3 boneless, skinless chicken breasts
1/2 cup chicken broth
2 ounces ranch dressing mix ((powdered))
16 ounces cream cheese,
8 ounces bacon (cooked and crumbled)
1 cup cheddar cheese (shredded (or colby jack))
1/2 cup green onion (thinly sliced)

Steps:

  • Add chicken breasts to crock pot.
  • Add chicken broth, cream cheese, and ranch seasoning over chicken. Turn crock pot to HIGH and cook for 3 hours, or cook on LOW for 6 hours.
  • Once chicken is cooked, pull out the breasts and shred with two forks. (You should shred the chicken right in your slow cooker if you prefer.)
  • Stir sauce in the crock pot and add chicken back in.
  • Add shredded cheese, bacon, and green onions to chicken. Mix well and serve warm on buns or in bowls.

This Mesquite Chicken Bake brings all the sweet smokey goodness of Mesquite smoked BBQ into a quick and easy family dinner.

2 lbs chicken breast (3-4 chicken breasts)
1 tbsp mesquite seasoning
1/2 cup BBQ sauce ((mesquite flavored optional))
1/4 cup finely diced onion
1/2 cup cheddar cheese
2 slices crispy crumbled bacon (about 2 oz)

Steps:

  • Preheat the oven to 400˚F.
  • Season each side of the chicken with the mesquite seasoning and lay flat in a large baking dish.
  • Drizzle BBQ sauce over the top of each chicken breast and sprinkle with diced onion.
  • Bake uncovered for 20 minutes, then remove the dish, add cheese and bacon to the top and return to oven for 5-10 minute or until the cheese is melted and the chicken is done (internal temperature of 165˚F.)

This is one of my favorite crock pot recipes. Has a wonderful smokey flavor. Use a package of powder mesquite marinade - not a bottle of liquid marinade. Will try to post pic of marinade package.

1 (2 -3 lb) chuck roast
6 ounces cola
1 (1 1/16 ounce) package mesquite marinade (the kind that comes in an envelope like taco seasoning. I use McCormick or Adolph's)
1/4 cup water

Steps:

  • Place chuck roast in the crock pot and pour cola over the top of it.
  • Mix water with the mesquite marinade packet and pour over the top of the roast.
  • Cook 8 hours on low.
