) bag dried pinto bean
1/3 cup picante sauce
2 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon garlic powder
1 tablespoon garlic, minced (kind in jar is okay)
1 tablespoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
3 bay leaves
1 cup cooked white rice

Steps:

  • Rinse beans in colander.
  • Put in a crock pot (or large pot).
  • Cover with water, plus about 2 inches over top of beans.
  • Add all ingredients, except rice.
  • Cook on high in crock pot about 3 hours til tender. (Crockpots vary greatly on cooking times. It could take much longer in yours, so the first time allow longer to cook and then you will know how long cooking time will be in the future.).
  • (Add water if necessary) May also cook on low overnight.
  • Add rice and cook until rice is warm.
  • Serve with cornbread.

2 to 2 1/2 pound boneless beef chuck roast, excess fat removed
2 cups dry pinto beans, uncooked (rinsed and drained)
1 (10-ounce) can Rotel tomatoes with green chilies, undrained (I used Original)
1 small onion, chopped (about 2/3 cup)
1/8 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon garlic salt
1 teaspoon chili powder
1/2 teaspoon beef bouillon granules
Salt and black pepper, optional
Water, as needed

Steps:

  • Pour the rinsed and drained beans in the bottom of a 6-qt. crock pot. Set aside. In a small mixing bowl, stir together the undrained Rotel tomatoes, chopped onion, and all the seasonings (including the bouillon granules). Pour mixture over the beans and give it a little stir. Lay the roast on top and season the surface with a little garlic salt, salt, and black pepper. Add enough water to cover beans and about half of the roast. (May need additional water during cooking.) Place the cover on the crock pot and cook on HIGH setting for 4 - 5 hours, or until roast falls apart and the beans are tender, adding more water as needed. Taste and adjust seasonings to your taste. Serve with plain tortilla chips or cornbread. Can be garnished with sour cream, salsa, etc., if desired. I served with a side of corn.

1 (3 lb) beef tongues
2 (12 ounce) cans beer
4 garlic cloves, peeled
2 (15 ounce) cans pinto beans, drained
1 (4 ounce) can diced green chilies
8 ounces diced potatoes
1/2 cup chopped onion

Steps:

  • The night before rinse the tongue and slice in half lengthwise.
  • place in crockpot.
  • add whole peeled garlic cloves and onions.
  • add both cans of beer.
  • turn crockpot on low and cover.
  • after the tongue has cooked approx 12 hrs take it out and allow to cool.
  • remove skin and any visible fat.
  • skim any fat off the top of the broth.
  • cut up tongue and return to crock pot.
  • add diced potatoes green chilies and drained beans.
  • cover and allow to cook approx 5 more hours.
  • its done when potatoes are fork tender.
  • serve with warm tortillas or bread.
  • add a dollop of sour cream to the top of each serving.

3 c washed pinto beans
1 (15 oz) can(s) chicken broth
1 tsp salt
1 tsp black pepper
1 Tbsp garlic powder
2 Tbsp cavenders greek seasoning
1 small onion -- diced
1 large jalapeno -- seeded and diced
1/2 lb smoked bacon -- diced

Steps:

  • 1. Place washed beans in crockpot and cover with chicken broth and water within 4 inches from the top.
  • 2. Add salt, pepper, garlic, cavenders, jalapeno, and onion.
  • 3. Stir to mix. Add bacon and cover. Cook on high for 1 hour and then reduce to low for 4 or more hours. If you are in hurry, keep on high longer.
