1 lb turkey kielbasa or 1 lb beef kielbasa
1 cup Heinz ketchup
1/2 cup brown sugar (C & H)
1 (10 ounce) can pineapple chunks in juice
1 medium green bell pepper, sliced into large chunks
1 medium maui onion, sliced into large chunks
1 pinch soy sauce, to taste

Steps:

  • Slice Kielbasa into 1/2 inch slices and place in crock pot.
  • Add the bell pepper, onion and pineapple chunks.
  • In a separate bowl mix ketchup, brown sugar and pineapple juice.
  • stir until thoroughly blended.
  • Mix all ingredients into crock pot and Cook on low for approximately 4 1/2-5 hours.

1 (20 ounce) can pineapple rings in juice, cubed and juice reserved
1 pound kielbasa (Polish) sausage, cut into quarter moon pieces
2 medium onions, cut into wedges and sliced
2 tablespoons water
2 tablespoons cornstarch
⅔ cup rice vinegar
⅔ cup brown sugar
6 tablespoons ketchup
2 tablespoons soy sauce

Steps:

  • Place pineapple, kielbasa sausage, and onions into the bottom of a slow cooker.
  • Combine water and cornstarch in a bowl and whisk until smooth.
  • Whisk together reserved pineapple juice, rice vinegar, brown sugar, ketchup, and soy sauce in a saucepan. Bring mixture to a simmer; pour in cornstarch slurry. Whisk until well combined and thickened slightly, 3 to 5 minutes. Remove from heat and pour over the ingredients in the slow cooker. Mix well to coat.
  • Cover and cook on High until kielbasa is cooked through, and mixture has thickened and reduced, 3 to 4 hours.

Cheesy Hash Browns and Kielbasa Soup (Crock Pot) image

When my mom first gave me this recipe, I was pretty skeptical - but it became an instant favorite in our house!! I like it because it is fast and simple to make, inexpensive, and reheats very well. I'll post the ingredients for the original version and offer the healthier alternatives at the end of the recipe.

1 (30 ounce) bag frozen hash browns
14 ounces kielbasa, cut into bite sized pieces
2 cups chicken broth
1 onion, diced
8 ounces Velveeta cheese

Steps:

  • In crock pot, combine hash browns, kielbasa, broth and onions. Stir well and cook on low 6-8 hours.
  • 30 minutes before serving, cut cheese into cubes and stir into soup. Cover and cook on high 30 minutes or until cheese is melted.
  • We like this soup pretty thick, but if you prefer a thinner soup now is a good time to add some extra broth or milk. Wait until after the cheese has melted to add extra liquid so you can be sure of the consistency.
  • Serve hot with crusty bread!
  • To make this recipe A LOT healthier, use turkey kielbasa, fat free/low sodium chicken broth, and Light Velveeta. I routinely use these substitutions and the soup still turns out fantastic! If I have the time, I do like to remove the casings from the turkey kielbasa as I think they tend to get a little chewy when cooked all day. Just split them carefully with a knife and peel away the casings before chopping. Enjoy!
