MAKE AHEAD MASHED POTATOES FOR CROCK POT
I made this recipe last year for Thanksgiving. It's very good and saves a lot of time. You may have to lengthen your crock pot cooking time.

Steps:
- Boil peeled potatoes until tender.
- Beat sour cream and cream cheese together.
- Add hot potatoes and beat until smooth.
- Add butter, chives, salt and pepper to taste.
- Place in greased two quart casserole.
- Dot with butter and sprinkle paprika on top.
- Bake at 350 degrees for 25 minutes.
- Serves 8-10.
- NOTE****this recipe can be made the day before dinner and refrigerated in crock pot.
- Then, on the serving day, just turn on crock pot at low setting and cook potatoes for about 2-3 hours, to be ready when the rest of the dinner is ready.
- You may add more butter, cream cheese or sour cream depending upon the consistency you prefer.
RANCH HOUSE CROCK POT PORK CHOPS W/ PARMESAN MASHED POTATOES
This is a hugely popular slow cooker recipe originating on Picky Palate's blog. By many who have made this, it's been suggested to add 2 cans of soup for additional gravy, but do NOT increase the Ranch Dressing Seasoning for it will become too intensely flavored. Many recipes are out there for roasting garlic. I simply put the cloves in a square of foil, drizzle with olive oil, seal and bake in a toaster oven for about 20 minutes or until soft and golden.

- Place pork chops, Ranch seasoning and soup into a medium sized crock pot over high heat for 4 hours or low heat for 6 hours. (This may take less time than allowed. Check prior to end time so as not to overcook.).
- Place potatoes into a large pot of cold water. Place onto stovetop over high heat and bring to a boil. Once water is boiling, cook for 10-12 minutes or until potatoes are fork tender. Drain and transfer to the work bowl of a stand or electric mixer. Mix on low until potatoes are mashed then add butter, parmesan, garlic, milk, salt and pepper. Season to taste if needed. For thinner mashed potatoes add more milk, slowly until your desired consitency.
- Serve chops with gravy over the parmesan potatoes.

- 1. Place the potatoes, water, chicken broth and butter into a 4-5 quart slow cooker. Season with salt, garlic powder, and pepper. Cover, and cook High for 4 - 4 1/2 hours until potatoes are fork tender.
- 2. Do not remove the excess water from slow cooker. This adds to the creamy texture. Mash potatoes with a masher or electric beater, adding the desired amount of warm milk and the sour cream to achieve a creamy consistency.

- 1. Peel the potatoes and cut them in quarters. Put in heavy pan and cover with water. Boil until tender, approximately 30 minutes.
- 2. Drain and then put in mixer bowl. As you begin to beat them, add milk to desired consistency; and then add up to one stick of butter and about 1/2 package of cream cheese. Again...up to you...but since I then put them in the crock pot, I like them a little creamier to start with!

- Peel and mince the garlic, chop the onion slices fine. Place into a saute pan along with the butter.
- Saute over medium heat until the mixture is softened.
- While the onion and garlic are cooking, dice the potatoes.
- Place the potatoes into the crock pot along with the water.
- Put the softened garlic/onion mixture over the potatoes in the crock pot. Stir once.
- Cook on low for 8 hours, or high for 4 hours.

- 1. Peel and cut potatoes into like sized pieces. Place in large pot of boiling water .
- 2. Cook until potatoes allow a fork to slide into, but are still firm enough to hold their shape. (Approx. 20-30 min. depending on size of pieces.)
- 3. Drain potatoes, place back into pan. Use a wire potato masher, not a mixer! Mash potatoes over low heat until they release all their steam. Do not add other ingredients until this has happened.
- 4. After some serious mashing, add butter and cream cheese. Add half and half, starting with 1/2 cup (add a little more if needed).
- 5. Mash 'em up. I like mine with little chucks of potato. Add seasoning salt and pepper.
- 6. You can place potatoes in a casserole dish and warm in oven & dot with more butter before serving, or refrigerate them over night. Remove from 'fridge a few hours before meal time, place in slow cooker / crock pot to reheat. Add more butter to serve!

- In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water.

- Peel potatoes and cube. She stated that she likes to get 12 cubes per potato. You can do this if using Russets but not if using Yukons. Each cube should be about 1-1 1/2 inches.

- Scrub and take any sprouting "eyes" out of your potatoes.
- Quarter potatoes, place in crock pot (I used medium sized one).
- Dissolve bouillon powder in water, pour over potatoes and add butter and whole garlic cloves.
- Cook on high 4 to 5 hours, until fork tender stirring half way in between.
- Mash potatoes in crock pot, DO NOT drain the chicken broth.

She has to feed a wide spread of ages; she has herself and her husband, a 17 year old, 9 year old, and an almost 3 year old. She said everyone loved this. When she got home from work, everyone had already started on it, and she only got a little tiny bit! So I knew I had to give it a try! I tried it using homemade mashed potatoes, and they sort of ran down into the meat. I think the instant potatoes would be drier and probably work better in the recipe.

- Coat short ribs in the flour, salt, and pepper mixture. Shake off and brown on all sides.
- Transfer ribs to crock pot.
- In same pan, saute onions and bell peppers till onion is translucent, pour contents of pan over short ribs.
- In bowl combine salsa, chili sauce, worchester, beef stock and red wine vinegar.
- Pour liquid mixture over short ribs. Cook on low for 7 hours.
- When the ribs are finished strain some of the broth (about 2 cups) and set aside.
- Make a roux of the butter and flour and add the broth, stir until thickened and glossy.
- Serve the rib on top of the mashed potatoes topped with gravy.
